FRUIT SALSA WITH CINNAMON PITA CHIPS

Fruit Salsa With Cinnamon Pita Chips image

Easy and delicious! Try chopping the strawberries with an egg chopper by putting the strawberry in one way, cut then turn the other way and cut. It's a real time saver! This is my lower-sugar verson of this very popular recipe. Take it to a potluck or a BBQ and it will be an instant hit! Make sure you take copies of the recipe to share.

Time 50m

Yield 10 serving(s)

Number Of Ingredients 9

2 kiwi fruits (peeled and diced)
2 golden delicious apples (peeled, cored and diced)
8 ounces raspberries (each cut into quarters)
1 lb strawberry, chopped
3 tablespoons sugar-free preserves, any fruit flavor
1 cup sugar (Splenda? I use sugar)
2 teaspoons cinnamon
8 pita pocket bread (you can also use 10 inch flour tortillas cut into wedges or a combination of both!)
butter-flavored cooking spray

Steps:

  • In a large bowl, thoroughly mix the fruit and fruit preserves.
  • Cover and chill in the refrigerator at least 15 minutes.
  • Preheat oven to 350 degrees F.
  • Mix the sugar and cinnamon in a bowl large enough that you can dredge the pita chips.
  • For thinner pita chips split each pita round in half so that you have two pita circles.
  • Spray each side of the chip with butter flavored cooking spray (I Can't Believe it's not Butter in the butter section of the grocery store is zero calories).
  • Stack 4 pitas at a time and cut them into chip size with the pizza cutter or a sharp knife.
  • Put chips in the bowl a few at a time and dredge them in the cinnamon sugar.
  • Place chip on baking dish.
  • Bake in the preheated oven 8 to 10 minutes.
  • Allow to cool and serve with fruit salad.

These are so easy to make and addictive to eat! They are a hit with all my friends, some of whom just eat them without any dip. They are great on their own or with dessert hummus. Try them with my recipe for Pumpkin Pie Dessert Hummus; you won't be disappointed.

SPICY FRUIT SALSA WITH CINNAMON SUGAR PITA CHIPS

Spicy Fruit Salsa With Cinnamon Sugar Pita Chips image

This is for the contest and I am using ingredients that I would have never thought of using in a salsa. The salsa is not cooked and easy to prepare; therefore, the ingredients have a nice tasty crunch to them.

APPLE CINNAMON RAISIN PITAS (BREAD MACHINE)

Apple Cinnamon Raisin Pitas (Bread Machine) image

I used to buy these breakfast "pitas" from the grocery store, but figured out how to make them at home - for a heck of alot less. They're more like small, flatbreads, and I slice them in half, toast them, and spread them with peanut butter, honey, or jam. Yum! They're not very sweet, as there isn't much sugar in them.

Categories     Yeast Breads

Time 3h10m

Yield 12 pitas, 12 serving(s)

Number Of Ingredients 9

2 cups whole wheat flour
1 1/2 cups bread flour or 1 1/2 cups all-purpose flour
1 tablespoon dry yeast
1 1/4 cups warm water (120-130F degrees)
1/2 teaspoon salt
1 tablespoon sugar or 1 tablespoon honey
1/2 teaspoon cinnamon
1 cup apple, chopped
1 cup raisins

Steps:

  • 1. Place ingredients except apples and raisins in bread machine in order that your machine specifies.
  • 2. Set to "dough" setting and allow to complete cycle, adding the apples and raisins when your machine alerts you to add nuts/fruit. I actually have found that kneading these in by hand is actually easier, as they're a bit finicky to get worked through the dough.
  • 3. Separate into 10 balls. Press each ball into a 4" round with your hands - you'll likely need to stuff some raisins and apples back in - it's worth it. Place on nonstick cookie sheets and allow to rise for 30 minutes.
  • 4. Preheat oven to 500. Flip rounds, then place in oven for 5 minutes, flip again; turn oven down to 350 and bake for 15-20 minutes longer, until cooked through.
  • 5. Remove from pan onto clean towel and cover while cooling.

CINNAMON TOASTED FRUIT PITA

Cinnamon Toasted Fruit Pita image

This is a light and delicious breakfast option. We loved how the cinnamon and sugar mixture makes the pita sweet and crunchy. It's a great compliment to the creamy yogurt and fruit mixture. There is a great combination of fruits stuffed inside. Toasted almonds are a great topping and add that last bit of crunch. A simple but yummy idea!

CINNAMON & SUGAR MIXTURE
2 teaspoon(s) sugar
1/2 teaspoon(s) cinnamon
STUFFING MIXTURE
5 ounce(s) Greek yogurt, vanilla flavored
4 medium strawberries, sliced
1 small banana, sliced
1/2 small apple (I use peeled granny smith) diced
10 - grapes, sliced in half
4 teaspoon(s) sliced almonds, toasted
PITA
2 - pita pockets, cut in half and split open for stuffing
2 teaspoon(s) butter or olive oil

Steps:

  • Heat a cast iron griddle or any skillet over medium-low heat.
  • If you don't already have a cinnamon & sugar mixture, then mix the two together in a small dish.
  • Butter/oil both sides of the 4 pitas. Sprinkle each side with 1/4 tsp of the cinnamon mixture.
  • Place all 4 pitas on pre-heated griddle/skillet. Cook until nicely browned, about 3-5 mins.
  • Then flip to the other side and repeat.
  • While pitas are browning/toasting, clean and slice all the fruits.
  • Add to a bowl, mix until well combined.
  • Let the pitas cool and then spread 1-2 tablespoons of the Greek yogurt inside the pita.
  • Fill with fruit.
  • Sprinkle the toasted almonds. Enjoy.
  • TIP: If you need to toast your sliced almonds, put them on a small pan and put them in a pre-heated oven or toaster oven for about 4-5 minutes, until lightly browned.
