My Best Clam Chowder image

A delicious, traditional, cream based chowder, this recipe calls for the standard chowder ingredients: onion, celery, potatoes, diced carrots, clams, and cream. A little red wine vinegar is added before serving for extra flavor.

3 (6.5 ounce) cans minced clams
1 cup minced onion
1 cup diced celery
2 cups cubed potatoes
1 cup diced carrots
¾ cup butter
¾ cup all-purpose flour
1 quart half-and-half cream
2 tablespoons red wine vinegar
1 ½ teaspoons salt
ground black pepper to taste

Steps:

  • Drain juice from clams into a large skillet over the onions, celery, potatoes and carrots. Add water to cover, and cook over medium heat until tender.
  • Meanwhile, in a large, heavy saucepan, melt the butter over medium heat. Whisk in flour until smooth. Whisk in cream and stir constantly until thick and smooth. Stir in vegetables and clam juice. Heat through, but do not boil.
  • Stir in clams just before serving. If they cook too much they get tough. When clams are heated through, stir in vinegar, and season with salt and pepper.

4 slices bacon, diced
1 ½ cups chopped onion
1 ½ cups water
4 cups peeled and cubed potatoes
1 ½ teaspoons salt
½ teaspoon ground black pepper to taste
3 cups half-and-half
3 tablespoons butter
2 (10 ounce) cans minced clams

Steps:

  • Place diced bacon in large stock pot over medium-high heat. Cook until almost crisp; add onions, and cook 5 minutes. Stir in water and potatoes, and season with salt and pepper. Bring to a boil, and cook uncovered for 15 minutes, or until potatoes are fork tender.
  • Pour in half-and-half, and add butter. Drain clams, reserving clam liquid; stir clams and 1/2 of the clam liquid into the soup. Cook for about 5 minutes, or until heated through. Do not allow to boil.

1/2 pound bulk sage-flavored sausage or sausage of your choice
1/4 cup chopped onion
1/4 cup chopped celery
3 cups water
2 medium red potatoes, cut into 1/2-inch cubes
2 teaspoons chicken bouillon granules
1 cup frozen corn
3 tablespoons butter
1/4 cup all-purpose flour
1/8 teaspoon pepper
1-1/2 cups 2% milk

Steps:

  • In a large saucepan, cook the sausage, onion and celery over medium heat until meat is no longer pink; drain. , Stir in the water, potatoes and bouillon. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes. Add corn; simmer 10 minutes longer or until potatoes are tender. , Meanwhile, in a small saucepan, melt butter; stir in flour and pepper until smooth. Gradually stir in milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir into the sausage mixture.

4 center-cut bacon strips
2 celery ribs, chopped
1 large onion, chopped
1 garlic clove, minced
3 small potatoes, peeled and cubed
1 cup water
1 bottle (8 ounces) clam juice
3 teaspoons reduced-sodium chicken bouillon granules
1/4 teaspoon white pepper
1/4 teaspoon dried thyme
1/3 cup all-purpose flour
2 cups fat-free half-and-half, divided
2 cans (6-1/2 ounces each) chopped clams, undrained

Steps:

  • In a Dutch oven, cook bacon over medium heat until crisp. Remove to paper towels to drain; set aside. Saute celery and onion in the drippings until tender. Add garlic; cook 1 minute longer. Stir in the potatoes, water, clam juice, bouillon, pepper and thyme. Bring to a boil. Reduce heat; simmer, uncovered, until potatoes are tender, 15-20 minutes., In a small bowl, combine flour and 1 cup half-and-half until smooth. Gradually stir into soup. 6 slices bacon (diced)
1 small onion (diced)
3 stalks celery (diced)
3 cloves garlic (minced)
1/2 cup flour
4 (6.5 ounce cans) chopped clams
1 cup chicken broth
1 cup milk
1 cup half and half
4 medium russet potatoes (peeled and diced)
salt and pepper to taste

Steps:

  • In a large pot over medium-high heat add the bacon and cook until slightly crisp and no longer pink. Remove it to a plate with a slotted spoon.
  • Add the onion, celery, and garlic and cook until tender. Add the flour and stir.
  • Add in the juice from the clams, chicken broth, milk, and half and half, then stir until there aren't any clumps. Add in the potatoes.
  • Bring the pot to a boil and reduce heat to a simmer until the potatoes are tender and the soup is thick. Stir in the clams and salt and pepper to taste. Top with crumbled bacon and serve.

