CINNAMON TOAST OATMEAL
Here's something really simple, with a taste that's off the charts. A great way to start your morning! I make several servings of this at a time, and refrigerate it for eating a couple of days.

Steps:
- 1. Combine the oats, water, and salt in a medium saucepan and bring just to a boil. Reduce heat, cover, and just barely simmer about 5 minutes until done. If using steel cut oats, follow the directions on the packaging for cooking time.
- 2. Divide oatmeal into 4 serving containers. Top each serving with brown sugar, 1/2 tsp butter, and 1/4 tsp cinnamon. Stir well. Serve with a little milk or cream if desired.
- 3. When making this just for myself, I put one serving in my cereal bowl, and the rest into microwavable storage containers and refrigerate. That way it's ready for me each morning and can be heated up in less than a minute. A great idea for busy school mornings.

- 1. In a medium bowl, cream together white sugar, butter, and brown sugar. Beat in eggs one at a time, then stir in vanilla.
- 2. Combine flour, cinnamon, baking soda,and salt. Stir into the creamed mixture. Mix in oats and cereal. If you are using nuts or raisins, mix into dough, combining well. Cover, and chill dough for at least one hour.
- 3. Preheat the oven to 375 degrees
- 4. Grease cookie sheets. Using a teaspoon or a large melon ball scoop place 2 inches apart on cookie sheets.
- 5. Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- 6. You can add your favorite nuts raisins or coconut to these cookies the same as you would oatmeal cookies.

CINNAMON TOAST CRUNCH COOKIES

- Preheat oven to 350°F. Line a baking sheet with parchment, set aside.
- Place 3 cups of Cinnamon Toast Crunch cereal in a large zip-top bag and seal. Reserve the remaining 1 cup of cereal. Using a rolling pin, crush the cereal until it is a fine crumb. Alternately you can do this step in a food processor or blender. Set aside.
- In the bowl of your stand mixer fitted with the paddle attachment, mix the butter and sugar together for 2 minutes. Add in the eggs, vanilla, baking powder, salt and cinnamon, and continuing mixing until combined and smooth, scraping sides of the bowl as necessary.
- Turn the mixer to low and add in the flour until just combined. Mix in the crushed cereal until evenly incorporated. Stir in the reserved cup of uncrushed cereal.
- Using a medium (2- tablespoon) cookie scoop, portion out the dough and place 2- inches apart on the prepared baking sheet. Bake for 9 - 10 minutes until edges begin to golden.
- Transfer to a wire rack to cool completely.
- If desired melt white chocolate in a microwave-safe bowl in 20 second increments, stirring after each, until melted. Drizzle on top of the cookies.

- In a medium sauce pan, add the oats, cinnamon and water/milk, bring to a boil, reduce heat to low and simmer, uncovered, over a gentle boil for 5 - 7 minutes, stirring frequently. Let cool a few minutes before serving.

CINNAMON TOAST POPCORN
This snackable pile of lightly sweetened popcorn is reminiscent of buttery cinnamon toast and the perfect treat for two or four (or one!). You can easily make another batch to serve a crowd. Popcorn is coated in syrup and toasted in a pot to create a shell of caramelized sugar that's dusted with cinnamon. Five minutes out of the pot, the popcorn cools to a soft crispness, but if you bake it for just 10 minutes, the popped kernels dry all the way through and become crunchy to their core. - Heat the oven to 350 degrees and have a large sheet pan lined with parchment paper nearby.
- In a large, heavy-bottomed pot, combine the sugar, butter, corn syrup, salt and 1 tablespoon water. Cook over medium-high heat, stirring with a large metal spoon or rubber spatula, until the butter melts and the mixture turns into thick bubbling syrup, about 1 minute. Cook until it begins to smell toasty, about 1 more minute, then add the popcorn, carefully tossing every 2 to 3 seconds, until it starts to brown lightly, another 1 to 2 minutes. Begin tossing constantly for another minute or two until the popcorn turns deep golden brown in most spots, being careful to never let it burn. Remove from the heat, sprinkle with the cinnamon and toss a final time to coat.
- Immediately pour the toasted popcorn onto the lined sheet pan and spread in an even layer. Bake until a shade darker, 8 to 10 minutes. Cool the popcorn on the pan on a rack for 5 to 10 minutes to harden. Toss a final time to break up any clumps and serve.
