CONTEST-WINNING NEW ENGLAND CLAM CHOWDER

Contest-Winning New England Clam Chowder image

This is the best New England clam chowder recipe, ever! In the Pacific Northwest, we dig our own razor clams and I grind them for the chowder. Since these aren't readily available, the canned clams are perfectly acceptable. -Sandy Larson, Port Angeles, Washington

FISH CHOWDER

Fish Chowder image

This comforting bowl of chowder uses the natural starches found in russet potatoes to provide body, while a touch of heavy cream adds a velvety richness. The result is a naturally gluten-free soup with a light, creamy consistency that lets more delicate flavors like shallots and fish shine through.

Provided by Martha Stewart

Categories     Food & Cooking     Soups, Stews & Stocks     Soup Recipes

Time 45m

Number Of Ingredients 11

2 strips bacon (about 2 ounces), finely chopped

2 cups chicken stock
2 cups bottled clam juice
1 thyme sprig
Coarse salt and freshly ground pepper
1/3 cup heavy cream
1 1/2 pounds skinless firm white-fleshed fish, such as cod, bass, or red snapper, cut into 1 1/2-inch pieces

  • Add potatoes, stock, clam juice, and thyme. Season with salt and pepper. Bring to a boil, then reduce to a simmer. Cook until potatoes are tender but not falling apart, 8 to 10 minutes. CLAM AND COD CHOWDER

Clam and Cod Chowder image

Weeknight chowder? Use clam juice. Weekend? It's worth making fish stock from scratch.

Provided by Alison Roman

Categories     Soup/Stew     Potato     Kid-Friendly     Lunch     Cod     Clam     Celery     Leek     Fall     Winter     Bon Appétit     Sugar Conscious     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     Small Plates

Yield 8 Servings

Number Of Ingredients 12

2 tablespoons olive oil
2 tablespoons unsalted butter
1 1/2 pounds small Yukon Gold potatoes, peeled, halved, quartered if large
2 large leeks, white and pale-green parts only, finely chopped
4 celery stalks, finely chopped
4 sprigs thyme, plus leaves for serving
Kosher salt, freshly ground pepper
1/3 cup dry white wine
4 cups fish stock or bottled clam juice
2 cups heavy cream
4 pounds littleneck clams, scrubbed
2 pounds skinless cod or haddock, cut into large pieces Hot sauce and lemon wedges (for serving)

Steps:

  • Heat oil and butter in a large heavy pot over medium. Add potatoes, leeks, celery, and thyme sprigs; season with salt and pepper. Cook, stirring occasionally, until leeks are tender, about 5 minutes. Add wine, bring to a boil, and cook until reduced by half, about 2 minutes. Add stock and cream, season with salt and pepper, and bring to a gentle simmer (if using clam juice, taste before adding salt, it's very briny). Cook until potatoes are starting to fall apart (their starch will help give body to the soup), 50-60 minutes.
  • Add clams to pot and stir to coat. Cover and simmer until clams are just beginning to open, 10-12 minutes. Season cod with salt and pepper and add to pot. Reduce heat to low and cover. Let fish gently poach until cooked through, about 5 minutes (simmering too hard can make fish tough). Season with salt and pepper, if needed, and serve topped with thyme leaves, with hot sauce and lemon wedges.

CLAM AND CORN CHOWDER

Clam and Corn Chowder image

Provided by Food Network

Yield 6 to 8 servings

Number Of Ingredients 16

4 tablespoons unsalted butter
1 onion, diced
1 carrot, peeled and diced
1 celery rib, washed and diced
4 ears corn, husked and kernels removed
6 baby red new potatoes, unpeeled, washed and diced
1 quart clam juice
1 cup dry white wine
3 1/2 pounds Littleneck clams, Manila clams or Cockles in the shell
1 Italian Roma tomato, cored, seeded and diced
1 red bell pepper, cored, seeded and diced
1 jalapeno chile, stemmed, seeded, if desired
1 bunch cilantro, leaves only, chopped
Juice of 1 lime
1/2 teaspoon freshly ground black pepper
Salt to taste

Steps:

  • Melt the butter in a large stockpot over moderate heat. Saute the onions for 10 minutes. Add the carrots, celery, corn and potatoes and saute 2 minutes longer. Pour in the clam juice. Bring to a boil, reduce to a simmer and cook 30 minutes.
  • Meanwhile, bring the white wine to a boil in a large saucepan and reduce by one-third. Add the clams, cover and steam, shaking the pan occasionally, until the clams open up, 5 to 7 minutes. Remove and discard any that do not open. Remove the cover and let the clams cool in the pot. When cool enough to handle, separate the meat from the shells, reserving the juice, and chop the clams. Set aside. Reserve the cooking liquid.
  • Add the tomato, red pepper and jalapeno to the soup pot and cook over low heat an additional 10 minutes. Strain the reserved cooking juices and clam juice through a fine kitchen towel or coffee filter into the soup. Add the chopped clams and cook 10 more minutes. Stir in the cilantro, lime juice and pepper. Taste for salt, since the clams may be salty, and serve steaming hot.

  • Place fresh clams and cod in a single layer on a rimmed baking tray, and bake in a hot oven 12 to 15 minutes, until clams open. Remove from the oven, and transfer into a large bowl along with any broth that collected during the cooking process. Let clams cool slightly, then pull meat from shells, and chop clams into bite-size pieces. Keep them chilled, along with the cooked cod while you prepare the broth. (If you are using pre-shucked clams, bake cod alone in lightly oiled baking pan for 10 to 12 minutes.)
  • Strain broth from the cooking through a fine-mesh sieve set over a large bowl. Add clam juice, adding enough water to measure 6 cups. Melt butter in a large 8-quart heavy stockpot over medium heat. Add bacon and cook, stirring occasionally, until fat is rendered and bacon begins to brown, about 8 minutes. Add onion and garlic and continue to stir until onion is translucent, stirring occasionally, about 10 minutes. Add carrots and celery, and cook 5 minutes. Add the clam broth, potatoes, thyme, and bay leaf. Return to medium heat and simmer, cooking until potatoes are tender, about 20 to 25 minutes. Stir in the heavy cream and gently reheat.
  • Discard bay leaf, and stir in cooked clams and cod. Taste and season with salt and freshly ground pepper to taste. Let it sit for 10 minutes for flavors to meld. When ready to serve, divide chowder among bowls and garnish with chopped chives
