3/4 cup low fat vanilla soymilk (regular or low-fat)
1 (12 1/3 ounce) package firm silken tofu
2 tablespoons honey
2 teaspoons vanilla extract
2 teaspoons ground cinnamon
1 tablespoon lemon juice

Steps:

Place all ingredients in blender or food processor and mix well.
Store in refrigerator.

1/4 c balsamic vinegar
1 tsp cinnamon
1 tsp honey
1/2 c olive oil
Salt and Pepper to taste

Steps:

1. Whisk together all ingredients except olive oil, then slowly stream in olive oil, you may need a little more or less than 1/2 cup.

2 cups mixed greens
1/4 cup blueberries
1/4 cup strawberries
1/4 cup chevre, cut into chunks
1 Tablespoon apple cider vinegar
1/3 cup apple cider vinegar
3 Tablespoons extra virgin olive oil
2 Tablespoons honey
1 teaspoon cinnamon
1 teaspoon dry mustard
1/4 teaspoon salt

Steps:

Salad Place mixed greens in salad bowl, add toppings, and toss gently. Drizzle vinaigrette just before serving. Vinaigrette Add all the ingredients - except for the oil - into a bowl. After adding all the other ingredients, whisk the oil into the vinaigrette slowly to fully blend.
