BALSAMIC-GLAZED SALMON

3/4 cup balsamic vinegar
2 tablespoons maple syrup
1 tablespoon Dijon mustard
1 clove garlic, peeled and smashed or chopped
Four 6-ounce center-cut salmon fillets, skinned
2 tablespoons olive oil
Kosher salt and freshly ground pepper
2 tablespoons olive oil
1 large or 2 small shallots, thinly sliced

2 cloves garlic, peeled and smashed or chopped
2 1/2 cups frozen shelled edamame (12 ounces), thawed
2 cups sugar snap peas (6 ounces), halved

Steps:

  • For the glaze: In a small saucepan, bring the vinegar, maple syrup, mustard and garlic to a boil over medium heat. Reduce the heat to a simmer and cook until thick, about 12 minutes. Set aside to cool for 5 minutes.
  • For the salmon: Position a rack in the center of the oven and preheat the oven to 400 degrees F. Line a small baking sheet with parchment paper. Arrange the salmon on the baking sheet. Drizzle both sides of the salmon with the olive oil and season with 1 teaspoon salt and 1/2 teaspoon pepper. Roast until the salmon is cooked through and flakes easily with a fork, 8 to 10 minutes. Set aside to cool for 10 minutes.
  • For the vegetables: In a medium skillet, heat the olive oil over medium-high heat. Add the shallots, 1 teaspoon salt and 1/4 teaspoon pepper, and cook until the shallots are softened, about 3 minutes. Add the garlic and cook until aromatic, about 30 seconds. Add the edamame and snap peas and cook until warmed through, about 3 minutes. Season with salt and pepper.
  • Divide the vegetable mixture among 4 serving plates. Top with a piece of salmon and drizzle with the glaze.

1 1/2 tablespoons cornstarch
1 tablespoon orange juice
1 tablespoon brown sugar
1 (14 ounce) can seasoned chicken broth

Steps:

  • Preheat oven to 350 degrees F.
  • Rub salmon with salt and pepper.
  • Place salmon in 2-quart shallow baking dish; drizzle with olive oil.
  • Bake for 15 minutes or until fish flakes easily with fork.
  • Whisk balsamic vinegar, cornstarch, orange juice and brown sugar in medium saucepan.
  • Add chicken broth and heat to a boil.
  • Reduce heat to a simmer, stirring until the mixture thickens.
  • Arrange salmon on serving platter and serve with sauce.
  • Serve over hot white rice, if desired.

2 tablespoons balsamic vinegar
1 tablespoon olive oil
1 small clove garlic (peeled and forced through a press)
2 teaspoons finely chopped parsley
2 teaspoons finely chopped basil
2 teaspoons finely chopped mint
1 teaspoon grainy or Dijon mustard
1 teaspoon finely minced shallot
1/8 teaspoon salt
Freshly ground black pepper to taste
1 1/4 pounds salmon fillet

Steps:

  • Gather the ingredients. Preheat oven to 450 F.
  • In a pint jar with a lid, add the orange juice, balsamic vinegar, olive oil, garlic, parsley, basil, mint, mustard, shallot, salt, and pepper. Screw on the lid and shake well to blend.
  • Place the salmon in a foil-lined pan and spoon a little of the vinaigrette over the fish. Bake for 8 to 12 minutes per inch of thickness (measured at the thickest part), or until cooked through.

1/2 cup balsamic vinegar
2 tablespoons extra virgin olive oil

2 tablespoons honey
1 teaspoon balsamic vinegar
2 teaspoons soy sauce
1 tablespoon orange juice or 1 tablespoon lemon juice
1 tablespoon orange zest or 1 tablespoon lemon zest
1 inch gingerroot (either peeled and minced or grated with microplane grater)
2 teaspoons oil
salt and pepper

I love salmon! Can't wait to try this! (I just found this recipe among a million others that I had cut out of magazines a long time ago!) It says that the glaze can be stored covered in the refrigerator for up to 3 weeks. All you have to do is warm slightly before using, and can be served with many kinds of grilled or seared fish or meat. I went ahead and doubled the glaze part of the recipe because I like plenty of sauce on my salmon!

6 salmon fillets or 6 salmon steaks, 5 to 6 ounces each
olive oil

fresh ground black pepper
1 cup balsamic vinegar
1 cup dry white wine
4 tablespoons fresh lemon juice
