Provided by Roberta

Categories     Appetizer     Dinner     lunch

Time 2h50m

Number Of Ingredients 12

500 gr Bread flour ((I've also tested this with spelt flour and all purpose))
300 gr Lukewarm water ((Quantity varies depending on how the flour absorbs liquids))
6 gr Brown sugar
a packet Dry yeast (( 7 gr))
12 gr Salt
12 gr Extra virgin olive oil
About 300 gr Tomato sauce (You will have some leftovers)
Salt (if sauce is unsalted) (to taste)
A drop Extra virgin olive oil
Oregano (to taste)
One mozzarella (120 gr) ((optional. I've tested both with and without mozzarella))
Parmigiano or pecorino (optional)

Steps:

  • Combine lukewarm water and dry yeast (if it needs to activate, let it set aside for 5/10 minutes)
  • Using a stand mixer, combine flour and sugar. Activate the machine at low speed, with flat hook.
  • Pour the water + yeast mixture, and let absorb.
  • Add salt and let it incorporate, finally drizzle in the extra virgin olive oil and let absorb.
  • Once the dough forms into a ball, let the mixer knead for approximately 10/15 minutes (perform the windowpane test).
  • Put your dough into a deep bowl, cover with a lid or plastic and let it rise for 2 hours or until doubled in size (it depends on the room's temperature).

Categories     Savory Breads

Time 40m

Number Of Ingredients 9

1 lb hot sausage
5 oz pepperoni
1 medium onion
1/8 c green olives
1 1/2 c pizza sauce
1 loaf of italian bread or french bread
2 Tbsp parmesan cheese
8 oz shredded mozzarella cheese
olive oil or cooking spray

Steps:

  • 1. 1. Preheat the oven to 400 degrees. 2. Cook the sausage and onions together breaking apart the sausage into pieces. 3. While the sausage and onions are cooking, cut the bread in half. Once the bread is cut in half, scoop out the insides of the bread using a spoon (or a knife if you are not clumsy like me). Place both halves of the bread and the scooped out parts (even the crumbs) on a cookie sheet and brush with a little bit of Olive Oil or spray with cooking spray. Then place the cookie sheet in the oven for few minutes (just keep an eye on it) to just barely brown the bread so it doesn't get soggy when you put your filling in. 4. Meanwhile, cut up the pepperoni (you could also use sliced pepperoni and not cut it up) and olives and set aside. 5. Get the bread out of the oven it is probably ready :) 6. After the sausage is browned, turn the stove off and add in the pepperoni, olives, and pizza sauce and stir. 7. Grate the mozzarella cheese. 8. Place half of the mozzarella cheese in the pan with the other ingredients and stir. 9. Shake in a generous amount of Parmesan cheese and stir. 10. Scoop the pizza filling into the bread, you will have some left over. 11. Wondering what to do with the bread crumbs and scooped out part - throw it into a small casserole dish and cover the bottom with the bread. 12. Use the leftover filling and place it on top of the bread in the casserole dish. 13. Sprinkle remaining mozzarella cheese over the stuffed bread and casserole dish to cover. 14. Put it in the oven and bake until cheese is melted (and browned just a little if you are like me).

CHEESE STUFFED CHICKEN & SPINACH PIZZA BREAD

Cheese stuffed Chicken & Spinach Pizza Bread image

Pizza Bread is a twist on traditional pizza. Bread dough seasoned with chicken, fresh spinach, sun-dried tomatoes and stuffed with cheese. Served warm with Alfredo sauce.

Provided by TidyMom

Categories     Appetizers

Time 3h

Number Of Ingredients 17

2 teaspoons yeast
1 1/2 cups warm water
3 1/3 cups all-purpose flour
2 teaspoons kosher salt
1 tablespoons sugar
1 tablespoon canola or olive oil
1 large boneless chicken breast
1/2 teaspoon garlic salt
1/2 teaspoon oregano
1/4 teaspoon red pepper
1 cup spinach, chopped
2 tablespoons finely chopped fresh basil
1/4 cup chopped soft sun-dried tomatoes
1/2 cup parmesan
2 cups mozzarella & provolone, shredded
1 tablespoon butter, melted
1 jar Alfredo sauce for dipping

Steps:

  • Using a sharp knife, chop chicken into small pieces. Season with garlic salt, oregano, and red pepper.
  • In a 10-inch skillet, heat oil over medium-high heat. Sauté chicken, until no longer pink, 5-6 minutes. Keep a close eye on these and stir them occasionally using a wooden spatula to prevent burning. Set finished pieces aside on a plate.
  • In a large bowl, sprinkle yeast over warm water in a bowl. Let it sit for 3 minutes until foamy, then add in flour, salt, and sugar. Using a wooden spoon, mix just until it comes together. Add in chicken, spinach, basil, tomatoes, and parmesan and combine well. If the dough is too tacky, dust with a little extra flour. Cover with a towel and let rise for about 1 hour on counter, then another hour in the refrigerator.
  • Remove dough from refrigerator. Flour parchment lined counter or table and roll dough out into 11×17" rectangle. Sprinkle cheese over top. Fold all four sides in towards the center, sealing sides so cheese is not exposed. Let rest while you preheat oven to 450 degrees.
  • Place loaf on a pizza stone or lined baking sheet, and bake for 25 to 30* minutes (*loosely cover with foil after 15 minutes if bread is getting dark), until golden brown. 3 minutes before removing from oven, lightly brush the top with melted butter and let it finish baking. Let rest on a wire rack to cool slightly before slicing.
  • Serve with warm Alfredo sauce for dipping.

  • To make the crust: Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess.
  • Then add the lower amount of water, and mix and knead — by hand, stand mixer, or bread machine set on the dough cycle — to make an elastic, fairly stiff dough, adding more water if necessary; you'll use less in the summer, or if you substitute all-purpose flour for the semolina; and more in the winter, or if you're in a dry climate., Place the dough in a large, greased bowl; cover, and let rise at room temperature for 1 hour.
  • For best flavor, after its initial 1-hour rise, refrigerate the dough for several hours, or for up to 24 hours.
