Easy Cinnamon Thins image

When a co-worker's husband came home from Iraq, we had a potluck for him. These cookies with coarse red sugar matched our patriotic theme. -Janet Whittington, Heath, Ohio

Number Of Ingredients 5

12 ounces white candy coating, chopped
1 teaspoon cinnamon extract
30 Ritz crackers
12 finely crushed cinnamon hard candies
Red colored sugar

Steps:

  • In a microwave, melt candy coating; stir until smooth. Stir in extract., Dip crackers in candy coating mixture; allow excess to drip off. Place on waxed paper. Decorate with candies and colored sugar as desired. Let stand until set.

1 cup butter, softened
1 ½ cups white sugar
1 egg
1 ½ tablespoons molasses
2 ¼ cups all-purpose flour
1 ⅛ teaspoons baking soda
1 tablespoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Cream together butter and sugar.
  • Mix in egg and molasses, blending well.
  • Mix flour, baking soda and cinnamon; add to creamed mixture, mixing well.
  • Drop by teaspoonfuls onto ungreased cookie sheet.
  • Bake for 10 to 12 minutes.

I came up with the recipe the other day and it turned out perfectly. These are high in protein and fiber and totally low in sugar and high glycemic carbs. And the best part is they are vegan and gluten free.

Number Of Ingredients 8

3 cups almond meal
4 tsp Fructevia, Steviva Blend (or a tiny dash of SteviaSweet)
1 egg white
1 pinch salt
0.50 tsp cinnamon
0.13 tsp vanilla
1 tsp Fructevia, Steviva Blend
1 tsp cinnamon

Steps:

  • Mix all of the ingredients well in a small bowl.
  • All ingredients should be moist and the dough should hold together.
  • Put the dough on a greased sheet of heavy-duty aluminum foil or parchment paper, about 15x18".
  • Cover the dough with a piece of wax paper that's been sprayed with non-stick spray.
  • Roll out the dough to about 1/8" thick or slightly thinner.
  • Try to get the dough to an even thickness about 9 x 9" square.
  • Peel off the wax paper, sprinkle the topping over the dough, spread the topping evening over the dough with your hand.
  • Use a pizza or ravioli cutter to score the dough into approximately 1-inch squares.
  • Lift the foil and set it on the oven rack and bake them at 325ºF for 10-15 minutes, or until golden brown.
  • Check after 10 minutes and if crackers at outer edge are getting pretty brown, remove those and continue baking the rest until golden.
  • I used a thin metal spatula to very gently pry the crackers from the foil.
  • Break them apart on the score lines and let cool.
  • Can be frozen.

1/2 cup soft butter (1 stick) or 1/2 cup margarine (1 stick)
1 cup granulated sugar
1 egg
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1/4 cup granulated sugar, mixed with the cinnamon

Steps:

  • Cream butter and sugar until light and fluffy.
  • Add egg and beat well.
  • Combine flour with baking powder and salt.
  • Add to creamed mixture and mix well.
  • Drop onto greased cookie sheet in marble-sized balls.
  • Press flat with bottom of greased glass dipped in the sugar-cinnamon mixture.
  • Bake in 350°F oven 10 minutes.
  • Remove from cookie sheet and cool.
