EASY CINNAMON CRISPS
Steps:
- Cut each tortillas into 8 wedges
- Lay wedges on a baking sheet and brush with a light coating of vegetable oil
- In a small bowl, mix cinnamon and sugar together.
- Sprinkle cinnamon and sugar mixture on top of chips
- Bake in a 400 degree oven for 5-7 minutes or until crisp

- In a large bowl, dissolve yeast in warm milk. Add the sugar, shortening, egg, salt and 2 cups flour; beat on medium speed for 3 minutes. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise until doubled, about 1 hour., Combine filling ingredients; set aside. Punch dough down; divide in half. On a floured surface, roll each portion into a 12-in. square. Spread filling over dough. Roll up tightly jelly-roll style; pinch to seal., Cut into 1-in. slices; place on greased baking sheets (four slices per sheet). Cover with waxed paper; flatten slices with palm of hand into 3-in. circles. Cover and let rise until doubled, about 30 minutes., Cover with waxed paper and flatten or roll into 5-in. circles. Brush with butter. Combine the sugar, cinnamon and pecans; sprinkle over butter. Cover with waxed paper; roll or flatten again. Discard waxed paper., Bake at 400° for 10-12 minutes or until browned. Serve warm.

- Mix the sugar and cinnamon together in a small bowl.
- Brush the melted butter onto one side of each of the flour tortillas and sprinkle with the cinnamon and sugar mixture.
- Then cut each tortilla into 8 wedges. I used a pizza cut to them. I cut them in half and then cut each half into 4 equal pieces.
- Place the tortilla pieces onto a baking sheet and cook for 8-10 minutes until they are crispy.
- Serve warm and enjoy!

- Combine water, sugar and yeast in bowl of stand mixer. Add salt and 2 cups flour; beat 2 minutes. Add eggs and oil; beat 1 minute. Blend in 4 1/2 cups flour; beat until sticky dough forms. Let rest 20 minutes.
- To make cinnamon rolls, lightly dusk counter with flour and roll out half of dough until about 1/2-inch thick and rectangular. Spread lightly with softened butter and sprinkle with sugar and cinnamon. Roll up dough and using a serated knife or kitchen twine, slice cinnamon rolls about 3/4-inch thick and place cut-side down on sugar and cinnamon coated counter.
- One at a time, place each roll on lightly flour-dusted counter, sprinkle with about 3/4 teaspoon sugar and roll flate until about 1/8-inch thick. Place on greased baking sheet and let rise 20 to 30 minutes, until light. Bake 18 to 20 minutes in preheated 375-degree oven.
