¾ pound pasta of your choice ((spaghetti or linguini) )
2 tbsp extra virgin olive oil
2 tbsp minced shallots
1 tbsp minced garlic
½ cup dry white wine
2 cans (6.5 oz each) chopped clams ((drained))
1 bottle (8 oz) clam juice
½ cup low-sodium chicken broth ((or use clam juice for a stronger taste))
2 tbsp butter
½ tsp dried basil
chopped parsley ((to serve))
lemon juice

Steps:

  • In a large pot of boiling salted water, cook the pasta until al dente. Reserve about 3 tablespoons of the cooking water.
  • Heat oil in a large deep skillet over medium heat. Cook shallots and garlic just until translucent and soft for 1-2 minutes. Keep stirring and careful not to burn the garlic.
  • Add clam juice, chicken broth, and white wine. Cook until the sauce on medium-high heat until the sauce is reduced, enough to fully submerge the cooked pasta. Season with salt, black pepper, or chili pepper flakes if needed.
  • Add butter, basil, clam meat, pasta, and pasta water to the skillet. Stir just until the clam is warm throughout. Turn off the heat immediately so you don't overcook the clam meat. Serve with chopped parsley.

1 (6.3 ounce) jar Barilla® Traditional Basil Pesto
4 tablespoons butter, divided
1 small shallot, minced
¼ cup red bell pepper, minced
4 cloves garlic, minced
1 cup white wine
1 (6.5 ounce) can chopped clams, drained with juice reserved
¾ cup chicken broth
1 (16 ounce) package clams in shell, scrubbed
1 pound uncooked medium shrimp, peeled and deveined
¼ cup chopped fresh basil leaves, plus more for garnish
2 tablespoons shaved Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes; drain.
  • Heat 2 tablespoons butter in a skillet over medium heat. Add shallot and bell pepper. Cook until softened, 3 or 4 minutes; stir in garlic. Add white wine and bring to a boil over medium-high heat.
  • Stir in canned clams, 1/2 of the reserved clam juice, and chicken broth. Arrange fresh clams on the sauce. Bring to a low simmer; reduce heat to low. Cover and cook until clam shells open, 5 or 6 minutes. Discard clams that do not open. Stir in basil pesto and shrimp. Heat through until shrimp are bright pink and opaque, 2 to 3 minutes. Remove from heat and stir in remaining 2 tablespoons butter and chopped basil.
  • Distribute linguine among serving bowls; spoon clams, shrimp, and sauce over pasta. Top with shaved Parmesan cheese and fresh basil.

2 Tbsps vegetable oil
1 kilogram Cockle (Cleaned, ready to cook)
1 kilogram mussels (Cleaned, ready to cook)
150 milliliters white wine
75 grams butter
125 grams smoked Bacon (cut into thin strips)
3 large potatoes peeled and cut into 1 cm (approximately 3/8 inch) cubes
2 stalks Celery (thinly sliced)
1 thyme
1 bay leaf
75 grams Pastry flour
1 pinch Saffron
1 l milk
150 grams Crème fraiche

Steps:

  • Heat the vegetable oil in a large pan and sauté the cockles and mussels briefly. Pour in the wine, cover and cook for 3-4 minutes, or until the shells open up. Throw away any that do not open up. Transfer to a bowl and reserve the cooking liquid.
  • Remove about half of the cockles and mussels from the shells.
  • Heat the butter in a large pan and fry the bacon in it. Add the vegetables, thyme and bay leaf and cook for about 5 minutes. Sprinkle the flour over everything, mix well and cook for an additional 5 minutes. Stir in the saffron and milk. Bring to a boil and simmer for about 20 minutes, stirring occasionally. Right before serving, return the cockles and mussels to the pot and stir in the creme fraiche. Serve in shallow bowls.

3 tablespoons olive oil
4 cloves garlic, minced
1 medium onion, minced
1/2 teaspoon chili pepper
3 pounds steamer clams, well scrubbed
1/2 cup dry white wine
3/4 cup fregola
2 cups stewed tomatoes, crushed, with their juice
Salt and freshly ground black pepper to taste
2 cups bottled clam juice, if necessary
2 tablespoons minced flat leaf parsley

Steps:

  • In a large soup pot, warm the olive oil. Add the garlic, onion and chili pepper, and cook over medium heat 5 minutes. Raise heat to high, and add the steamers, 1 cup water and the wine. Cover pot, and cook 3 to 5 minutes, until clams begin to open.
  • Use tongs to remove clams, leaving as much juice as possible in the pot. Add fregola and tomatoes and their juice to the pot, reduce heat to simmer, and adjust the seasoning with salt and black pepper to taste.
  • Cover pot, and simmer 20 minutes, checking occasionally to be sure that not all the liquid has evaporated. If necessary to maintain soupy consistency, add water or bottled clam juice, a quarter cup at a time. After 20 minutes, remove lid and continue to simmer until fregola is tender.
  • Meanwhile, pick the meat from the clams and discard the shells. When fregola is tender, stir in the clam meat as well as additional bottled clam juice, if necessary, and serve immediately, garnished with parsley.

