HOW TO CAN PEARS + SPICED PEAR CANNING RECIPE
Easy pear canning recipe with low (or no sugar) but heavy on flavor with optional spices of cinnamon and ginger!

- Prepare your water bath canner (fill with water deep enough to cover the jars, place the wrack in it, and begin heating the water). Wash jars in hot soapy water, rinse, and place on a folded towel near the hot syrup and stove top.
- Peel pears by hand or using my super easy blanching method of 15 seconds in hot water, plunge into warm water, and peel. Keep peeled pears in a solution of lemon water (about 1/4 cup for a large bowl) to keep from turning brown.
- In a large stainless steel pot mix 5 and 3/4 cup water with 1 and 1/2 cups sugar, stir until sugar is dissolved and heat over medium low heat to almost a boil. Place the pears into the hot syrup in a single layer and let heat through for about 5 minutes.
- Fill your jar with 2 four inch cinnamon sticks & spices if using (wide mouth is the easiest to use for packing) then fill with the hot pear using a slotted spoon to a generous 1/2 inch head space. Then using a ladle and canning funnel, pour the hot syrup over the pears to a 1/2 inch head space. Remove air bubbles and double check your head spaced, adding more syrup if needed.
- Wipe the rim of the jar clean and place on lid and band. Tighten down to finger tip tight and place jar in the water bath canner.
- When you've filled the canner, make sure the surface of the water is at least 1 to 2 inches over the top of the jars and bring to a hard boil. Start the processing time after the water has reached a full boil and process 20 minutes for pints and 25 minutes for quarts.*
- *Note: if you're 1,000 feet above sea level, increase processing time by 5 minutes.
- When jars have processed, turn off the heat and remove canner lid and leave jars in the canner for 5 minutes. Then remove jars onto a folded towel in a draft free area and let cool for 24 hours.

APPLE AND PEAR FRUIT COMPOTE
When the Fall season arrives, I love making recipes that make use of the bountiful variety of apples and pears that grace the produce section of my local grocery store. This fruit compote combines these two fruits into a delightfully sweet mixture that is equally at home topped on breakfast oatmeal as it is poured over a pound cake for dessert.

- Peel and Core all the fruit. Quarter each piece of fruit and chop each quarter into 6 bite-sized pieces. Add fruit to a medium-sized heavy bottom.
- Add the remaining ingredients to the pot and bring the mixture to a medium simmer. Once the mixture reaches a simmer, turn down to low and allow to simmer on low for 1 hour, stirring occasionally.
- After 1 hour turn off the heat and allow to cool. Once cool, decant to a container and refrigerate. The mixture should stay fresh refrigerated for one week to 10 days.
CINNAMON ROASTED PEAR OR APPLE COMPOTE
Steps:
- Preheat the oven to 375 degrees F.
- Peel, core, and dice the fruit into 3/4-inch pieces.
- Place the fruit, sweetener or choice, lemon juice and cinnamon in an oven-proof casserole with a lid and mix well.
- Bake covered for 25 minutes, then remove the lid and bake for another 2o minutes or until the fruit is tender.
- Cool to room temperature and use as desired.
CINNAMON PEAR COMPOTE
A bowl of ice cream will be much improved with a bit of this sweet pear compote spooned over the top. Or to prove that it's not just for dessert and try spreading some on a sandwich with roasted pork loin, crisp lettuce and Dijon mustard.

- Put pears, raisins, juice, cinnamon, nutmeg and butter into a small pot and cook over medium heat, stirring occasionally, for about 10 minutes.
- Add vinegar, salt and pepper and continue to cook until juice is thickened and pears just begin to fall apart, about 5 minutes more. Set aside to let cool for 5 minutes, then serve.

- Peel, core and cut the pears into small cubes.
- Place the pear chunks in a small saucepan with the water, maple syrup, lemon juice, ground cinnamon and ginger. Stir to combine then turn on medium low heat.
- Cook for 15 to 20 minutes (see note 1), occasionally stirring, or until the pear chunks are very soft.
- Remove from the heat then blend until smooth with an immersion blender. Alternatively, roughly mash the pear chunks with a fork or masher for a chunky compote (see note 2).
- Serve warm, or leave to cool down at room temperature before transferring into a jar or sealed container. Keep in the fridge until ready to use or for up to a week.

Steps:
- Peel and core the pears and cut into eighths; set aside.
- In a medium-size saucepan, combine the brown sugar, cornstarch and cinnamon or allspice. Stir in the juice or fruit nectar and mix well. Place the pan on medium-high heat and cook the sauce, stirring, until the mixture is smooth. Add the pears and bring the sauce to a gentle boil.
- Reduce the heat to medium-low and continue cooking, stirring occasionally, for 15 - 20 minutes or until the pears are just tender, almost translucent, and the syrup is thick. Stir in the rum and butter and heat a few minutes longer.
ASIAN APPLE PEAR COMPOTE
I had a surplus of apple pears so experimented! You could serve this for breakfast with cinnamon toast or put on ice cream with a chocolate sauce or anywhere that you would use stewed fruit. You may want to add some sugar when cooking it if you like things sweet.

- Watch, you will probably have to add a little more water once or twice during the cooking so as not to scorch the fruit.
- Don't drown them, just a couple of tbsp at a time.

- Preheat oven to 150°C/300°F. Add egg whites and salt to a kitchen machine with whisk. Once foamy, add some sugar and beat for approx. 5 – 8 min. or until stiff peaks form. Add starch, vinegar, and half the vanilla extract and beat to combine. Add cinnamon and fold gently with a rubber spatula.
