Nice summertime salad! Since most of the fruit is already bite-size, there is very little work involved. Just 2-3 hours of chilling time, not included in prep or cooking time.

1 cup fresh cantaloupe, scooped into small balls
1 cup fresh blueberries
1 cup fresh strawberries, halved
1 cup seedless green grape, halved
3/4 cup orange juice
1/4 cup chablis (may substitute white grape juice, but it will be sweeter)
2 tablespoons lemon juice
1 tablespoon sugar
fresh mint sprig

Steps:

  • Place the fruit in a large bowl, toss gently to combine. Set fruit mixture aside.
  • Combine the orange juice, wine, lemon juice, and sugar. Stir well.
  • Pour orange juice mixture over the fruit mixture; toss gently. Cover and chill for 2 to 3 hours, stirring occasionally. Garnish, if desired.

1 pound beef Top Sirloin Steak Boneless, cut 1 inch thick
1 medium orange
¼ cup chopped fresh cilantro
1 tablespoon smoked paprika
¼ teaspoon ground red pepper (optional)
4 cups cubed mango, watermelon, peaches and/or plums
Salt

Steps:

  • 1.Grate peel and squeeze 2 tablespoons juice from orange; reserve juice. Combine orange peel, cilantro, paprika, and ground red pepper, if desired, in small bowl. Cut beef Steak into 1-¼ inch pieces. Place beef and 2-½ tablespoons cilantro mixture in food-safe plastic bag; turn to coat. Place remaining cilantro mixture and fruit in separate food-safe plastic bag; turn to coat. Close bags securely. Marinate beef and fruit in refrigerator 15 minutes to 2 hours.
  • 2.Soak eight 9-inch bamboo skewers in water 10 minutes; drain. Thread beef evenly onto four skewers leaving small space between pieces. Thread fruit onto remaining four separate skewers.
  • 3.Place kabobs on grid over medium, ash-covered coals. Grill beef kabobs, covered, 8 to 10 minutes (over medium heat on preheated gas grill, 9 to 11 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally. Grill fruit kabobs 5 to 7 minutes or until softened and beginning to brown, turning once.
  • 4.Season beef with salt, as desired. Drizzle reserved orange juice over fruit kabobs.

1/4 cup extra-virgin olive oil
1/4 teaspoon crushed red pepper flakes
2 sprigs fresh thyme
1 clove garlic, thinly sliced
1 strip lemon zest, removed with a vegetable peeler plus 1 teaspoon lemon juice
1 strip orange zest, removed with a vegetable peeler plus 1 tablespoon orange juice
Kosher salt and freshly ground black pepper
1 cup Castelvetrano olives

Steps:

  • Heat the olive oil in a small saucepan over medium heat. Add the red pepper flakes thyme, garlic, lemon zest, orange zest, salt and pepper to taste and cook, stirring occasionally, until the garlic is pale golden, about 2 minutes. Stir in the olives and cook, stirring, until just warm, about 2 minutes. Turn off the heat. Stir in the lemon juice and orange juice and transfer to a decorative jar or serving bowl. Serve warm or at room temperature.
