BAKED SEA BASS WITH CITRUS SAUCE
This fresh, citrus sauce with oranges, limes, jicama and cilantro works just as well with other fish, baked or grilled. If you don't like fish then put the sauce on some baked or grilled chicken instead. You can't go wrong with this sauce.

CITRUS CHILEAN SEA BASS W/ PINEAPPLE MANGO SALSA
Fresh, crisp, and filling! I love sea bass. 'Specially prepared this way. It's very hardy and does well grilled, sauteed, or baked/broiled. You can prepare the salsa a day or two in advance. Again, gotta love that chopping therapy! :) If you don't like mango or pineapple, you can sub w/ any fruit such as peach or mandarin oranges. YUM!

- Peel and segment all your citrus fruit over a bowl to collect any escaping juice. Set the segments aside to add to your sauce later.
- Squeeze the centers of the citrus fruits over the same bowl extracting as much juice as possible.
- Pour the juice through a sieve to remove any pips. This should leave you with about a pint of zesty citrus flavoured liquid with which to make your sauce.
- To make the sauce pour the juice into a pan and reduce by about a third. Add the basil to the warm juice and set aside to infuse. Keeping a few of the basil leaves aside for garnish later.
