CINNAMON-CANDY COOKIES

I was trying to make a unique Christmas cookie inspired by my brother's love of Red Hots, so I used the candies for cinnamon flavor in these lacelike cookies. -Wendy Rusch, Cameron, Wisconsin

Number Of Ingredients 11

2/3 cup Red Hots
2-1/3 cups all-purpose flour
1 cup butter, softened
1 cup sugar
1 teaspoon vanilla extract
FROSTING:
2 cups confectioners' sugar
1/2 cup butter, softened
1/2 teaspoon vanilla or cinnamon extract
1/8 teaspoon salt
4 to 6 tablespoons 2% milk

Steps:

  • Place Red Hots in a food processor; process until fine and powdery. Add flour; pulse to combine., In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in vanilla. Gradually beat in flour mixture. Shape into two 8-in. rolls; wrap each roll in waxed paper. Refrigerate until firm, about 1 hour., Preheat oven to 350°. Unwrap and cut into 1/4-in. slices. Place 2 in. apart on ungreased baking sheets. Bake until edges are just lightly browned, 7-9 minutes. Cool on pans 2 minutes before removing to wire racks to cool completely., For frosting, in a small bowl, beat confectioners' sugar, butter, extract, salt and enough milk to reach desired consistency. Decorate cookies as desired., Freeze option: Place wrapped logs in a freezer container; freeze. To use, unwrap frozen logs and cut into slices. If necessary, let dough stand a few minutes at room temperature before cutting. Bake and decorate cookies as directed.

Number Of Ingredients 6

1 cup water
3-3/4 cups sugar
1-1/4 cups light corn syrup
1 teaspoon red liquid food coloring
1 teaspoon cinnamon oil
1/3 cup confectioners' sugar

Steps:

  • Line a 15x10x1-in. pan with foil; butter the foil and set aside. In a large heavy saucepan, combine water, sugar, corn syrup and food coloring. Bring to a boil over medium heat, stirring occasionally. Cover and cook for 3 minutes to dissolve sugar crystals. , Uncover; cook on medium-high heat, without stirring, until a candy thermometer reads 300° (hard-crack stage), about 25 minutes. Remove from the heat; stir in cinnamon oil (keep face away from mixture as oil is very strong). Immediately pour onto prepared pan. Cool completely, about 45 minutes. , Break the candy into pieces using the edge of a metal mallet. Sprinkle both sides of candy with confectioners' sugar. Store in airtight container.

¾ teaspoon baking powder

¾ cup firmly packed brown sugar
⅓ cup white sugar
1 teaspoon vanilla extract
1 large egg
1 ½ cups cinnamon chips
1 ½ cups cinnamon candies (such as Red Hots®)

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix flour, cinnamon, baking powder, baking soda, and salt together in a bowl.
  • Beat butter, brown sugar, white sugar, and vanilla with an electric mixer in a large bowl until smooth. Beat in the egg until completely incorporated.
  • Gradually beat flour mixture into butter mixture until combined. Fold in cinnamon chips and cinnamon candies, mixing just enough to evenly combine.
  • Drop spoonfuls of the dough 2 inches apart onto ungreased baking sheets. Bake in the preheated oven until lightly browned, 8 to 11 minutes. Cool on the pans for 2 minutes before removing to cool completely on a wire rack.

1 cup confectioners' sugar
1 egg
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour

1/2 cup Red Hots, crushed
1/2 teaspoon ground cinnamon
Red food coloring, optional
2 tablespoons coarse sugar

Steps:

  • Preheat oven to 375°. In a large bowl, cream butter and confectioners' sugar until light and fluffy. Beat in egg and vanilla. In another bowl, whisk flour and salt; gradually beat into creamed mixture. , Divide dough in half. Mix Red Hots and cinnamon into one half; tint with food coloring if desired. Shape 1-1/2 teaspoons plain dough into a 4-1/2-in. rope. Shape 1-1/2 teaspoons red dough into a 4-1/2-in. rope. , On an ungreased baking sheet, place ropes side by side; press together lightly and twist. Curve top of each cookie down to form handle of cane. Repeat with remaining plain and red dough, placing 2 in. apart on baking sheets. These are one of the best cookies I have ever eaten. They make up easily, and they disappear fast. I make these every year when we put up our Christmas Tree. I serve them with hot Cocoa while we decorate our tree. I swear the cookies are anticipated as much as the tree!

1 cup sugar
1/2 cup butter
1 large egg
1 teaspoon vanilla
1 1/2 cups flour
1 1/2 teaspoons cinnamon
1 teaspoon baking powder
1/4 teaspoon salt
cinnamon sugar

Steps:

  • In a mixer bowl, cream together sugar and butter; beat in egg and vanilla.
  • Combine flour, cinnamon, baking powder and salt.
  • Add to butter mixture.
  • Blend well.
  • Cover and refrigerate 2 hours or till firm enough to roll into balls.
  • Shape dough into small balls about 3/4-inch in diameter.
  • Roll in cinnamon sugar to coat.
  • Set cookies 1-inch apart on lightly greased cookie sheets.
  • Bake at 350° for 10 minutes or till the edges are lightly browned.
  • Cool slightly on pans, then remove to racks to cool completely.

Leave out a few of these cinnamon-spiced cookies for Father Christmas on Christmas Eve. Perfect for the festive biscuit tin, you could add some raisins too

Number Of Ingredients 8

120g softened salted butter
50g light brown muscovado sugar
150g golden caster sugar
3 tsp ground cinnamon
1 egg, lightly beaten
220g plain flour
50g raisins (optional)
1 tbsp icing sugar

Steps:

  • Beat the butter, muscovado sugar, caster sugar and 2 tsp cinnamon together with an electric whisk for 2-3 mins until well-combined. Add the egg, flour, baking powder and raisins, if using, and continue to beat until the mixture becomes a uniform dough. Roll tablespoons of the dough into balls between the palms your hands (you should have 12-15). Chill in the fridge for at least 2 hrs until firm, or overnight. The unbaked dough balls will keep in an airtight container in the freezer for up to three months (see tip, below).
  • Heat the oven to 180C/160C fan/ gas 4 and line two large baking trays with baking parchment. Place the dough balls 3-4cm apart on the prepared baking trays to allow the mixture to spread without touching. Bake for 10-12 mins until lightly golden at the edges but still soft and gooey in the centre. Leave to cool completely on the baking trays.
  • Mix the icing sugar with the remaining cinnamon, then dust over the cookies. Will keep in an airtight container for up to five days.
