1 pound fresh bay or sea scallops
Kosher salt and freshly ground black pepper
All-purpose flour, for dredging
4 tablespoons (1/2 stick) unsalted butter, divided
1/2 cup chopped shallots (2 large)
1 garlic clove, minced
1/4 cup chopped fresh flat-leaf parsley leaves
1/3 cup dry white wine
1 lemon, cut in 1/2

Steps:

  • If you're using bay scallops, keep them whole. If you're using sea scallops, cut each 1 in half horizontally. Sprinkle with salt and pepper, toss with flour, and shake off the excess.
  • In a very large saute pan, heat 2 tablespoons of the butter over high heat until sizzling and add the scallops in 1 layer. Lower the heat to medium and allow the scallops to brown lightly on 1 side without moving them, then turn and brown lightly on the other side. This should take 3 to 4 minutes, total. Melt the rest of the butter in the pan with the scallops, then add the shallots, garlic, and parsley and saute for 2 more minutes, tossing the seasonings with the scallops. Add the wine, cook for 1 minute, and taste for seasoning. Serve hot with a squeeze of lemon juice.

Clams Provençal image

1 large ripe tomato
1/4 teaspoon saffron threads
1 1/2 cups dry white wine
1 tablespoon minced garlic
2 tablespoons extra-virgin olive oil
1 strip (1/2 inch by 2 inch) orange zest, cut in slivers
1 teaspoon finely chopped fresh rosemary
1 teaspoon finely chopped fresh thyme
1 tablespoon finely chopped fresh Italian parsley
1/2 teaspoon kosher salt
freshly ground black pepper
4 to 5 pounds Manilla or other small clams (about 4 dozen), scrubbed and rinsed
fresh basil, chopped (optional)

Steps:

  • Core and seed the tomato, then cut into 1/4-inch dice. In a medium sauté pan over medium-low heat, toast the saffron threads for 30 seconds. Add the wine and garlic, bring to a boil, and cook for 2 minutes. Remove from the heat. Add the diced tomato, olive oil, orange zest, rosemary, thyme, parsley, salt, and a grinding of pepper. Stir well. Spread the clams in a single layer in a 13- by 9-inch heavy-duty aluminum foil pan. Spoon the hot tomato mixture over the top of the clams. Cover the pan with aluminum foil. Grill the clams over Direct High heat until they are opened, 8 to 10 minutes. Transfer to individual soup bowls, discarding any clams that are still unopened. Number Of Ingredients 16

1 pound red potatoes, cleaned, with skins on
2 medium onions
1 bulb fennel
1 jalapeno pepper
1 sweet red pepper
36 littleneck clams, cleaned and scrubbed
3/4 cup dry white wine
1/2 cup water
2 tablespoons minced fresh garlic
1 1/2 cups (28-ounce can) tinned Italian plum tomatoes, drained and chopped
1 tablespoon fresh tarragon leaves (optional)
1 tablespoon cilantro leaves
4 ounces unsalted butter, cut up
2 teaspoons Pernod
3 scallions, cut into a fine julienne
1 lemon, cut into 6 wedges

Steps:

  • Slice the potatoes about one-quarter inch thick and place in a pot filled with cold water. Bring to a boil and boil for seven minutes. Drain and set aside.
  • Peel the onions, halve them and slice them about one-quarter-inch thick. Trim the fennel bulb and slice about one-quarter-inch thick. Seed the peppers, remove the membranes and dice.
  • Preheat the oven to 500 degrees.
  • Lay out the clams in a single layer in a baking dish. In a bowl, combine the onions, fennel, peppers, wine, water, garlic, plum tomatoes, tarragon, cilantro, butter and Pernod. Top the clams with this mixture. Roast the clams for eight minutes. Turn them and roast for about eight minutes more, until the clams open (discard any unopened clams).
  • To serve, place six clams into each of six heated bowls. With tongs, distribute the tomatoes, onions, fennel and potatoes around the clams. Pour equal amounts of the broth and remaining solids over the clams. Garnish with the scallions and lemon wedges. Serve immediately with garlic mayonnaise on the side. (See recipe.)

