QUICK CINNAMON COFFEE CAKE
This was in a church cookbook. I usually dress it up with raisins and shredded apple, but the recipe is good as it is. It is a great recipe to put into the oven while cooking something else.

Steps:
- Preheat oven to 350°F.
- Grease round cake pan.
- Combine sugar and cinnamon; set aside.
- Measure all remaining dry ingredients into a bowl and mix well.
- Beat together butter, milk and egg; pour over dry ingredients.
- Stir until dry ingredients are moistened - don't beat!
- Pour batter into a pan and sprinkle top with cinnamon sugar mixture.
- Bake for 20 minutes and serve warm.

- Preheat oven to 350 degrees F. Spray a 9x9 pan with non stick baking spray.
- In a large bowl, cream butter and white sugar. Stir in vanilla, egg, baking powder, and salt.
- Alternate stirring in flour and milk until just combined. Do not over mix.
- Pour half of batter into prepared pan.
- In a small bowl, combine the butter, flour, brown sugar, and cinnamon.
- Pour into the batter in pan, and swirl with a knife. Pour remaining batter on top.
- In the same small bowl using 2 forks, butter, flour, brown sugar, and cinnamon until mixture resembles coarse crumbs.
- Sprinkle topping on top of batter, and press in lightly.
- Bake for 40-45 minutes, or until a tooth pick inserted in the center comes out clean.

- In a large bowl, cream butter and 2 cups sugar until light fluffy. Add 1 egg at a time, beating well after each addition. Beat in vanilla. Combine flour, baking soda and salt; add alternately with sour cream, beating just enough after each addition to keep batter smooth. , Spoon a third of batter into a greased 10-in. tube pan. - Preheat oven to 425 degrees F.
- Grease and flour a 9 inch square pan.
- In a large bowl mix together the flour, baking powder, sugar and salt.
- Cut in the shortening with a pastry blender to the size of small peas.
- In a separate small bowl, beat the egg well; then stir in the milk and vanilla.
- Add the egg-milk mixture to the flour mixture all at once.
- Stir carefully until just blended.
- Pour batter into prepared pan and spread evenly.
- Drizzle top with melted butter.
- In a small bowl mix together brown sugar, 2 tablespoons flour and 1/2 teaspoon cinnamon.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan, or a 10 inch Bundt cake pan.
- In a medium bowl, stir together the cake mix, vanilla pudding mix, and butterscotch pudding mix. Add the eggs, oil and water, mix until well blended. In another bowl, stir together the brown sugar, cinnamon and nuts. Pour half of the batter into the pan, spread evenly. Sprinkle with half of the nut mixture. Cover with the rest of the batter, and sprinkle with the rest of the nut mixture.

- Preheat oven to 350 degrees. Grease an 8-inch square baking pan. In a medium bowl, combine flour, 3/4 cup sugar, baking powder, and salt. - Heat oven to 350°F. Grease a 9x5x3-inch loaf pan on the sides and bottom. Set aside.
- Combine 1/2 cup butter with granulated sugar in the bowl of a stand mixer. Beat on medium speed until creamed together about 3 to 4 minutes until smooth and fluffy. Add the eggs one by one, beating well after each addition. Add the vanilla; beat well.

- Cool 10 minutes in pan on wire rack. Loosen sides of loaf from pan; remove from pan and place on wire rack. Cool completely, about 2 hours before slicing.

- Preheat oven to 325°F.
- In a large bowl, mix together room temperature butter and sugar. It should be light and fluffy; do not over whip.
- Stop and scrape down the sides and bottom of bowl.

- Combine the vanilla extract and Greek yogurt.

- For the fruit: Preheat your oven to 350 degrees F (175 degrees C) and grease a 9-inch square baking pan and another pan large enough for the fruit with cooking spray.
- Add the cinnamon sticks to the pan and nestle in the fruit, cut side up. In a small bowl, stir together the butter, syrup, orange zest and juice and vanilla extract and pour over the fruit.
