CUBAN MOJO MARINATED PORK

A traditional Cuban roasted pork recipe that is very simple, yet packed with tons of flavor! There is nothing to this pork except an amazing marinade, but it is honestly some of the best meat I've ever put in my mouth. Just look at that crust!

3/4 cup extra-virgin olive oil
1 tablespoon orange zest
3/4 cup fresh orange juice
1/2 cup fresh lime juice
1 cup cilantro (finely chopped)
1/4 cup lightly packed mint leaves (finely chopped)
8 garlic cloves (minced)
1 tablespoon minced oregano (2 teaspoons dried oregano)
2 teaspoons ground cumin
Kosher salt and pepper
3 & 1/2 pounds boneless pork shoulder (in one piece*)

Steps:

  • If you have a food processor: Add the orange juice, cilantro leaves, mint leaves, and smashed (not minced) garlic cloves, and pulse until everything is finely chopped. Add this mixture to a ziplock bag, along with the rest of the oil, zest, lime juice, oregano, and cumin.
  • If you don't have a food processor: In a large ziplock bag, combine olive oil, orange zest, orange juice, lime juice, chopped cilantro, chopped mint, minced garlic, oregano, and cumin. Shake it around a bit to mix it up, then add the pork shoulder.
  • Place the zipped up bag in a baking dish, and put it in the fridge overnight, or several hours at least.
  • Preheat oven to 425 degrees F. Place a wire rack (I used a cooling rack) over a rimmed baking sheet.
  • Place the pork on the rack and discard the marinade. Salt and pepper the pork well.
  • Roast the pork for 30 minutes. It should be lightly browned.
  • Turn the oven down to 375 degrees F. Roast for another 1 hour and 20-30 minutes, or until a meat thermometer reads 160.
  • Transfer to a cutting board, cover with aluminum foil and let rest at least 20 minutes.
  • Carve against the grain and serve.

A homemade Cuban mojo marinade (mojo criollo) made with sour oranges, lots of garlic, spices, and olive oil. This marinade will give chicken, meat, shrimp, and pork the most delicious citrusy-garlicky flavor ever!

1 head garlic (approx. 10 large cloves)
2 teaspoons kosher salt
1/4 cup minced white onion
1 teaspoon black pepper
1 teaspoon dried oregano
1 teaspoon ground cumin
2 cups sour orange juice* ((naranja agria))
1/3 cup extra virgin olive oil

Steps:

  • In a mortar and pestle, add the garlic cloves and salt. Mash both until you get a smooth paste.
  • In a large mason jar, add the garlic paste, minced onion, black pepper, oregano, cumin, sour orange juice, and olive oil. Close the jar tightly with the lid and shake it until well combined. Be sure to shake well before every use.
  • Feel free to taste and adjust seasoning. If you're not a fan of garlic, you can add less (maybe 5 or 6 cloves). This marinade should taste garlicky, fresh, tangy, citrusy, bright, and slightly sour. Never sweet nor spicy.
  • This recipe makes approximately 2 cups of mojo marinade which will last approximately up to 3 weeks in an airtight container/mason jar. You can also freeze it in an airtight container for up to 3 months. Enjoy!

1 (5 to 6 pound) roasting chicken
Salt and ground black pepper to taste
Zest of 1 orange
Zest of 1 lime
1/2 cup orange juice, freshly squeezed
1/4 cup lime juice, freshly squeezed
4 tablespoons butter, melted OR 1/4 cup olive oil
8 cloves garlic, chopped finely
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup chopped cilantro (lightly packed)
Orange and lime slices for garnish (optional)

Steps:

