½ gallon apple cider
1 (46 fluid ounce) can pineapple juice
46 fluid ounces cranberry juice cocktail
1 orange, thinly sliced
5 cinnamon sticks
1 tablespoon whole allspice berries
1 tablespoon whole cloves

Steps:

  • Pour apple cider, pineapple juice, and cranberry juice into a stockpot. Place orange slices, cinnamon sticks, allspice berries, and cloves in a muslin pouch or directly into the apple cider mixture. Bring apple cider mixture to a boil; reduce heat and simmer until flavors have blended, 15 to 20 minutes. Remove orange slices and spices before serving.

A semi-traditional wassail recipe made with baked apples, hard cider, wine and brandy. See notes to make non-alcoholic!

4 small apples
4 tablespoons brown sugar or demerara sugar ((55 grams))
1 medium orange
1 teaspoon whole cloves
1/2 cup water ((125 ml))
1 quart hard cider ((1 liter))
2 cups port or sweet madeira wine ((500 ml))
1 cup brandy ((250 ml))
1/2 lemon (, halved)
2 cinnamon sticks
1 teaspoon whole allspice

Steps:

  • Preheat oven to 350 degrees F.
  • Remove core of apples with a small knife or melon baller. Place in a 4-quart or larger dutch oven or other oven-proof pot. Fill the cavity of each apple with 1 tablespoon of brown or demerara sugar. Stud the orange with the whole cloves and place in the pot. Add the water.
  • Bake until apples are tender but still maintain their shape, 35-45 minutes.
  • Remove pot from the oven and place on the stove. Cut orange into quarters and return to the pot. Add hard cider, wine, brandy, lemon, cinnamon sticks, and whole allspice.
  • Barely bring to a boil over medium high heat, then reduce heat and simmer for about 20 minutes, stirring occasionally. Serve immediately or keep warm until ready to serve.

4 star anise
¼ cup light brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon ground nutmeg
8 cups apple cider
2 cups orange juice
¾ cup pineapple juice
¼ cup lemon juice

Steps:

  • Add all ingredients to a large crockpot and cook on high for at least 2 hours or low for at least 4 hours.
  • Keep on warm and serve straight from the crockpot.

4 cups apple juice
4 cups cranberry juice
4 cups orange juice
1/3 cup honey
2 teaspoons whole cloves
3 cinnamon sticks
One 2-inch knob ginger, peeled and sliced into coins
1 lemon, sliced
1 orange, sliced
1 cup fresh cranberries, for garnish

Steps:

  • Combine the juices, honey, cloves, cinnamon sticks, ginger, lemons and oranges in the slow cooker.
  • Cook on low 6 to 8 hours or on high 3 to 4 hours. The longer it cooks, the more the flavor from the spices will permeate the wassail.
  • If desired, remove the cinnamon, citrus slices, cloves and ginger with a slotted spoon before serving. Float the cranberries in the tops of the glasses for garnish and serve warm.

  • Combine juices in a nonreactive pot and stir in 1/2 cup sugar. Taste the mixture to determine if more sweetener is needed and adjust according to your taste. Heat just until steam begins to rise from the mixture.