2 lbs whole clams
1 cup white wine
1 large onion, finely chopped
3 tablespoons butter
1 fennel bulb, thinly sliced
1 medium potato, diced small
3 thickly cut slices of smoked bacon
2 sausages, cut in slices
2 bay leaves
1 3/4 cups milk
1/4 cup heavy cream
2 garlic cloves, chopped
a squeeze of lemon
sea salt
1 cup edamame, blanched for 2 minutes, cooled in icy cold water
small handful of parsley, thinly sliced
few fennel strands

Steps:

  • Cook the clams, covered, with the wine for a few minutes until they open.
  • Reserve the cooking liquid, you should have about 2 cups.
  • In a large pot melt the butter and cook the onions on medium heat for 5 minutes.
  • Add the fennel, potato, bacon, sausages, bay leaves and cook for another 5 minutes.
  • Add the reserved cooking liquid and simmer for a few minutes then add the milk, cream, garlic, and lemon. Simmer on low for 10 minutes. Taste and season with salt.
  • Serve chowder with the reserved clams either in it or in the shell.
  • Garnish with some warmed edamame, parsley and fennel strands.

4 C finely chopped kale
1 C chopped onion
1 rib celery, finely chopped
1 link (3 oz) fully cooked chicken sausage, chopped
4 cloves garlic, minced
1 C clam juice (we used Bar Harbor)
12 littleneck clams, scrubbed
12 mussels, scrubbed and debearded
1 tbsp. finely chopped fresh thyme
12 lg shrimp, peeled and deveined
2 1/2 C canned cannellini beans, rinsed and drained
2 tbsp. half-and-half
2 tbsp. fresh lemon juice + lemon wedges for serving
1/2 tsp. red-pepper flakes (optional)

Steps:

  • Heat oil in 5 qt pot over medium heat. Add kale, onion, celery, and sausage and cook, stirring occasionally, until softened, about 4 minutes. Add garlic and cook, stirring, 1 minute.
  • Add clam juice and 1 1/2 cups water and bring to a simmer. (To reduce sodium, use 1/2 cup clam juice and 2 cups water.) Stir in clams, mussels, and thyme. Simmer, covered, 7 minutes. Add shrimp, beans, and half-and-half. Simmer until clams and mussels open and shrimp is cooked through, about 3 minutes longer. Season to taste with lemon juice and red-pepper flakes, if using. 1/3 cup canned diced green chilies
1 large jalapeño chili, seeded, chopped

1 cup canned crushed tomatoes with added puree
1 cup frozen white corn kernels
3 8-ounce bottles clam juice
24 littleneck clams, scrubbed
6 tablespoons chopped fresh cilantro

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add chorizo; sauté until fat is rendered, about 3 minutes. Add next 6 ingredients; sauté until onion begins to soften, about 5 minutes. Mix in oregano and cumin, then tomatoes, corn, and bottled clam juice. Bring to boil. Reduce heat to medium-low. Cover and simmer until potatoes are almost tender, about 12 minutes. (Can be made 1 day ahead. Refrigerate uncovered until cool, then cover and chill. Bring to simmer before continuing.)
  • Add clams to mixture in pot; cover and cook over medium-high heat until clams open and potatoes are tender, about 7 minutes (discard any clams that do not open). Mix in 4 tablespoons cilantro. Season to taste with salt and pepper. Divide clams among 6 shallow soup bowls. Ladle chowder over. Sprinkle with remaining cilantro and serve.
  • A smoked-pork link sausage flavored with garlic and spices, but milder than Mexican chorizo. Spanish chorizo is available at Spanish markets and specialty foods stores.
