I was looking for something simple and different with a citrus touch and stumbled onto this quick BBQ sauce, especially for chicken. I use this all summer. It's good on beef, too, but best on chicken.

2 navel oranges (cut in half) 1 cup apple juice 1 cup water 1 cup apple cider vinegar 1 cup white onion
diced 2 tbsp chopped fresh garlic 2 large limes 2 lemons 1/2 fresh jalapeño pepper
split and seeded 2 cups low-sugar ketchup 1/2 cup yellow mustard 1 oz Worcestershire sauce 1 oz soy sauce 1/3 cup puréed dates 1 tsp chili powder 1/4 tsp ground cinnamon 3/4 tsp cumin 1/4 tsp cayenne pepper 1/2 tsp crushed red pepper 1 tsp kosher salt 1 tsp liquid smoke (if desired)

Steps:

  • In a 2-3 quart saucepan add navel oranges, apple juice, water, apple cider vinegar, white onion, fresh garlic, limes, and jalapeno. Squeeze juice from oranges and lemons and put in everything including the shells.Bring to a boil and reduce by half to bring out the natural sweetness. Lime shells can be removed about half way through reduction.Once reduced, lower flame and add the ketchup, mustard, Worcestershire, soy sauce, dates, chili powder, cinnamon, cumin, cayenne pepper, crushed red pepper, salt, and liquid smoke.Stir over low heat for about 10 additional minutes.Strain and serve.

1 cup rice, regular or instant, cooked according to package directions
Cooking spray
2 pounds large or jumbo shrimp, peeled and deveined
Salt and freshly ground black pepper
2 tablespoons freshly chopped cilantro leaves
1 cup orange juice
2 tablespoons fresh lime juice
2 teaspoons minced fresh ginger
2 teaspoons cornstarch
1/2 teaspoon garlic powder

Steps:

  • Coat a stove-top grill pan or griddle with cooking spray and set over medium-high heat to preheat. Season both sides of shrimp with salt and black pepper. Place shrimp on hot pan and cook 2 to 3 minutes per side, until bright pink and cooked through. Sprinkle shrimp with cilantro.
  • Meanwhile, in a small saucepan, whisk together orange juice, lime juice, ginger, cornstarch, and garlic. Set pan over medium heat and bring to a simmer. Simmer 2 minutes, until mixture thickens. Season, to taste, with salt and black pepper. Transfer sauce to a serving bowl. Serve 2/3 of the shrimp with the rice and dipping sauce on the side. Reserve remaining shrimp for wraps, if desired.

The bright, tangy flavors of orange and lemon come together with this easy bbq sauce base to pull triple-duty as marinade, glaze, and sauce.

4 skin-on chicken leg quarters, cut into 8 pieces
1 1/3 cups ketchup
2 tablespoons light brown sugar
Juice and zest of 1 orange
Juice and zest of 1 lemon
3 cloves garlic, grated
1 tablespoon Dijon mustard
2 tablespoons Worcestershire sauce
2 teaspoons ground cumin
1 1/2 teaspoons smoked paprika
Kosher salt and freshly ground black pepper

Steps:

  • Put the chicken in a large resealable plastic bag.
  • Whisk the ketchup, brown sugar, orange zest and juice, lemon zest and juice, garlic, Dijon, Worcestershire sauce, cumin, smoked paprika, 1 teaspoon salt, and a few grinds of black pepper together in a 4-cup liquid measuring cup (or alternatively a medium bowl) until combined.
  • Remove 1 cup of the sauce and add the remaining sauce to the resealable plastic bag with the chicken. Seal and toss the bag to evenly coat the chicken. Marinate the chicken in the refrigerator for 1 hour and up to overnight.
  • Meanwhile, add the remaining sauce to a small saucepan. Bring the sauce to a boil over medium-high heat. Reduce the heat to low and simmer until the sauce thickens, about 10 minutes. Reserve reduced sauce for glazing and serving.
  • Prepare a grill for medium-high heat.
  • Remove the chicken from the marinade and allow any excess marinade to drip off. Arrange the chicken skin-side down on the grill, leaving some space between each. Cook until deep grill marks form and releases easily from the grill, about 4 minutes. Flip the chicken skin-side up. Cover the grill and cook until an instant-read thermometer inserted into the thickest part of each thigh reads 165 degrees F, 20 to 25 minutes more.
  • Brush the skin side of the chicken with some of the reduced sauce. Flip the chicken pieces and brush the other side of the chicken with the sauce and continue to cook, sauce-side down, for an additional minute. Flip and grill for 1 minute more. Transfer the chicken to a platter and let rest for 5 minutes.
  • Serve the chicken with the remainder of the sauce.

2 heads garlic, unpeeled, top 1/3 inch cut off
3 tablespoons extra-virgin olive oil
5 strips (each 2 1/2 inches long) lemon zest, plus 1 tablespoon fresh lemon juice
1 tablespoon fresh thyme
1 teaspoon coarse salt
1/4 teaspoon freshly ground pepper
3 cups Five-Ingredient Barbecue Sauce

Steps:

  • Preheat oven to 325 degrees. Top garlic with oil, zest, thyme, salt, and pepper, and wrap in parchment-lined foil. Bake until garlic is golden and soft, 1 1/2 hours. Unwrap, and let cool for 10 minutes. Squeeze garlic from peels, and puree with zest, thyme, and lemon juice in a food processor.
  • Combine garlic mixture and barbecue sauce in a medium saucepan over medium heat. Gently simmer for 5 minutes. Let cool, and refrigerate.

1/2 cup olive oil
8 large cloves garlic, thinly sliced crosswise
2/3 cup fresh sour orange juice (or 1/2 cup fresh lime juice and 3 tablespoons fresh grapefruit juice)
1/3 cup water
1 teaspoon ground cumin
1/2 teaspoon ground oregano
1 1/2 teaspoons salt, or to taste
1/2 teaspoon freshly ground black pepper
3 tablespoons chopped fresh cilantro or flat-leaf parsley

Steps:

  • Heat olive oil in deep saucepan over medium heat. Add garlic, and cook until fragrant and pale golden brown. Do not let brown too much, or else garlic will become bitter.
  • Stir in sour orange juice (or lime juice and grapefruit juice), water, cumin, oregano, salt and pepper. Stand back, because the sauce may spatter. Bring to rolling boil. Correct the seasoning, adding more salt and pepper, if needed. Let cool to room temperature, and then stir in cilantro or parsley. Store in bottle or jar with tight-fitting lid; shake well before serving. Serve with grilled pork, chicken, seafood and vegetables.

½ cup vegetable oil
¼ cup lemon juice
1 teaspoon minced onion
1 teaspoon salt

Steps:

  • Preheat grill for high heat.
  • In a blender or food processor, blend the oil, lemon juice, onion, salt, thyme, marjoram, and garlic until thick and smooth.
  • Coat the grill grate with aluminum foil. Poke holes in the foil and spray with cooking spray. Arrange chicken on grate, and cook 15 minutes, turning once and brushing constantly with the sauce, until juices run clear.
