CINNAMON PANCAKES
Steps:
- In a bowl, combine the flour, sugar, baking powder, cinnamon and salt. In another bowl, combine the egg, milk, oil and vanilla. Stir into dry ingredients just until combined. In a lightly greased electric skillet, drop batter by 1/4 cupfuls; press lightly to flatten. Fry until golden brown, about 2 minutes on each side. Serve with syrup.

Steps:
- Combine all ingredients in bowl. Beat at medium speed 1 minute or until smooth. (Batter will be thick).
- Heat lightly greased griddle to 350°F. or until drops of water sizzle.
- Spoon 1/4 cup batter for each pancake onto griddle. Spread batter to 4-inch circle. Cook 2-3 minutes or until bubbles form on surface. Turn; continue cooking 1-2 minutes or until lightly browned.
- Serve warm with additional Cinnamon Sugar Butter Spread and maple syrup.

Steps:
- Heat 1-2 tablespoons of oil on griddle.
- Mix pancake mix and water.
- Pour prepared mix onto hot oiled griddle in 4" size pancakes.
- Outside of pancake should sizzle. Flip when top has begun to bubble and underside is golden.
- Have your kids help you with this one-.
- Soften 1 stick of butter.
- Add brown sugar and cinnamon.
- Spread on hot pancakes.
- Enjoy with bacon, eggs, cold milk and coffee.

- Melt the butter halfway in a small pan over medium heat, remove from the heat and stir. This way the butter cools fast. Set aside.
- Make a well in the middle of the flour mixture, add the cooled melted butter and the egg. Stir egg and butter with a whisk.
- Slowly add 1 cup minus 1 tablespoon milk while mixing with a whisk. Once mixed, there should be no visible flour but lumps are fine. Don't overmix. The batter will be thick but it should be pourable from a spoon. If it is not pourable you can gradually add the extra 1 tablespoon milk as needed.