8 ounces spaghetti
2 tablespoons extra-virgin olive oil
2 cloves garlic, minced
1/4 teaspoon crushed red-pepper flakes, plus more for serving
1/4 cup dry white wine
18 littleneck clams (about 1 1/2 pounds), scrubbed
1 tablespoon unsalted butter
1/4 cup fresh flat-leaf parsley leaves, chopped, plus 1 tablespoon thinly sliced stems

Steps:

  • Bring a medium pot of generously salted water to a boil. Cook pasta until al dente. Reserve 1/2 cup pasta water; drain.
  • Meanwhile, heat oil in a large pot over medium heat. Add garlic and red-pepper flakes and cook, stirring, 30 seconds. Add wine and bring to a simmer. Increase heat to medium-high and add clams. Cover and cook just until clams open, 4 to 5 minutes. Discard unopened clams.

1 large onion, minced

14 ounces crushed tomatoes
1 tablespoon sun-dried tomato paste
1 teaspoon sugar
1 teaspoon italian seasoning
3 cups fish stock or 3 cups vegetable stock
2/3 cup red wine
1/2 cup small shell pasta, shapes
5 ounces clams, in natural juice
2 tablespoons finely chopped fresh flat-leaf parsley

Steps:

  • Heat oil in large saucepan. Add the onion and cook for 5 minutes, stirring frequently until soft.
  • Add garlic, tomatoes, tomato paste, sugar, seasoning, stock, wine, and salt and pepper to taste and bring to a boil. Lower the heat, half cover the pan, and simmer for 10 minutes, sstirring occasionally.
  • Add the pasta and continue simmering, uncovered, for about 10 minutes, or until al dente, stirring occasionally to prevent the pasta from sticking together.
  • Add the clams and their juice to the soup and heat through for 3 to 4 minutes, ading more stock if required. Do not allow it to boil or the clams will become tough. Remove from the heat, stir in the chopped parsley and adjust the seasoning. Serve hot, sprinkled with pepper and parsley leaves.

One 6.5-ounce can chopped clams, with juices
2 tablespoons olive oil
1 tablespoon fresh oregano leaves, plus more for garnish
2 teaspoons crushed red pepper flakes, plus more for garnish
4 cloves garlic, sliced
1 small yellow onion, sliced thinly
Kosher salt
2 cups baby spinach
1 1/2 cups grated Parmesan
2 tablespoons salted butter
Freshly ground black pepper

Steps:

  • Place the spaghetti, clams with their juices, olive oil, oregano leaves, crushed red pepper, garlic, onion and a good pinch of salt in a large high-sided skillet. Add 4 1/2 cups of water and bring to a boil. Cook, stirring and turning the pasta frequently with tongs, until the spaghetti is al dente and most of the liquid has evaporated and thickened, 9 to 10 minutes.
  • Remove the pan from the heat and fold in the spinach, Parmesan and butter. Toss to make sure everything is well coated and combined. Season to taste with black pepper and more salt if needed. Serve, garnished with more oregano leaves and crushed red pepper flakes.

1 pound dried spaghetti
1/2 cup extra-virgin olive oil
2 shallots, thinly sliced
5 to 7 cloves garlic, finely chopped
2 1/2 pounds Manila clams, scrubbed clean
1/2 cup fresh parsley, chopped
1/2 cup dry white wine
2 tablespoons unsalted butter, diced into small cubes
Sea salt and freshly ground black pepper
1 lemon, zested, for garnish

Steps:

  • In a large pot, bring to a boil 6 quarts of salted water. Add pasta, stirring constantly in the beginning to prevent it from sticking together. Cook until al dente, about 8 minutes.
  • Meanwhile, heat the olive oil in a large saute pan. When almost smoking, add shallots and garlic and saute until soft and translucent, about 3 to 4 minutes, being careful not to burn the garlic. Add the clams and wine. Cover and simmer for 6 to 8 minutes or until most clams have opened.
  • Add 2 tablespoons chopped parsley. Whisk in butter to thicken sauce slightly.
  • Drain pasta in a colander. Do not rinse pasta with water - this will remove the pasta's natural starches. Place pasta into the clam saute pan and mix thoroughly. Check seasoning.
  • Pour pasta into large serving bowl. Zest lemon over the dish, being carefull not to zest the white part of the lemon, which is bitter. Garnish with remaining parsley. Serve immediately.
