Balsamic Roasted Pork Loin image

A zesty, yet simple meal with an olive oil and balsamic vinegar marinade. A crowd pleaser!

2 tablespoons steak seasoning rub
½ cup balsamic vinegar
½ cup olive oil
2 pounds boneless pork loin roast

Steps:

  • Dissolve steak seasoning in balsamic vinegar, then stir in olive oil. Place pork into a resealable plastic bag and pour marinade overtop. Squeeze out air and seal bag; marinate 2 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Place pork into a glass baking dish along with marinade. Bake in preheated oven, basting occasionally until the pork reaches an internal temperature of 145 degrees F (65 degrees C), about 1 hour. Let the roast rest for 10 minutes before slicing and serving.

4 medium sweet potatoes (peeled and cut lengthwise into wedges)
1/3 cup Frescolio Cinnamon-Pear Dark Balsamic Vinegar
2 tbsp Frescolio Butter Infused EVOO
3/4 tsp sea salt

Steps:

  • Heat oven to 400F. Cut a piece of parchment paper to fit the bottom of a baking pan.
  • Thoroughly whisk together the Cinnamon-Pear Balsamic and Butter EVOO. In a large bowl toss to liberally coat the sweet potato wedges with the emulsified balsamic-olive oil mixture.
  • Arrange the potato wedges on the parchment paper lined pan in a single layer, without over-crowding. Sprinkle with sea salt and roast for 45 minutes until tender and the balsamic glaze has caramelized.
