White Chocolate-Cinnamon Blondies image

My friend Martha challenged me to make a brownie without using chocolate. I started with my Blonde Brownie recipe and mixed in white chocolate chips. I wasn't cheating: White chocolate isn't officially chocolate because it's made without the chocolate liquor that comes from processing the cacao bean. Then, I added my secret ingredient: cinnamon! 12 tablespoon (1½ sticks) salted butter
1 1/2 cup light brown sugar, packed
2 large eggs
2 teaspoon pure vanilla extract
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup (6 ounces) white chocolate chips
2 teaspoon ground cinnamon
1/4 cup sugar

Steps:

  • Preheat the oven to 350°F. Grease a 9x13-inch pan and set aside.
  • Using an electric mixer or spatula, mix together the butter and brown sugar until well combined. Add the eggs and vanilla and mix well. Add the flour, baking, powder, and salt and mix thoroughly. Fold in the white chocolate chips with a spatula until evenly distributed. Pour half of the batter into the prepared pan, creating a thin, even layer.
  • Stir together the cinnamon and sugar. Sprinkle half of the cinnamon-sugar over the batter. Top with remaining batter, smoothing it to create a thin, even layer, and then sprinkle with the remaining cinnamon-sugar.
  • Bake for 25 to 28 minutes, until a toothpick inserted into the center of the blondies comes out clean.
  • Cool completely, and then cut into 24 pieces.

Adapted from and inspired by recipe # 48582, butterscotch blondies. The store was out of butterscotch chips, and this came to mind when I saw the cinnamon chips.

3/4 cup butter or 3/4 cup margarine, softened
3/4 cup light brown sugar, firmly packed
1/2 cup sugar
2 eggs
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon nutmeg
1 cup cinnamon baking chips
1 cup white chocolate chips
3/4 cup walnuts

Steps:

  • Preheat oven to 350°.
  • Grease 13 x 9 inch baking pan (I like to use the wrapper from the butter to do this).
  • Beat butter and sugars in a large mixing bowl until creamy.
  • Add eggs and beat well.
  • Sift together flour, baking soda, salt and nutmeg; gradually add to butter mixture, blending well.
  • Stir in cinnamon chips, white chocolate chips and nuts.
  • Spread into prepared pan. The batter will be very thick.
  • Bake 30 to 35 minutes or until top is golden brown and center is set.
  • Cool completely in pan on wire rack.
  • Cut into bars.

  • Preheat oven to 350 degrees F. Line an 8 inch square baking pan with parchment paper overhang (or just grease it well with butter). In a double boiler (see post for tips), heat 1 cup of the white chocolate chips and 1/2 cup of butter, stirring continuously with a whisk till just melted, thick, and glossy. Do not let it get too hot or it will separate. Remove from the heat and let it cool, stirring occasionally.
  • Add sugar and whisk to combine, then add eggs and vanilla. Meanwhile mix salt, cream of tartar, cinnamon, and pinch of nutmeg with the flour. Add the flour mixture into the chocolate/egg mixture 1/4 cup at a time, stirring till just combined. Finally, fold in the reserved 1/2 cup of white chocolate pieces till just incoporated (or you can sprinkle them on top) - do not overmix.
  • Transfer batter to the prepared baking pan and sprinkle with cinnamon sugar mixture just enough to coat the top (you may have some leftover). Bake until blondies are lightly browned on the edges and the center is set, it will look a bit underdone but that's what you want for the gooey texture - about 28-30 minutes. Cool in the pan at least 15 minutes before using the parchment paper to lift the blondies to a cutting board. Cut into 12 squares.
