Authentic Italian Bruschetta image

Authentic Italian Bruschetta is a classic appetizer that people absolutely love. It is perfectly crispy with just the right amount of fresh tomatoes, basil, and balsamic. Learn all the little tricks for making the perfect bruschetta right at home.

2 vine ripe tomatoes (diced)
5 fresh basil leaves (chiffonade)
3 tablespoons extra virgin olive oil (divided)
1/2 tsp dried oregano
Pinch Salt
1 teaspoon balsamic vinegar
1 Italian style baguette (sliced)
1 whole clove garlic

Steps:

  • Combine the diced tomato with fresh basil, dried oregano, a pinch of salt, 1 to 1 1/2 tablespoons olive oil, oregano, a pinch of salt, and a splash (1 teaspoon) of balsamic vinegar. Chill.
  • Slice the baguette into 1/4 to 1/2 inch slices. Cut off the end of the garlic clove and rub the garlic onto each side of each piece of bread. Drizzle both sides of the sliced bread with a little olive oil (or use a brush to brush it on).
  • Toast on a grill or in a hot skillet until browned on both sides.
  • Top hot bread with cold tomato bruschetta and serve immediately.

8 slices Italian bread
1 garlic clove, peeled, cut in half
1/2 cup extra virgin olive oil
1 cup chopped clam, drained (2 6-oz cans)
4 large ripe tomatoes, cut into thick slices
kosher salt
fresh ground black pepper, to taste
12 arugula leaves or 12 fresh basil leaves, rinsed and dried

Steps:

  • Preheat grill. Toast both sides of bread slices on the grill. Rub cut side of garlic cloves on toasted bread to infuse with garlic flavor. Place 1 tomato slice & 1 Tbsp clam meat on each slice of grilled bread.
  • Arrange on large platter. Sprinkle with Kosher salt and freshly ground pepper, to taste. Drizzle with extra virgin olive oil. Slice arugula or basil leaves in thin strips and distribute over bruschetta.
  • Serve immediately.

2 tablespoons olive oil, divided
2 shallots, chopped
2 cloves garlic, minced
1/2 cup dry white wine or vermouth
2 pounds littleneck clams, scrubbed
1/2 cup reduced-sodium chicken or vegetable broth
1/2 cup bottled clam juice
1/3 cup chopped fresh parsley leaves
1 tablespoon butter
1/3 cup drained capers
1 baguette, sliced crosswise into 1/4-inch thick slices and toasted until golden
3 roasted Roma (plum) tomatoes, diced
2 cups frozen green peas, steamed until just tender

Steps:

  • Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add shallots and garlic and cook 2 minutes. Add wine and cook 1 minute. Add clams, broth and clam juice and bring to a simmer. When clams have opened, remove them from pan, reserving liquid in pan, and transfer to a serving platter. Add parsley and butter to pan and simmer 1 minute. Place clams in serving bowls and pour over parsley broth.
  • Heat remaining oil in a small skillet over medium-high heat. Add capers and cook 2 minutes.
  • Place diced tomatoes on baguette slices and top with fried capers. Serve bruschetta and peas alongside clams.

SPAGHETTI A LA BRUSCHETTA WITH SEAFOOD



Spaghetti a La Bruschetta With Seafood image

Spaghetti tossed with a fresh uncooked bruschetta style sauce and loaded with prawns, scallops and clams.

5 medium tomatoes, vine ripened, canned tomatoes not recommended
3 garlic cloves, minced
3 tablespoons fresh basil, coarsely chopped
1 teaspoon sugar
1/3 cup spaghetti sauce, Prego original is best
1/8 teaspoon salt
fresh ground black pepper
2 tablespoons extra virgin olive oil
12 clams, fresh, in the shell
1/2 tablespoon olive oil
1 cup scallops
1 cup prawns, large fresh shrimp will do
125 g spaghetti, half a box, enough for two, I prefer whole wheat
parmesan cheese, fresh grated (optional)

Steps:

  • BRUSCHETTA SAUCE: Prepare earlier in the day and set aside to meld flavours. Place tomatoes in a deep bowl and pour boiling water over them. Leave for about 3 minutes then remove skins and chop into medium dice. In a non reactive bowl place diced tomatoes, minced garlic, chopped basil, sugar, Prego, salt, black pepper and olive oil. Cover bowl with plastic wrap and set aside at room temperature until ready to use.
  • PREPARE SEAFOOD: Steam the clams in their shells in a little water, seafood bouillon and a splash of white wine - or just plain water is fine. Once they are wide open - drain - discard all clams that have not fully opened as well as the liquid and place the opened ones into a warmed bowl. Heat 1/2 tablespoon of olive oil and sauté scallops and prawns. Place in the same bowl as the clams.
  • TO SERVE: Cook spaghetti according to package directions. Drain well and return it to the pot in which it was cooked. Toss with room temperature bruschetta sauce and add seafood. Place the pot back onto the still heated, but turned off burner so the sauce and spaghetti can heat through - do not allow it to cook further!
  • Distribute between two pasta bowls and grate fresh Parmesan cheese over top if desired.

1/4 cup extra virgin olive oil
1 large onion, thinly sliced (about 1 1/2 cups)
4 garlic cloves, peeled and thinly sliced
Pinch crushed red pepper flakes
1/2 teaspoon kosher salt
48 littleneck clams, shucked, chopped if large, shucking juices reserved and strained
1/4 cup chopped fresh Italian parsley
12 thick slices country bread, each 2 to 3 inches long, grilled

Steps:

  • To a large skillet, over medium-high heat, add the olive oil. When the oil is hot, add the onion. Cook, stirring occasionally, until the onion is softened, about 4 minutes. Add the garlic, and let sizzle a minute, taking care not to burn it, then season with the crushed red pepper flakes and salt. Add the clam shucking juices to the skillet, bring to a boil, and add the parsley. Let boil to reduce the juices by about half and bring the sauce together. Reduce the heat to a simmer, add the shucked clams, and simmer until they are just cooked, about 2 minutes.
