Steps:
- Remove crust of each slice, then cut each into 3 equal thick batons.
- Combine the eggs, milk and a pinch of salt in a bowl large enough to roll the bread sticks in.
- Combine the cinnamon and sugar on a plate.
- Melt 2 tbsp of the butter in a large pan over medium high heat.
- Roll the sticks in the egg mixture quickly (do not soak them), shake off excess and place in pan. Cook in 2 batches.
- Turn to cook each side until golden.
- Immediately transfer to the plate with the cinnamon sugar and roll to coat. It's important to do this quickly while they are hot straight out of the pan so it sticks.
- Melt remaining butter and cook the remaining french toast sticks.
- Serve immediately with maple syrup to dunk the sticks in.

Steps:
- Preheat the oven to 425˚ F. Crack the eggs into a pie plate. Add the half-and-half, vanilla, 1/4 cup granulated sugar and 1/2 teaspoon cinnamon. Whisk lightly until combined; set aside.
- In a separate pie plate, stir together the panko, crushed cereal and remaining 1/4 cup granulated sugar and 1/2 teaspoon cinnamon. Use a fork to stir in the melted butter so that the crumbs are slightly moist.
- One by one, quickly dunk the bread strips in the egg mixture, turning to coat. Then lay them in the dish with the crumb mixture, turning to coat; sprinkle and press the crumbs so they totally cover the bread. Place the bread strips on a rack set on a baking sheet.
- Bake the French toast sticks until golden around the edges and the crumbs are crisp, 15 to 20 minutes. Sprinkle with confectioners' sugar and serve with maple syrup.

- In a large bowl, whisk together the eggs, heavy cream, cinnamon, sugar and vanilla. Dip each piece of bread in the egg mixture, turning to coat it on all sides so that it's well-saturated with the custard.
- Shake off any excess and place the coated bread on a large plate or baking dish. Repeat the dipping process with the remaining pieces of bread.
- Heat a large sauté pan over medium heat and add 2 to 3 tablespoons of butter. Once the butter has melted, place several of the coated sticks in a single layer in the pan. (Do not overcrowd the pan.) Cook until golden brown on one side then flip and continue cooking until the sticks are golden brown and slightly crisped on all edges.

- Trim off the crust on the edges. I prefer to trim the crust due to it's mild bitter taste plus it gives neater batons without the crust. If you don’t mind the crust, leave them on.

- In a square baking dish or large bowl whisk together the eggs, milk, cream, vanilla, sugar, and cinnamon.
- Slice the bread into strips then, working in batches, soak the bread in the egg mixture letting it sit for around 15 seconds on both sides or longer for thicker slices. Then pick them up carefully and let the excess drip off and transfer to a plate.
- Heat a large pan or skillet over medium heat then add the oil and butter. Once the butter is melted and the foaming subsides, add several of the sicks to the pan and cook for around 1-2 minutes per side until golden brown and toasted. If you notice any burning, reduce the heat slightly. Remove from pan and set aside then cook remaining slices, adding more butter and oil as needed.

- Preheat electric griddle (takes about 10 minutes) or preheat a non-stick skillet over medium heat a minute or two before you’ll need it; set aside.
- In a large mixing bowl, combine eggs, milk, sugars, vanilla, cinnamon, nutmeg, and whisk until combined.
- Dip 1 slice of bread into the coating mixture for about 5 to 10 seconds, flipping over once, and making sure it’s well-coated before adding to griddle; don’t let bread become overly saturated because it’ll break and fall apart. Repeat with all slices of bread until coating mixture is gone.
