- Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender, 15 to 20 minutes. Uncover, fluff with a fork, and let cool completely, about 30 minutes.
- Combine dates, oats, cranberries, and maple syrup in a food processor. Blend until a sticky paste forms.
- Mix 2 cups cooled quinoa, date mixture, and cinnamon together in a bowl.
- Line a small baking pan with parchment paper. Press mixture firmly into the pan. Cut into bars.

- Preheat the oven to 375°F (190°C).
- To make the flax eggs, combine the flax meal and water in a small bowl and mix well. Set aside for 10 minutes to gel.
- In a large bowl, combine the oats, quinoa, baking powder, salt, maple syrup, coconut oil, vanilla, flax eggs, and bananas, and mix until well-combined.
- Divide the base dough equally between 4 medium bowls.
- Add the peanut butter and chocolate chips to 1 bowl and mix until combined.
- Add the apple, walnuts, cinnamon, and nutmeg to another bowl and mix until combined.
- Add the carrots, cinnamon, nutmeg, and almond butter to another bowl and mix until combined.
- Add the almond butter, strawberries, raspberries, and blueberries to the last bowl and mix until combined.
- Grease 2 9x13-inch (23x33-cm) baking pans with nonstick spray. Transfer the bar mixtures to the pans, packing each mixture into half of a pan with a spoon or spatula.
- Bake for 25-30 minutes, until the edges are slightly golden brown.
- Remove the pans from the oven and let the bars cool for 20 minutes, then refrigerate for at least 30 minutes, or up to 5 days. Gently cut each flavor into 6 bars, then remove from the pans with a spatula.

- Mix the PB2 powder and water together until creamy. Stir in the maple syrup, vanilla and cinnamon. Add the quinoa flakes or oats, coconut and chocolate chips. Stir until well-combined, using your hands if you need to. The mixture will be a little dry, but should ultimately sick together.
- Line a 4"x 8" loaf pan with parchment paper. Press mixture evenly into pan. Chill in the refrigerator a couple of hours. Remove from pan and cut across into bars. Store in the fridge.
BLUEBERRY QUINOA BREAKFAST BARS
Steps:
- Preheat the oven to 350 degrees F. Line a 9"x 9" baking sheet with parchment paper and grease the sides with cooking spray.
- In a large mixing bowl, whisk together the oats, quinoa, sugar, baking powder, and hemp seeds.
- In a separate bowl, mix the banana, nut butter, flax eggs, lemon juice and vanilla. Pour this mixture over the dry ingredients, mixing everything together until fully incorporated. The batter should be moist, but not runny. Fold in the blueberries
- Transfer the batter into the prepared pan and smooth with a spatula.
- Bake on the center rack for 25 - 35 minutes until the bars are golden brown and firm to the touch.
- Remove and let cool completely in the pan, then remove and slice into squares (or rectangles). Store in an airtight container for 4 - 5 days.
