MANGO SLAW
There is absolutely nothing new about coleslaw, but there is something slightly intriguing about coleslaw with mangos. Often, when we think of coleslaw, we think of it as a side for fish and chips, barbecue, or heavy, mayonnaise-drenched cabbage. But just think about the cool, crunchy sweetness of the cabbage, carrots and mango, paired with the spicy kick of jerk chicken. What's a better combination? You also don't have to serve it as a side: It can be tucked into a sandwich or wrap. One of the best things about this recipe is that all the ingredients are readily available, and there are many shortcuts you can take, like using a bagged mix. Who wants to ruin their knuckles on a box grater, or break out the food processor?

- In a large bowl, combine all ingredients. Toss with tongs or a fork to combine.
- Refrigerate for at least 1 hour. Serve cold.
SHRIMP TACOS WITH MANGO CITRUS SLAW

- Put the lemon juice, orange juice, honey, mustard, basil and some salt and pepper in a blender and blend until smooth. With the motor running, drizzle in the canola oil until emulsified. Toss on coleslaw with chopped mango and avocado. You do not need all dressing, just to your liking.
- Brush the top of the shrimp with canola oil, and sprinkle them with salt, pepper and about 3 tablespoons of the spice rub. Let stand for 5 minutes, then grill the shrimp, spice-side down, over direct heat until the fish is lightly charred and comes away from the grill easily, about 2 minutes. Flip and cook another 2 minutes to sear on the reverse side. Move the shrimp over indirect heat, cover the grill, and cook until the fish is just cooked through, another 3 to 4 minutes; the shrimp should be just firm when squeezed lightly on the sides. Remove the shrimp to a platter and let rest for a few minutes.
- Grill the flour tortillas on the until toasted.
- Assemble the tacos. Shrimp and then cabbage mango slaw on top. Use whatever kind of sauce you like on top.
- Serving size: 1 taco

CITRUS MANGO SLAW

- In a large bowl, combine slaw ingredients*. Toss, cover and refrigerate until ready to dress. In a pint-sized jar with a lid*, combine juice from HALF of each: orange, lemon & lime. - Add the olive oil, lime juice, orange juice, garlic, green onions, paprika, cumin, salt and pepper to a blender. Blend until chunky smooth. Place the fish in a 9x13 inch baking dish, pour the marinade over the fish. Allow the fish to sit in the marinade while you prepare the rest of the meal, at least 15 minutes. Do not let the fish sit longer than four hours in the marinade.
- To make the slaw/salsa, cut off the peel and the white pith from all around the grapefruit. Working over a small bowl, use the knife to cut between the membranes to release the grapefruit segments into the bowl. Squeeze the juice from the membranes into the bowl. Remove the grapefruit segments from the bowl and cut into bite size pieces; return to the bowl. Now do the same with the cara cara orange (or blood orange), but only remove the inside membrane if desired. Add the mango, jalapeno, green onions, cilantro and lime juice. Taste and season with salt.
- To make the crema, mix together the cream cheese, crema Mexicana (or mayo), chipotle chilies, lime juice, buttermilk and a pinch of salt and pepper in a medium bowl. Cover and place in the fridge until ready to use.
- When ready to cook the fish, heat a grill pan or cast iron skillet over medium high heat (may also use an outdoor grill). Once hot, add the fish, skin side down, and sear for 3-4 minutes, brushing the fish with the marinade as it cooks. Flip and cook until your desired doneness. Remove the skin.
