FROZEN BREAD DOUGH CINNAMON ROLLS
Steps:
- Gather the ingredients.
- Using some of the cold butter, grease a pan. Place the frozen bread loaf inside and grease a piece of plastic wrap to place over the dough. Thaw the dough in the refrigerator overnight from 10 to 12 hours, or for about 4 to 5 hours at room temperature.
- Once the time has elapsed, use the remaining cold butter to grease 2 8-inch round cake pans.
- In a medium bowl, combine the brown sugar, finely chopped pecans, and cinnamon. Mix well to combine and set aside.
- On a lightly floured surface, roll out the thawed bread dough into an 18x6-inch rectangle. The dough is quite elastic, so be patient when rolling it out to the recommended size. Let the dough rest for a few minutes now and then and it will relax and be easier to roll. Brush the melted butter evenly over the dough.
- Sprinkle the brown sugar and cinnamon mixture over the buttered dough.
- Starting at the long end, carefully roll the dough up to form a log. Slice the log into 20 to 22 uniform slices.
- Arrange the formed rolls in the buttered cake pans. Move the pans to a draft-free place, cover with a clean kitchen towel, and let them rise for about 1 1/2 hours, or until doubled in bulk.
- When the rolls have nearly doubled in size, preheat the oven to 350 F.
- Drizzle the heavy cream evenly over the rolls-about 3 tablespoons per pan-and bake for 25 minutes. Remove the cinnamon rolls to racks to cool until just slightly warm.
- While the rolls cool off, sift the powdered sugar into a medium bowl, add the milk and vanilla, and stir until well blended. For thinner icing, add more milk, a few drops at a time. To thicken, add more powdered sugar.
- Drizzle or spread the icing over the warm cinnamon rolls. Remove the cinnamon rolls from the pan while they are still warm and serve.

- On parchment paper, Take each biscuit and 'smoosh' it out flat as much as you can without tearing it. Do it again with the next biscuit, slightly overlapping it with the first biscuit. You can use a lightly floured surface if needed.
- Continue until you have used all 10 biscuits. I did a row of 3 on top, a row of 4 in the middle and a row of 4 on the bottom. All of the biscuits overlap the surrounding biscuits.

- For the dough: Preheat the oven to 375 degrees F. Lightly coat the sides and bottom of a 9 x 13-inch baking dish with cooking spray.
- Cut the butter into small pieces, then place the pieces in the freezer while you prepare the dry ingredients.
- In a large bowl, combine the 2 cups all purpose flour, white whole wheat flour, baking powder, baking soda, and salt. Scatter the butter pieces over the top, then cut in the butter using your fingers or a pastry cutter until the mixture resembles a coarse meal. The butter does not need to be uniform—some of the pieces may be the size of pebbles while others can be as large as your thumbnail. Pour 1 1/2 cups, plus 2 tablespoons of the buttermilk over the top and gently mix with a rubber spatula until the mixture just begins to come together. If the dough seems overly dry, add 1 additional tablespoon of buttermilk. It should be moist, but not sticky.
- Scrape the dough onto a lightly floured work surface and pat it flat. With a floured rolling pin, roll the dough into a 16 x 12-inch rectangle that is about 1/4-inch thick.

- Preheat oven to 450°. Cut shortening and butter into flour with a pastry blender or fork in a medium bowl until crumbly and mixture resembles small peas. Freeze 10 minutes.
- Make a well in center of flour mixture; add buttermilk, and stir with a fork just until dough comes together.
- Turn dough out onto a heavily floured surface, and knead 8 to 10 times. Transfer dough to a heavily floured piece of wax paper about 18 inches long. Roll dough into a 14- x 10-inch rectangle.
- Spread dough with softened butter, leaving a 1/2-inch border. (Make sure butter is very soft, and spread it gently.) Stir together sugars and cinnamon; sprinkle over butter. Lift and tilt wax paper, and roll up dough, jelly-roll fashion, starting at 1 long side and using wax paper as a guide. Cut dough into 14 to 16 (1-inch-thick) slices. Place rolls in a lightly greased (with cooking spray) 9-inch round pan.
