EASY CHESS SQUARES



Easy Chess Squares image

These simple chess squares are made with the convenience of a box of cake mix, cream cheese, and eggs. They're so easy and taste great.

4 large eggs, divided
1 (15- to 18-ounce) package butter cake mix
1/2 cup butter, softened
8 ounces cream cheese, softened
1 pound confectioners' sugar, plus more for dusting, optional
Optional: 1/2 teaspoon vanilla extract

Steps:

  • Gather the ingredients. Preheat the oven to 350 F.
  • Grease and flour a 9 x 13-inch baking pan.
  • In a small bowl, lightly beat 1 of the eggs.
  • In a mixing bowl with an electric mixer, combine the cake mix, butter, and the beaten egg. Beat on low speed until the butter is blended into the dry cake mix and the egg mixture and the crumbs begin to clump together. Stop mixing and pat the crumbs firmly into the bottom of the prepared baking pan.
  • In a mixing bowl with an electric mixer, beat the softened cream cheese until smooth. Add the confectioners' sugar and beat until the mixture is light and well blended. Beat in the remaining 3 eggs. Continue beating until very smooth. Beat in the vanilla, if using.
  • Pour the cream cheese batter over the first layer and spread to cover evenly.
  • Bake the chess squares for 35 to 40 minutes, or until set and lightly browned.
  • Cool on a rack and then cover the pan with foil or plastic wrap. Transfer the pan to the refrigerator to chill thoroughly before cutting. They are a little gooier if you cut them while they are still warm.
  • This recipe makes about 24 (2-inch) bars. Store the bars in the refrigerator until ready to serve.

1 box yellow cake mix
1 large egg
1 stick butter, softened
15 oz can of pumpkin
3 eggs
1 pkg cream cheese, softened
1 stick butter, softened
1 tsp vanilla
3 c of powdered sugar(reserve 1/2 cup for sprinkling on top)
1 tsp cinnamon
1 tsp nutmeg

Steps:

  • 1. Mix first 3 ingredients for crust in a medium bowl. Batter will be thick. Lightly spray 9x13" pan with cooking spray. Press crust into pan until somewhat even.
  • 2. Mix remaining ingredients for filling in a large bowl and pour over crust.
  • 3. Bake at 350 degrees for approx. 40-45 mins. Dessert will begin to crack and brown. It still may appear jiggly, but will set more as it cools.
  • 4. Let cool. Sprinkle with powdered sugar and cut into squares.

1 box spice cake mix
4 large eggs, divided
1/2 c butter, melted
2 tsp vanilla
1 pkg cream cheese (8 oz), softened
3 c powdered sugar
3/4 tsp cinnamon
3/4 tsp nutmeg
1/2 tsp ginger

Steps:

  • 1. Preheat oven to 300 degrees. Combine cake mix, 1 egg, butter and 1 teaspoon vanilla in bowl and mix well. Batter will be very thick. Spread in prepared 9x13 inch pan sprayed with non stick cooking spray.
  • 2. Combine remaining 3 eggs, 1 teaspoon vanilla, cream cheese and powdered sugar in bowl and beat well. Reserve 3/4 cup batter.
  • 3. In 3/4 cup batter, add spices and mix. Drop dollops of batter and swirl with knife. Bake for 50 minutes.

⅔ (18 ounce) package refrigerated sugar cookie dough
1 (10 ounce) package cinnamon chips
3 (8 ounce) packages cream cheese, softened
¾ cup sugar
1 teaspoon pumpkin pie spice
1 teaspoon vanilla extract
1 cup canned solid-pack pumpkin
3 eggs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Pat the cookie dough into a 9x13 inch baking dish to cover the bottom, and sprinkle evenly with the cinnamon chips. Bake in the preheated oven until the crust is lightly browned, 12 to 14 minutes.
  • Meanwhile, beat together the cream cheese, sugar, pumpkin pie spice, and vanilla until smooth with an electric mixer. Beat in the pumpkin until combined, then beat in the eggs until the mixture is smooth. Pour into the baking dish, and return to the oven. Continue baking until the center of the mixture has set, 30 to 35 minutes.
  • Cool the baking dish on a wire rack to room temperature, then refrigerate until cold, about 4 hours. Cut into 18 squares to serve.

3 medium tart apples, peeled and finely chopped
1/2 teaspoon ground cinnamon

STREUSEL:
3/4 cup all-purpose flour
3/4 cup packed brown sugar
1/2 cup quick-cooking oats
1/3 cup cold butter, cubed
1/3 cup hot caramel ice cream topping

Steps:

  • Preheat oven to 350°. In a small bowl, combine flour and brown sugar; cut in butter until crumbly. Press into a well-greased 13x9-in. baking pan. Bake 15-18 minutes or until lightly browned., Meanwhile, in a large bowl, beat cream cheese, 1/2 cup sugar and vanilla until smooth. Add eggs; beat on low speed just until combined. Spread over crust., In a small bowl, toss apples with cinnamon, nutmeg and remaining sugar; spoon over cream cheese layer. In another bowl, mix flour, brown sugar and oats; cut in butter until crumbly. Sprinkle over apple layer., Bake 25-30 minutes or until filling is set.
