This is another fudge recipe I make during the Holidays. I make small packages of this fudge and give for Christmas gifts....because, it is one of my most requested gifts from my family for themselves every year. It does make great gifts. Steps:
- 1. Prepare pan: Line with aluminum foil for easy removal of fudge (I use a glass 8x9x2 pan).
- 2. Combine sugar, milk, butter and salt in a medium size heavy-duty saucepan (cast iron is good). Bring to a full rolling boil over medium heat, stirring constantly for 4 to 5 minutes.
- 3. Remove from heat, stir in marshmallows, morsels, nuts and vanilla. Stir vigorously for 1-minute or until marshmallows are melted (well, mostly I don't totally melt them, I like to see the white swirled throughout fudge).
- 4. Pour into prepared the prepared 8x9x2" square glass baking pan, refrigerate for 2-hours or until firm.
- 5. When set and firm lift fudge from pan, remove foil, cut into squares. Store in air-tight container.
MARSHMALLOW FUDGE
Mini marshmallows are melted into this dark chocolate fudge, giving it the smoothest, creamiest texture.

- Lightly brush an 8-inch baking pan with butter, then line with parchment, leaving 2-inch overhang on two sides. Lightly butter parchment.
- In a medium saucepan, combine remaining 2 tablespoons butter, sugar, evaporated milk, and salt. Bring to a boil over medium-high heat, stirring constantly, then cook for 3 minutes more, until pale golden and thickened slightly. Remove from heat and stir in marshmallows until mostly melted, then add chocolate and vanilla. Stir until chocolate and marshmallows have melted completely and mixture is smooth. Pour into prepared pan; smooth top with a spatula.
- Refrigerate until firm, at least 2 hours. Remove parchment with fudge from pan and cut into 36 squares. Fudge can be stored refrigerated, covered with plastic, up to 1 week.

Steps:
- Line 8-inch square pan with foil, leaving foil overhanging at 2 opposite sides of pan; spray foil with cooking spray.
- In large microwavable bowl, microwave white chips uncovered on High 1 minute. Spoon frosting over chips. Microwave on High 30 seconds; stir. If necessary, continue to microwave in 15-second increments until mixture can be stirred smooth.
- Place 3/4 cup fudge mixture into each of 2 small bowls, leaving remaining untinted fudge mixture in bowl. Tint 1 bowl green and 1 bowl red by stirring in each food color to desired color.
- Drop heaping tablespoons of green, red and white fudge mixture in bottom of pan to create random pattern. Pull table knife through layers for marbled design. Refrigerate uncovered until set, about 1 hour.
- Remove from pan by lifting foil; peel foil away. Cut into 8 rows by 8 rows. Store covered in refrigerator.

Steps:
- Line a 9 inch square pan with foil and grease lightly.
- Melt chips with milk, 2 Tablespoons butter, vanila and salt.
- Remove from heat; stir in nuts.
- Spread evenly into foil-lined 8- or 9-inch square pan.
- Melt marshmallows with remaining 2 Tablespoons butter.
- Spread on top of fudge.
- With a knife, swirl through top of fudge.
- Chill at least 2 hours or until firm.
- Turn fudge onto cutting board; peel off foil and cut into squares.
- Store loosely covered at room temperature.

- 39. My friend Judy has been at it again... Cin, looky what I made today..."Hamburger Cookies". All you do is buy some mini vanilla wafers, and either buy or make vanilla icing. Color one half of the icing with yellow food coloring for the "mustard" (or if you prefer, call it cheese) and color the other half of the vanilla frosting with red food coloring for the "ketchup". Spread one vanilla wafer with the "mustard", place an Andes chocolate mint on top, then coat another vanilla wafer with the "Ketchup" and place on top of the chocolate mint. Spread a dab of white Karo syrup on top and shake a bit of sesame seed on. That's it, easy as can be and they are so cute. I think the little kids are going to love them. Love ya, Judy
- 40. Hey Cin, then this afternoon I made these; "Pretzel Bites". For the pretzel bites, place small pretzel circles on parchment paper, top with a Hershey's Kiss and place in a 275 degree oven for 3-to-5 minutes. Remove from the oven and immediately place an M&M or walnut half or pecan half on top. Refrigerate for 10 minutes to set, then store in an airtight container (I used walnuts and M&M's). Love ya, Judy

- Line an 8" pan with parchment paper and coat evenly with cooking spray, then set aside.
- In a medium saucepan over medium heat, combine marshmallows, sugar, heavy cream, butter, and salt. Cook, stirring often, until butter and marshmallows are almost melted, 5 to 6 minutes. Bring mixture to a boil and cook, stirring occasionally, for 5 minutes. Remove from heat.

Honest, this is the best chocolate fudge. Very, very creamy and just the right amount of chocolate taste. My stepmom used to make this fudge all the time(especially at Christmas). I also give this out for a gift at Christmas. Everyone loves it and wants the recipe. Enjoy.

- Grease a 9 x 13 inch pan.
- In a medium saucepan over medium heat, combine sugar, cream and butter. Heat to soft ball stage, 234 degrees F (112 degrees C). Remove from heat and stir in marshmallow creme and white chocolate chips; mix well until the chips melt. Reserve 1 cup of mixture and set aside.
- To the remaining mixture add orange flavoring, yellow and red food coloring. Stir well and pour into prepared pan. Pour reserved cream mixture on top. Using a knife, swirl layers for decorative effect.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- In a large bowl, stir together the white sugar and cocoa. Mix in the melted butter until well blended. Beat in the eggs one at a time, then stir in 2 teaspoons vanilla. Combine the flour, baking powder and salt; stir into the chocolate mixture. Fold in walnuts. Spread evenly into the prepared pan.
- Bake for 30 minutes in the preheated oven, until the cake starts to pull away from the sides of the pan. Remove from the oven and cover with an even layer of miniature marshmallows. Return to the oven for about 2 to 3 minutes longer. Remove from the oven and allow to cool in the pan.
- In a small saucepan over medium heat, combine brown sugar, water and unsweetened chocolate. Bring to a boil and boil for 3 minutes. Stir in 1 tablespoon butter and 1 teaspoon vanilla until well blended. Mix in the confectioners' sugar until smooth. Spread over the marshmallow layer. Allow frosting to set before cutting into bars.
