SHIRLEY'S BAKED CLAM CASSEROLE
This is a great basic recipe to cook any of your favorite seafoods... I love using the lobster, langastanos, shrimp and haddock the BEST! Being from New England, my mom loved her seafood, and we had this YUMMY dish quite often growning up, with all these variations! You can easily double or triple the recipe.

Steps:
- Crush crackers.
- Mix clams or other seafood and crackers together.
- Put in small individual casserole dishes of your choice. The amount this will serve, depends on what size you use. I use about 8"x3" individual casserole dishes.
- Divide the seafood mixture between the casserole dishes.
- Add melted butter over the top of each casserole dish.
- Squirt desired amount of lemon juice over top.
- of all.
- Sprinkle with desired amount of salt and pepper.
- Bake for 25 minutes at 325.

- Preheat oven to 350°F, grease a 1 quart casserole.
- Drain liquid from clams into a measuring cup and add enough milk to total 3/4 cup.
- Put clams in a mixing bowl, add the clam-milk mixture, corn, eggs, crumbs, onion, seasonings green pepper and mix well.
- Add to the prepared casserole, dot with butter and bake 35 to 45 minutes until set.
QUICK TUNA AND CLAM PAPPARDELLE
This is such a cool recipe! It's like a tuna noodle casserole combined with linguine in clam sauce. Great after-work dinner (which I always love).

Steps:
- Heat a large pot of water to a boil.
- Combine onion and butter in a large skillet; cook over medium-high heat until onion is softened, about 5 minutes.
- Add pappardelle (or egg noodles) to boiling water; cook according to package directions, drain, place in a large serving bowl.
- Meanwhile, add parsley, dill weed, capers and pepper to the onion and butter in skillet; cook 1 minute and stir in clam chowder and tuna; cook, stirring occasionally, until hot throughtout, about 5 minutes.
- Season to taste, if necessary.
- Pour over pasta; toss to coat and serve with lemon wedges.

4 CHEESE TUNA CLAM CASSEROLE
Easy crock pot meal! And it has that scrumptious, crispy, chewy, browned cheese at the edges. Oh man! To die for! Ha ha! Most times I make this with 2 cans of tuna, but it's also delicious with 1 can each of tuna & clams. Don't drain the liquid from the cans, it adds a delicious flavor!

Steps:
- 1. Spray crock pot with cooking spray.
- 2. DO NOT DRAIN LIQUID FROM CANS.
- 3. Cook egg noodles in boiling, lightly salted water for about 2 minutes only. Drain.
- 4. Add 1/2 noodles into crock pot.
- 5. Add tuna & clams with liquid. (Or if you like, you can just use 2 cans of tuna, undrained)
- 6. Add remainder of the noodles.
- 7. Add in undiluted soup. Add mushrooms with liquid.
- 8. Top with shredded cheeses.
- 9. Cook on LOW for 5 hours. Give a quick stir, loosening the scrumptious browned cheeses along the sides. Serve.

- Cook the pasta according to package directions. Meanwhile, melt 2 tablespoons of butter in a skillet & saute the onion for about 5-6 minutes on medium high heat. Drain the pasta.
- In a large bowl, combine the 2 cans of clam chowder with the beaten eggs, Worcestershire sauce, lemon juice, 2 teaspoons of Italian dressing mix, garlic powder, & black pepper to taste. Stir in the cooked pasta, sauteed onions, & shredded cheese. Spread the mixture into a 9x13 casserole dish.
- In a separate bowl, combine 4 tablespoons of melted butter with the remainder of the Italian dressing dry mix. Fold in the oyster crackers. Spread the seasoned crackers over the pasta. Sprinkle with some diced green onions, reserving some to sprinkle on after the casserole has baked.
