- In a large bowl, cream butter and sugars until light and fluffy. Beat in egg and vanilla. Combine the flour, cinnamon and salt; gradually add to creamed mixture and mix well. Shape into a 12-in. roll; wrap in plastic. Refrigerate for 2 hours or until firm., Unwrap and cut into 1/2-in. slices. Place 2 in. apart on ungreased baking sheets. Decorate with sprinkles. , Bake at 350° for 10-12 minutes or until lightly browned. Remove to wire racks to cool.

- In a large bowl, dissolve yeast in warm milk. Add the sugar, shortening, egg, salt and 2 cups flour; beat on medium speed for 3 minutes. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise until doubled, about 1 hour., Combine filling ingredients; set aside. Punch dough down; divide in half. On a floured surface, roll each portion into a 12-in. square. Spread filling over dough. Roll up tightly jelly-roll style; pinch to seal., Cut into 1-in. slices; place on greased baking sheets (four slices per sheet). Cover with waxed paper; flatten slices with palm of hand into 3-in. circles. Cover and let rise until doubled, about 30 minutes., Cover with waxed paper and flatten or roll into 5-in. circles. Brush with butter. Combine the sugar, cinnamon and pecans; sprinkle over butter. Cover with waxed paper; roll or flatten again. Discard waxed paper., Bake at 400° for 10-12 minutes or until browned. Serve warm.

Light, thin, crisp cookies, with oatmeal, pecan & cinnamon. Not at all like your average oatmeal cookie. This is Mom's recipe. They are fragile & don't keep more than a week, so I halved the recipe, making some of the measurements a little odd/picky. - Combine water, sugar and yeast in bowl of stand mixer. Add salt and 2 cups flour; beat 2 minutes. Add eggs and oil; beat 1 minute. Blend in 4 1/2 cups flour; beat until sticky dough forms. Let rest 20 minutes.
- To make cinnamon rolls, lightly dusk counter with flour and roll out half of dough until about 1/2-inch thick and rectangular. Spread lightly with softened butter and sprinkle with sugar and cinnamon. Roll up dough and using a serated knife or kitchen twine, slice cinnamon rolls about 3/4-inch thick and place cut-side down on sugar and cinnamon coated counter.
- One at a time, place each roll on lightly flour-dusted counter, sprinkle with about 3/4 teaspoon sugar and roll flate until about 1/8-inch thick. Place on greased baking sheet and let rise 20 to 30 minutes, until light. Bake 18 to 20 minutes in preheated 375-degree oven.

- Preheat oven to 350 degrees F. Generously grease an 8x8 baking pan or 9 inch skillet with nonstick cooking spray. Set aside.
- To make the topping: Combine the flour, oats, brown sugar, cinnamon and walnuts in a large bowl until well-combined. Pour in the melted butter and use your hands to combine until the mixture becomes crumbly and resembles wet sand. You may need to use your hands/fingers to form into nice crumbles. Cover the bowl with plastic wrap and place it in the fridge until ready to use.
- To make the filling: place pears, maple syrup, cinnamon, vanilla and arrowroot starch in a large bowl and toss to combine. Take 1/3 cup of the topping mixture and toss with the pear mixture. Place the pear mixture in a prepared pan and sprinkle evenly with the remaining topping.

Heat milk, the 1/4 cup granulated sugar, shortening, and salt just until warm (120 degree F to 130 degree F) and shortening almost melts. Add to flour mixture; add egg. Beat with an electric mixer on low speed for 30 seconds, scraping sides of bowl constantly. Beat 3 minutes on high speed. Using a wooden spoon, stir in as much of the remaining flour as you can.
- Turn dough out onto a lightly floured surface; knead in enough remaining flour to make a moderately soft dough that is smooth and elastic (3 to 5 minutes total). Shape into a ball. Place in a lightly greased bowl; turn once to grease surface. Cover; let rise in a warm place until double (1 to 1-1/2 hours).
- Punch down; divide in half. Cover; let rest 10 minutes. Roll each dough half into a 12-inch square. Combine the 1/2 cup granulated sugar, the brown sugar, half (1/4 cup) of the melted butter or margarine, and the 1/2 teaspoon ground cinnamon; spread half of the mixture over each square. Roll each up into a spiral; seal seams. Cut into 12 slices. Place cut sides down on greased baking sheets 3 to 4 inches apart. Flatten each slice to about 3 inches in diameter.
- Cover; let rise until nearly double (about 30 minutes). Cover with waxed paper. Using a rolling pin, roll to 1/8-inch thickness; remove paper. Brush rolls with the remaining 1/4 cup melted butter. Combine the 1 cup granulated sugar, pecans, and the 1 teaspoon cinnamon. Sprinkle over rolls. Cover with waxed paper; roll flat again. Remove paper. Bake in a 400 degree F oven 10 to 12 minutes or until golden brown. Immediately transfer from baking sheets to wire racks; cool. Makes 24 crisps.