  • Remove the chicken giblets. They can be discarded or saved for other preparations like stocks or gravies. Rinse the chicken inside and out and remove any excess fat. Pat dry with paper towels and season lightly with salt and pepper (the marinade has salt and pepper as well but a whole chicken needs quite a bit of seasoning).
  • In a small bowl, mix all the Cuban Mojo marinade ingredients. Place the chicken in a large bowl and pour the marinade over the chicken. Cover with plastic wrap and marinate for 4 hours or overnight.
  • Preheat the oven to 425 degrees Fahrenheit. Arrange a rack in the lower third part of the oven.
  • Remove the chicken from the marinade and place in a large roasting pan. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken.
  • Bake the chicken for 1 hour. If the breast is getting too golden, tent a piece of aluminum foil over the breast. Bake for an additional 15 minutes or until the internal temperature reaches 165 degrees in the thickest part of the thigh.
  • Remove from the oven and tent with aluminum foil. Let the chicken rest for 10 minutes before carving. Garnish with lemon and lime slices (optional)

2 naval oranges, zested and juiced
2 limes, zested and juiced
5 cloves garlic
½ cup loosely packed cilantro leaves
½ cup extra-virgin olive oil
kosher salt and pepper to taste
2 (1 1/2 inches thick) boneless pork chops
1 cup shredded Swiss cheese
2 (3 ounce) ham steaks (1/4 inch thick)
2 dill pickle slices

Steps:

  • Place the orange juice, orange zest, lime juice, lime zest, garlic, cilantro, and olive oil in to a blender. Season to taste with kosher salt and pepper, then puree until smooth. Pour half of the vinaigrette into a resealable plastic bag. Refrigerate the remaining for use later as a sauce.
  • Cut each pork chop from one side through the middle horizontally to within one-half inch of the other side. Open the two sides and spread them out like an open book. Pound with a meat mallet to 1/4 inch thick, then place the pork chops into the bag with the marinade. Squeeze out any excess air, and refrigerate 4 to 6 hours.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate. Remove the pork chops from the marinade, and shake off excess. Discard the remaining marinade.
  • Open the pork chops onto your work surface. Sprinkle 1/4 cup of the Swiss cheese on the bottom half of each pork chop. Cover the cheese with the ham steaks, then fan the sliced pickles on top of the ham steaks. Sprinkle the remaining Swiss cheese over the pickles. Fold the top half of the pork chop over the filling, and secure with several toothpicks.
  • Cook on the preheated grill until the pork is no longer pink in the center and the filling is hot, about 5 minutes per side. An instant-read thermometer inserted into the center of the filling should read 145 degrees F (63 degrees C). Serve with the reserved citrus vinaigrette drizzled overtop.

1 cup orange juice

2 limes, juiced
2 blood oranges, juiced
6 large garlic cloves, chopped
2 tablespoons salt
1 tablespoon freshly ground black pepper
1 tablespoon dried oregano
1 tablespoon ground cumin
3/4 cup annatto oil reserved from Arroz Con Pollo Bites recipe
1 (15 to 20-pound) suckling pig
Special Equipment: 1 Caja China roasting box
1 (9 to 10-pound) picnic pork shoulder
1 batch citrus mojo marinade less 1 tablespoon salt

Steps:

  • Citrus Mojo:
  • Combine all of the mojo ingredients in a large bowl and whisk well.
  • Score the skin with a sharp knife and rub the pig inside and out with 3/4 of the mojo marinade. Reserve the remaining mojo to pour over the meat after it has been carved.
  • Cook the whole pig in the Caja China according to manufacturer's instructions.
  • Preheat the oven to 325 degrees F.
  • Score the skin of the pork shoulder. Put it into a large bowl or baking dish and pour in 3/4 of the marinade, making sure to coat the entire piece of pork. Cover and refrigerate for at least 30 minutes or up to 2 hours.
  • Put the pork shoulder, skin side up, in a roasting pan fitted with a rack, Cover with foil and roast in the oven for 3 hours. After 3 hours remove the foil, turn the heat up to 425 degrees F and roast until the skin is brown and crispy, about 30 to 45 minutes. Make sure to check every 5 or 10 minutes to make sure the skin does not burn. Remove from oven to a cutting board and let rest for 10 minutes before carving. Carve the meat and arrange it on a serving platter. Pour the reserved marinade over the carved meat just before serving.
