CINNAMON SUGAR ALMONDS
These easy to make candied almonds make the perfect snack!

Steps:
- Preheat the oven to 250 degrees F.
- Line a rimmed baking sheet with parchment paper.
- In a large bowl, mix together the brown sugar, granulated sugar, cinnamon and salt until well combined.
- In another bowl, whisk together the egg white and vanilla until frothy.
- Add the almonds to the bowl of frothy egg whites and toss until the nuts are completely coated.
- Pour the coated nuts into the bowl with the cinnamon sugar mixture and toss until they are well coated.
- Pour the nuts onto the prepared baking sheet and spread them out evenly.
- Bake for 1 hour, stirring every 15 minutes.
- Allow the nuts to cool completely on the baking sheet.
- Store in an airtight container at room temperature for 2-3 weeks.

- In a large bowl, beat egg whites until frothy; beat in vanilla. Add almonds; stir gently to coat. Combine the sugars, salt and cinnamon; add to nut mixture and stir gently to coat. , Spread evenly in 2 greased 15x10x1-in. baking pans. Bake at 300° for 25-30 minutes or until almonds are crisp, stirring once. Cool. Store in an airtight container.

- Preheat oven to 325 degrees.
- Place butter on a 15 1/2 x 10 1/2-inch jellyroll pan; place in oven to melt butter, about 7 minutes. Meanwhile, beat egg whites with salt until frothy; gradually add sugar, beating to stiff peaks.
- Gently fold in almonds and cinnamon. Pour almond mixture onto.
- jellyroll pan; toss with butter. Bake about 40 minutes, tossing every 10 minutes, until almonds are crisp.
- Serve warm or at room temperature. Store cooled in air-tight containers up to 2 weeks.

- Preheat oven to 300 degrees.
- Line a baking sheet with foil and lightly spray with vegetable oil.
- In a large bowl combine sugar and cinnamon.
- In another large bowl beat egg white until slightly frothy. Stir in vanilla and salt.
- Add almonds to egg mixture and toss to coat.
- Then pour almonds into cinnamon sugar mixture and toss to coat.
- Spread sugar coated almonds on lined baking sheet.
- Bake 25 minutes; stir after 10 minutes.
- Let cool and remove from pan with slotted spoon.

- Lightly beat the egg white; add water, and beat until frothy but not stiff. Add the nuts, and stir until well coated. Mix the sugar, salt, and cinnamon, and sprinkle over the nuts. Toss to coat, and spread evenly on the prepared pan.
