PEACH COBBLER
This old fashioned Peach Cobbler recipe is not only extremely easy to make from scratch, but it's made with fresh or canned peaches so you can enjoy it all year round!

Steps:
- Add the sliced peaches, sugar and salt to a saucepan and stir to combine. *(If using canned peaches, skip steps 1 & 2 and follow the directions starting at step 3)
- Cook on medium heat for just a few minutes, until the sugar is dissolved and helps to bring out juices from the peaches. Remove from heat and set aside.
- Preheat oven to 350 degrees F. Slice butter into pieces and add to a 9x13 inch baking dish. Place the pan in the oven while it preheats, to allow the butter to melt. Once melted, remove the pan from the oven.
- In a large bowl mix together the flour, sugar, baking powder, and salt. Stir in the milk, just until combined. Pour the mixture into the pan, over the melted butter and smooth it into an even layer.
- Spoon the peaches and juice (or canned peaches, if using) over the batter. Sprinkle cinnamon generously over the top.
- Bake at 350 degrees for about 38-40 minutes. Serve warm, with a scoop of ice cream, if desired.

TEXAS-STYLE PEACH COBBLER

- Preheat oven to 350 degrees. Place 4 Tablespoons butter in a 9 x 13 baking dish. Place in the oven and let the butter melt, watching carefully. Remove from oven.
- In a medium-size bowl, stir together 1/4 cup of sugar, fresh sliced peaches, and lemon zest. Set aside.
- In a large bowl, stir together flour, baking powder, remaining 1 1/4 cup of sugar, and salt. In a microwave-safe bowl, melt the remaining 8 Tablespoons of butter. Whisk in melted butter (let cool for several minutes before adding) and buttermilk. Stir until smooth.
- Pour batter into the pan with the melted butter. Sprinkle the peach mixture evenly over batter. Generously sprinkle with sugar. Bake until golden brown and edges are crisp -- about 42-48 minutes.
- Serve with vanilla ice cream or homemade whipped cream.
GRILLED PEACH COBBLER
Steps:
- Heat the grill to medium.
- Place the peaches cut side down on the grill until browned. Remove from the grill, cut into wedges and place into a gratin dish. To the peaches add half the butter, half the brown sugar and half the cinnamon, and toss. Add the remaining butter, sugar and cinnamon to the granola in a small bowl and toss until combined, adding more butter if needed. Top the peaches with the granola mixture and place the gratin dish onto the grill. Close and bake until the peaches and granola are golden brown, about 15 minutes.
- Place 1 large scoop of ice cream into 4 bowls and top with the peache mixture. Drizzle with some of the caramel sauce.
PEACH COBBLER
I found this peach cobbler recipe on the internet from the Salt Lick Restaurant in Austin, TX. Everyone loves this recipe so much I have to make a double batch! Feel free to cut back on the sugar. Everyone has and the peach cobbler still comes out perfect. :D Personally, I always use two bags of frozen peaches instead of canned.

- Preheat oven to 350°F. Heavily grease 9×13 pan with butter.
- Spread the undrained peaches in the prepared pan evenly, set aside. In the bowl of your stand mixer fitted with the paddle attachment combine the butter and 1 cup sugar together for 2 minutes on medium speed.
- Turn mixer to low and add in flour and oats, mixing until it's coarse crumb. Add in the milk and mix until combined.
- Drop the mixture by the spoonful onto the peaches.

PEACH COBBLER

- Pour self-rising flour into large mixing bowl. Add granulated sugar and mix thoroughly. Mix in milk until batter is thoroughly wet yet lumpy. DO NOT OVERMIX!
- Preheat oven to 275 degrees F.
- Cut butter into 4 parts and place in a 9-by-13-inch baking pan. Place in oven until butter is completely melted. Remove pan from oven and pour the batter evenly around the pan. Add peaches to the pan evenly, pouring the peach syrup from one can into the batter. Add a fine dusting of cinnamon to the top of the batter and place the pan in the oven. Bake 45 minutes. Rotate pan and continue to bake 45 minutes more. Remove from oven and spread turbinado across the top of the cobbler. Bake until cobbler top is light golden brown, an additional 10 to 15 minutes. Remove cobbler from oven and allow to cool for 15 minutes. Serve with or without ice cream.
CITY MARKET PEACH COBBLER
A wonderfully tangy peach cobbler that I found in a supplement to the Sunday newspaper years ago. I don't think I've ever served it to anyone who hasn't liked it. The filling is also great for a pie. For a really decadent dessert, serve this with a scoop of Blue Bell Homemade Vanilla Ice Cream! YUM!! The preparation time is approximate since I've never timed it. The cook time includes chill time for the dough.

- Combine peaches, lemon juice and orange juice.
- In a separate bowl, mix sugar, spices and cornstarch.
- Heat peaches, juices and butter in a saucepan over medium heat until butter is melted.
- Mix in dry ingredients; remove from heat and set aside while you prepare crust.
- Sift flour, sugar and salt together.
- Add shortening and mix until crumbly.
- Whip egg and water together, then sprinkle onto flour mixture.
- Mix just until dough forms.
- Chill for 30 minutes.
- Roll out 1/2 of dough and put in bottom and 1/2" up the sides of a 9"x 13" baking dish.
- Bake in 350° oven for 20 minutes.
- Pour peach filling into crust.
- Roll out remaining dough and cut into strips.
- Cover filling with dough strips.
- Sprinkle with 1 Tablespoon sugar and 1 Tablespoon melted butter.
- Bake 35-40 minutes.
