CINNAMON APPLE FRITTERS (FRIED APPLE DOUGHNUTS)

- In a large bowl (or the bowl to a stand mixer), cream the sugar, eggs and vanilla for 1-2 minutes with the paddle attachment. Add flour, baking powder, cinnamon, pie spice, salt and milk. Mix well, scraping bowl as needed. In a separate bowl, chop and toss peeled apples with lemon juice. Stir apples into batter. In large, deep, cast iron skillet or deep frying pan, heat vegetable oil to 375º (use a deep-fry thermometer or an electric skillet with a temperature control). Make sure that the oil is hot enough to fry the fritters correctly. Once the oil is at 375º, scoop out large spoonfuls of the batter, and carefully and gently slide the fritter batter into the hot oil. *I use two large serving spoons for this. When they get to a deep golden brown color, carefully turn the fritters over to brown the other side and continue cooking. (This should take approx. 2-3 minutes per each side). When the fritters become brown on both sides (you might have to flip them over again to make sure both sides are nicely browned), you'll know that they'll be fully-cooked throughout. Using a wire mesh strainer or slotted spoon, remove the fritters, one at a time, to a paper-towel lined (several thicknesses) rack to drain, then transfer to another cooling rack to fully cool. (*If wanting to use the cinnamon-sugar coating, sprinkle or roll fritters in the mixture while the fritters are still hot.) Choose one of the three toppings, or make a variety. For Glaze: Whisk together powdered sugar, vanilla and water in a small bowl until you have a thin, "paintable" glaze. Using a pastry brush, brush glaze over the entire bottoms of the fritters. Let glaze harden slightly, turn over, and "paint" the glaze on the tops and sides. Place glazed fritters back onto wire cooling rack; let glaze fully harden, serve. For Cinnamon Powdered Sugar: Whisk together the powdered sugar and cinnamon until well mixed. Place into a fine mesh strainer, and tap to sprinkle over bottoms, turn over, then tops. For Cinnamon Sugar: Stir together sugar and cinnamon in small bowl until well mixed. Sprinkle over the bottoms and tops using a small spoon and tapping the side, or roll them into the mixture. Do this while the fritters are still hot..

- Mix sugar and cinnamon in shallow bowl. Set aside. Combine 3/4 cup water, butter and salt in heavy medium saucepan. Stir over medium heat until butter melts. Increase heat and bring to boil. Add flour all at once and stir with wooden spoon to blend. Stir over medium heat until dough forms a ball in center of pan, about 1 minute. Transfer dough to bowl. Using electric mixer, beat dough until slightly cool, about 15 seconds. Add eggs 1 at a time, beating until blended after each addition.
- Heat vegetable oil in heavy large deep saucepan to 370°F. Working in batches, carefully drop mounded 1/2 teaspoonfuls of dough into hot oil and cook until golden brown, about 5 minutes per batch. Using slotted spoon, transfer fritters to paper towels and drain 20 seconds. Immediately roll fritters in cinnamon sugar. Serve fritters hot; or cool up to 3 hours and serve fritters at room temperature.
CINNAMON FRITTERS
From a Swedish cookbook left to me by my dear Swedish neighbor. These are awesome, I never thought to just make fritters with nothing but cinnamon! I have yet to make them but when Millie made them I was always sure to get some.

Steps:
- Melt butter.
- Knead in flour and 2 tsp cinnamon until dough is firm, may need more or less flour than 1 cup.
- Add the water gradually and knead again.
- Stir in the eggs one at a time and knead until dough becomes elastic.
- Heat oil to 350 degrees in deep pan.
- Drop pieces of dough into hot oil.
- Let fritters cook until golden brown.
- Drain.
- Mix sugar and 2 tsp cinnamon.
- Roll warm fritters in cinnamon sugar.
- Serve immediately with raspberry or strawberry jam.

APPLE CINNAMON FRITTERS
How easy are these apple cinnamon fritters? Impossibly! Thanks to your trusty box of Bisquick, these crispy treats are ready in just 25 minutes. Chopped Granny Smiths are a great apple to use since they'll add a pop of tartness to the sweet fritter dough. Just before serving, dust fritters with powdered sugar for a final touch.

- In large bowl, stir Bisquick mix, water, egg, granulated sugar and cinnamon. Fold in apple. Working in batches, drop batter by tablespoonfuls into hot oil. Cook 2 to 3 minutes, turning occasionally, or until golden brown. Use a metal slotted spoon to remove fritters from oil; drain on paper towels.
- Before serving, sprinkle fritters with powdered sugar.
