A family favorite, these Cinnamon Muffins are tender and sweet and filled with lots of cinnamon flavor.

2 cups all-purpose flour
1 cup sugar
1 tablespoon baking powder*
1 tablespoon cinnamon
1/2 teaspoon salt
1 cup milk
1/2 cup vegetable oil
2 eggs
2 tablespoons sugar
1 teaspoon cinnamon

Steps:

  • Preheat the oven to 375ºF. Grease 18 muffins cups.
  • In a bowl, combine the flour, sugar, baking powder, cinnamon and salt.
  • In another bowl, beat together the milk, vegetable oil, and eggs. Make a well in the center of the dry ingredients and add the wet ingredients. Stir just until combined - don't over mix.
  • Divide the mixture evenly between the prepared muffin cups.
  • In a small bowl, combine the 2 tablespoons sugar and 1 teaspoon of cinnamon. Sprinkle the cinnamon sugar mixture over the tops of the batter filled cups.
  • Bake the muffins until a toothpick instead in the center comes out clean, 13-15 minutes.

1/3 cup shortening
1/2 cup sugar
1 egg
1-1/2 cups all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/2 cup milk
TOPPING:
1/2 cup sugar
1-1/2 teaspoons ground cinnamon
3 tablespoons butter, melted

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg. Combine the flour, baking powder, salt and nutmeg; add to creamed mixture alternately with milk until well combined. , Fill greased muffin cups half full. Bake at 350° for 15-20 minutes or until a toothpick comes out clean., Add butter to a shallow bowl. In another shallow bowl, combine sugar and cinnamon. Dip muffin tops in butter, then in cinnamon-sugar. Serve warm.

1/2 cup unsweetened cocoa
1 tablespoon baking powder

1/2 cup firmly packed light brown sugar
1 cup semisweet mini chocolate chips
2 large eggs
1 cup low-fat milk
6 tablespoons sunflower oil or 6 tablespoons melted cooled butter

Steps:

  • Preheat oven to 350°F.
  • Grease a 12-cup muffin pan or line with 12 muffin paper liners.
  • Sift together the flour, cocoa, baking powder, cinnamon and salt into a large bowl. Stir in the sugar and chocolate chips.
  • Lightly beat the eggs in a large bowl, then beat in the milk and oil.
  • Make a well in the center of the dry ingredients and pour in the beaten liquid ingredients. Stir gently until just combined; do not overmix.
  • Spoon the batter into the prepared muffin pan. Bake in the preheated oven for about 25 minutes, until well risen and firm to the touch.

1 cup mashed banana (made of 2 large bananas)
1 large organic brown egg
4 tablespoons high-quality honey
3 tablespoons of coconut oil (melted then cooled)
3/4 cup oat flour (can be gluten-free)
1/2 cup LadyBoss® LEAN
1 teaspoon baking powder
A teaspoon baking soda
1 teaspoon of cinnamon
¼ cup chocolate chips (optional)
Don't forget: Muffin pan and muffin liners (to prevent sticking)

Steps:

  • Preheat oven to 350 and prepare a lined or greased muffin tin.

6 tablespoons granulated sugar
1/2 teaspoon salt
1 tablespoon baking powder
1 teaspoon cinnamon
2 eggs
1/4 cup butter (melted)
1 cup whole milk
1/2 cup salted butter (melted)
1/2 cup granulated sugar
1 tablespoon cinnamon

Steps:

  • Preheat oven to 375 degrees F. Spray a light colored muffin tin with nonstick cooking spray and set aside.
  • Add the flour, cinnamon, sugar, salt, and baking powder to a clean deep bowl. Whisk to combine. Create a well in the center. To the well, add in the milk, eggs and melted butter. Beat with a whisk to break up the eggs, then switch to a rubber spatula or spoon to finish stirring batter together.
  • Scoop into prepared muffin tin and bake 15-20 minutes or until golden brown.
  • Remove from oven and cool 15 minutes or until you can handle the muffins comfortably. While muffins are cooling, melt butter and combine granulated sugar with cinnamon.
  • Dip muffins into melted butter, then cinnamon sugar.

50 g caster sugar
125 ml milk

1 orange, zest of, grated

  • Sift the flour and baking powder together into a bowl.
  • Then stir in remaining ingredients mixing thoroughly.
