TROPICAL CITRUS BARS

Try bars with a tangy citrus twist, using both lemon and lime.

2 cups Gold Medal™ all-purpose flour
1/2 cup powdered sugar
1/2 cup flaked coconut
1 cup butter or margarine, softened
4 eggs
2 cups granulated sugar
1/4 cup Gold Medal™ all-purpose flour
1 teaspoon baking powder
1 teaspoon grated lemon peel
2 tablespoons lemon juice
2 teaspoons grated lime peel
2 tablespoons lime juice
2 teaspoons powdered sugar

Steps:

  • Heat oven to 350°F (or 325°F for dark or nonstick pan). In large bowl, beat 2 cups flour, 1/2 cup powdered sugar, 1/4 cup of the coconut and the butter with electric mixer on low speed, or mix with spoon, until crumbly. Press in ungreased 13x9-inch pan. Bake 20 to 25 minutes or until light golden brown.
  • Meanwhile, in large bowl, beat remaining 1/4 cup coconut, eggs, granulated sugar, 1/4 cup flour, the baking powder, lemon peel, lemon juice, lime peel and lime juice with electric mixer on low speed, or mix with spoon. Pour over partially baked crust.
  • Bake 20 to 25 minutes longer or until light golden brown. Run sharp knife around edges of pan to loosen bars. Cool completely, about 1 hour. Sprinkle with 2 teaspoons powdered sugar. For bars, cut into 6 rows by 6 rows.

This recipe comes from the 13 Mar 07 issue of Woman's World, & looks too good [& tastes too good, too!] not to pass along. It is billed as a 'Lighten-Up! Recipe.' Preparation time does not include time needed to cool down.

1 cup all-purpose flour
1/3 cup nonfat sour cream
3 tablespoons powdered sugar
3 tablespoons unsalted butter, room temperature
3 eggs
3 egg whites
1/2 cup orange juice
1/2 cup lemon juice
1 tablespoon lemon zest, grated
1/4 teaspoon baking powder
1 1/2 cups powdered sugar (again)

Steps:

  • Preheat oven to 325 degrees F.
  • Line 9" square baking pan with enough foil to overhang sides by 2", then coat with cooking spray.
  • At medium speed, beat flour, sour cream, 3 tablespoons powdered sugar & butter until combined.
  • Press dough onto bottom of pan, & prick with fork.
  • Bake 20 minutes or until lightly browned.
  • At low speed, beat eggs, whites, juices, zest, baking powder & 1 1/2 cups powdered sugar until combined.
  • Pour over warm crust.
  • Bake 40 minutes or until set.
  • Cool on wire rack, & if desired, sprinkle with additional powdered sugar before cutting into bars.

These tasty bars are a takeoff on my all-time favorite lemon bars. I found this recipe in the June, 1994 issue of Better Homes and Gardens.

Number Of Ingredients 11

1 cup butter, softened
3/4 cup powdered sugar
2 cups all-purpose flour
4 large eggs
1 1/2 cups granulated sugar
1/3 cup lemon juice
2 tablespoons finely fresh shredded orange zest
1/4 cup all-purpose flour
1 teaspoon baking powder
1 1/2 cups fresh raspberries (or combination) or 1 1/2 cups fresh blueberries (or combination)
powdered sugar

Steps:

  • For the crust, beat butter with an electric mixer on medium speed for 30 seconds to soften.
  • Add the 3/4 C powdered sugar.
  • Beat until combined.
  • Add the 2 cups flour; beat until combined.
  • Press mixture onto the bottom of a greased 13x9-inch baking pan.
  • Bake in a 350° oven for 20 minutes or till golden.
  • Meanwhile, for filling, in a large mixing bowl, combine eggs, granulated sugar, lemon juice, orange zest, the 1/4 C flour, and baking powder.
  • Beat for 2 minutes with an electric mixer till combined.
  • Sprinkle berries over crust.
  • Pour filling over berries, arranging berries evenly with a spoon.
  • Bake in a 350° oven for 30-35 minutes or till light brown and filling is set.
  • Cool thoroughly in the pan on a wire rack.
  • Cut into bars.
  • Just before serving, sprinkle with powdered sugar.
  • To store, cover and chill for up to 2 days.
  • Make-ahead tip: Place cut bars into a storage container or freezer bag and freeze for up to 3 months.
  • Thaw, covered, in the refrigerator for 24 hours.

No-Bake Sweetened Condensed Milk Citrus Bars image

An old recipe from my scrapbook, quick and easy. Just remember to make it the night before, to firm up, as no baking is required. Lovely for tea, and the kids will love them. Rich, yes, so slice into small neat blocks.

1 (14 ounce) can sweetened condensed milk
1/2 lb butter (not margarine)
1 cup sugar
1 lemon, zest of, grated
1 tablespoon lemon juice
1 tablespoon orange juice
2 teaspoons vanilla
14 ounces plain cookies, finely crushed (2 packets, usually, 2 x 200g in metric)
2 cups desiccated unsweetened coconut
2 1/2 cups confectioners' sugar, sifted
lemon juice

Steps:

  • Melt the condensed milk, butter, sugar, lemon rind, citrus juices and vanilla over medium heat.
  • Add the dessicated coconut and cookie crumbs.
  • Spray a square tin with nonstick spray. (Sorry, size of tin not given, but you'll be able to judge by sight).
  • Press the mixture evenly into the tray and cool.
  • Mix the confectioners sugar with just enough lemon juice to make it spreadable.
  • Spread over the cookie bar mixture.
  • Chill overnight until firm and cut into small blocks.

I happen to come across this recipe at a food.com. The recipe was posted by justmeterri, but I did modify the recipe just a bit. These citrus bars are very good. They had a nice lemony flavor to them.

CRUST:
2-1/4 cups all-purpose flour
1/2 cup confectioners' sugar
1 cup butter
TOPPING:
4 eggs beaten
2 cups granulated sugar
1/2 cup fresh lemon juice
3 tablesp. orange juice
1-1/2 tsp. lemon zest
1/4 cup all-purpose flour
1/2 tsp. baking powder
confectioners' sugar (for sprinkling on top the bars)

Steps:

  • 1. To make the crust: In a bowl combine together, the flour and confectioners' sugar. Cut in butter; mix until mixture becomes crumbly and clings together. Press crust mixture into a 13x9x2-inch baking pan. Place baking pan in a preheated 350 degree oven. Bake the crust for about 25 minutes, or until lightly browned.
  • 2. To make the topping: In another bowl beat together, the eggs, sugar, lemon juice, orange juice, and lemon zest. Stir in the 1/4 cup flour and baking powder, mixing well. Pour topping mixture over the baked crust. Place pan in the oven, and bake for an additional 25 minutes.
  • 3. When cool; sprinkle the bars with the confectioners' sugar, then cut them into bars. (I cut the bars while they were slightly warm, then sprinkled the bars with the confectioners' sugar.)

1/2 cup confectioners' sugar
1 cup butter, melted
2 cups sugar

Steps:

  • Preheat oven to 350'.
  • Lightly greased a 13x9 baking dish, set a side.
  • In a large bowl, combine 2c. flour and 1/2c. confectioner sugar.
  • Add in butter,stir til crumbly.
  • Press mixture evenly into the bottom of prepared baking dish.
  • Bake 20 minutes or until lightly browned.
  • In another bowl, stir together sugar,eggs and orange juice until well blended. Set aside.
  • In a small bowl combine flour and baking powder and add to sugar mixture.
  • Stir to combine.
  • Pour onto hot crust and bake another 25 minutes or until set.
  • Sprinkle with extra confectioner sugar if desired.
