CINNAMON ROLL BITES

- In 2-quart saucepan, heat half-and-half, water, butter, granulated sugar and salt over medium heat, stirring occasionally, until butter is melted. Cool until warm (110°F to 115°F). Sprinkle yeast on warm butter mixture; stir to dissolve. Stir in flour and egg until dough forms.
- On lightly floured surface, knead dough 5 to 8 minutes or until smooth. Grease large bowl with shortening or spray with cooking spray. Place dough in bowl, turning dough to grease all sides. Cover and let rise in warm place 40 to 45 minutes or until dough has doubled in size.
- Meanwhile, in small bowl, mix brown sugar and cinnamon. Grease bottom and sides of 13x9-inch pan with shortening or spray with cooking spray.
- On lightly floured surface, roll dough into 16x12-inch rectangle, 1/4 inch thick. Brush 2 tablespoons melted butter over rectangle. Sprinkle with brown sugar-cinnamon mixture. Roll up rectangle, beginning at 16-inch side; pinch edge of dough into roll to seal. Cut into 24 slices. Place slices in pan. Cover and let rise in warm place 40 to 45 minutes or until dough has almost doubled in size.
- Heat oven to 350°F. Bake 17 to 27 minutes or until golden brown. Meanwhile, in medium bowl, beat all frosting ingredients with electric mixer on medium speed until well mixed. Spread over warm rolls.

- Pour water into the bowl of a stand mixer. Sprinkle yeast evenly over water, and let stand until foamy, 5 to 7 minutes. Whisk until smooth, then whisk in 1/2 cup flour to form a loose paste. Let rise in a warm place until yeast mixture has risen and fallen, about 30 minutes.
- Add eggs, 1/4 cup sugar, salt, and remaining flour to yeast mixture. Knead dough, using dough hook attachment on mixer, until smooth, 4 to 5 minutes.
- Add 1 stick butter, and knead until dough is smooth and elastic, about 10 minutes (add a little more flour if the dough is too sticky). Turn out dough onto an unfloured work surface, and knead by hand until very smooth, about 3 minutes. Transfer dough to another bowl, and let rise in a warm place, covered with a damp cloth or plastic wrap, until doubled, 1 1/2 to 2 hours. Punch down dough; press out air bubbles.
- Lightly butter a 9-inch pie plate or 9-inch square glass baking dish. Place melted butter in a bowl. Stir together remaining 1 cup sugar and the cinnamon in another bowl.
- Roll dough into 1-inch balls (you should have about 45). Working with 1 at a time, dip balls into melted butter, then roll in cinnamon sugar and place in pie plate. Stack balls to form a dome. Sprinkle with any remaining cinnamon sugar, and drizzle with any leftover butter. Cover with plastic wrap, and let balls rise by half, about 1 hour.
- Preheat oven to 350 degrees. Unwrap balls, and place pie plate on a baking sheet. Bake until golden and firm, and a wooden skewer inserted into the center comes out clean, 50 to 55 minutes. Let bites cool in dish 15 minutes, then drizzle with glaze.

- Preheat oven to 350 degrees Fahrenheit.
- Let pie crust thaw at room temperature. When pie crust is soft but still cold, turn out onto a piece of parchment paper. Roll using a rolling pin. Trim edges to create a square or rectangle shape. You can add the scraps to the end to make the square or rectangle bigger. The longer the shape, the smaller the cookies will be, but the more you'll have.
- Sprinkle the dough with cinnamon and then sprinkle generously with sugar. Roll up dough, jelly-roll style.
- Using a serrated knife, slice dough (like you would cinnamon buns). Place on a parchment-lined baking sheet. Bake for 12 minutes.

- Line a baking sheet with aluminum foil and place a rack on top. Arrange bacon on the rack and place in a cold oven.

- In the bowl of a stand mixer combine the water, yeast, and 1/2 cup flour until a thick paste forms. Stir in the eggs, 1/4 cup of the sugar, and salt and stir until combined. Fit the machine with the dough hook and add the remaining 4 cups of flour. Knead on medium speed until smooth, 4 to 5 minutes.
- Add the 1 stick of room temperature butter and knead until the butter is incorporated and the dough is smooth and elastic, about 10 minutes. If the dough is extremely sticky add a little more flour. Turn the dough out onto a clean work surface and knead by hand until very smooth, about 3 minutes. Transfer the dough to a clean bowl, cover, and let rise until doubled, about 1 1/2 to 2 hours. Punch the dough down and press out air bubbles.
- Lightly butter a 9-inch pie plate (or similar sized baking dish). In a small bowl combine the remaining 1 cup of sugar and the cinnamon.
- Roll the dough into 1-inch balls. Dip each ball in the melted butter, then roll in the cinnamon sugar and place on the prepared pie plate. Stack balls to form a dome shape. Cover lightly with plastic wrap and let balls rise by half, about 1 hour.

- Make Brown Sugar Goo: In a medium saucepan over medium heat, melt butter. Add brown sugar and stir well to combine. Bring to a boil, stirring, then remove from heat and stir in cream and salt. Remove to a bowl, cover and allow to cool to room temperature.
- Make Cinnamon Roll Bites: Heat milk in saucepan or microwave until 180° and set aside to cool to lukewarm. In a large bowl or the bowl of a stand mixer, combine flours yeast, salt and white sugar. Add lukewarm milk, egg, vanilla and vegetable oil. Mix to combine. Add more flour, as necessary until dough is moist and smooth. Remove to a greased bowl and allow to rise until doubled, 60-90 minutes.
- Remove risen dough to a floured surface. Roll into a rectangle 15-inches wide by 20 inches long. - Prepare 8 ramekins on a baking sheet and grease or line with a piece of parchment paper (I do recommend the parchment, if you have some, as it will help to keep the icing and goo inside instead of going over the edge. Large tulip-shaped muffin lines will also work). Divide dough pieces between the 8 ramekins. Cover with a tea towel and allow to rise until puffy, 30-40 minutes.