2 tablespoons extra-virgin olive oil
1 medium onion, diced
1/2 medium head fennel, diced
4 cloves garlic, smashed
1/4 teaspoon red pepper flakes, or to taste
Pinch saffron threads
3/4 cups dry white vermouth
1 (14-ounce) can plum tomatoes, with their juice
3/4 cup water
2 (1 by 3-inch) strips fresh orange zest
1 bay leaf
12 littleneck clams, scrubbed
8 ounces medium sea scallops, foot removed, if necessary
8 ounces medium shrimp, peeled and deveined
1 teaspoon red wine vinegar
1/4 cup chopped fresh parsley leaves
Kosher salt

Steps:

  • Heat the olive oil in a large soup pot over medium heat. Add the onion and fennel and cook, stirring occasionally, until the vegetables are golden, about 5 minutes. Add the garlic, pepper, and saffron and cook another minute. Stir in the vermouth and simmer until reduced by about half. Lightly crush the tomatoes through your fingers into the pot; stir in their juices, add the water, orange zest, bay leaf, cover, and simmer until the flavors come together, about 20 minutes.
  • Adjust the heat so that the broth simmers briskly. Stir in the clams, cover the pot, and cook until they just begin to open, 6 to 8 minutes. (To keep the clams from overcooking, transfer any fully opened ones to a bowl.) Add the scallops and shrimp and cook, uncovered, until they are just cooked through and opaque, 2 to 3 minutes more. Stir in the vinegar, parsley, and return any of the cooked clams along with their juices. Season with salt, if needed. Divide stew and shellfish among 4 warm bowls. Serve.

ROASTED SEA BASS PROVENçALE

1/4 cup chopped drained oil-packed sun-dried tomatoes, 2 tablespoons oil reserved
2 tablespoons drained capers
1 tablespoon chopped garlic
1 tablespoon minced fresh thyme or 1 1/2 teaspoons dried
1/2 cup dry white wine
1/2 cup bottled clam juice
4 6- to 7-ounce sea bass fillets

Steps:

  • Preheat oven to 450°F.. Heat 2 tablespoons reserved oil in heavy large ovenproof skillet over medium-high heat. Add tomatoes, capers, garlic and thyme and stir 1 minute. Add wine and clam juice and boil until liquid is reduced almost to glaze, about 3 minutes.
  • Sprinkle fish with salt and pepper. Add to skillet; turn to coat with sauce. Place skillet in oven. Roast fish until just opaque in center, about 15 minutes. Transfer fish and sauce to platter.

PORTUGUESE STEAMED CLAMS

Being of Portuguese descent and raised in Rhode Island along the Eastern seaboard, this recipe is a wonderful combination of my two heritages. If desired serve with a small cup of melted butter for dipping clams and don't forget a fresh loaf of warm, crusty bread!!! Note: If the clams seem sandy, soak them for a couple of hours or overnight in the refrigerator in salted water with a bit of vinegar, cornmeal, and cayenne pepper.

5 pounds clams in shell, scrubbed
1 ½ pounds chorizo, sliced into chunks
1 large onion, cut into thin wedges
1 (14.5 ounce) can diced tomatoes
2 cups white wine
¼ cup olive oil

Steps:

  • Wash clams well in a sink of cold water. Discard any clams that are already opened.
  • In a large stock pot with a tight fitting lid, place the cleaned clams. Add the sausage, onion, tomatoes and wine. Cover and set over high heat. Steam until all the clams open up. Be sure to shake the pan often to insure even heat.
  • Drizzle olive oil over the cooked clams. Evenly divide all the ingredients into warm soup plates. Divide the broth into side cups for dipping.
