These delicious, fluffy pancakes are a version of the pancakes my dad used to make for us girls when we were little. This version is now a Sunday morning favorite of my daughter.

Number Of Ingredients 8

1 cup all-purpose flour
2 ½ tablespoons white sugar
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1 cup milk
2 eggs
¼ cup butter, melted

Steps:

  • Mix flour, sugar, baking powder, baking soda, and cinnamon together in a bowl.
  • Whisk milk, eggs, and melted butter together in a separate bowl. Pour milk mixture into flour mixture. Whisk until well blended.
  • Heat a lightly oiled griddle over medium heat. Drop batter by 1/4 cup measures onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.

Number Of Ingredients 9

1-1/3 cups all-purpose flour
4-1/2 teaspoons brown sugar
1-1/4 teaspoons baking powder
1 teaspoon ground cinnamon
2 eggs
1 cup milk
2 tablespoons butter, melted
Additional cinnamon
Maple syrup

Steps:

  • In a large bowl, combine the flour, brown sugar, baking powder and cinnamon. Combine eggs, milk and butter; stir into dry ingredients just until combined. , Pour batter by 1/4 cupfuls onto a lightly greased hot griddle. Sprinkle with cinnamon. Turn when bubbles form on top of pancakes. Cook until second side is golden brown. Serve with syrup.

200 g non fat natural yoghurt
2 tablespoons honey
1 teaspoon cinnamon
2 cups self raising flour
1 teaspoon baking powder
2 tablespoons sugar
1 1/2 cups light evaporated milk
2 eggs
2 teaspoons vanilla
300 g frozen blueberries
canola cooking spray

Steps:

  • Stir in a bowl the yoghurt, honey and cinnamon.
  • For the hotcakes, sift flour and baking powder into large bowl.
  • Stir in sugar and make a well in the centre.
  • In a jug, whisk eggs, milk and vanilla.
  • Add to dry ingredients, stir till just combined, mixture maybe slightly lumpy.
  • Gently stir in blueberries.
  • Spray non stick pan with canola spray and place on medium heat.
  • Pour 1/2 cup batter into pan, cook for about1 1/2 minutes till bubbles appear on surface, turn over and cook further 1 1/2 minutes till golden.
  • Serve with yoghurt, honey and cinnamon mixture on top.

1 cup flour
3 tablespoons sugar
1 tablespoon matcha green tea powder
1/2 teaspoon baking soda
1/2 cup milk
2 tablespoons milk
1/2 cup yogurt
1 egg
2 tablespoons vegetable oil

Steps:

  • Combine flour, sugar, matcha and baking soda in a large bowl. Whisk in the wet ingredients (milk, yogurt and egg) until the batter is smooth.
  • Heat a saute pan over medium-low heat. Brush the inside of a metal ring mold or cookie cutter (about 3 inches across) with oil. Add remaining oil to pan and place the ring mold in the middle of the pan. Fill the ring mold 2/3 of the way up with the batter and place a lid on the pan. Make sure that the lid does not rest on top of the ring mold.
  • Cook for 5 minutes, then remove lid and cook for 1 more minute (or until bubbles start to form on top of the hotcake). Carefully flip the pancake and ring mold and cook the other side for 5 minutes with the lid, then 1 minute without.
  • Remove from the pan and and run a knife along the inside of the ring mold to unmold the hotcake. Serve warm with syrup.

A refreshing and surprisingly complimentary addition to the regular ole blueberry pancakes. I love experimenting in the kitchen and I came up with this. Delicious!! You can mix the dry parts of the recipe and store in the freezer in a freezer bag and it's ready to go at a moments notice. Handy! Recipe can be doubled for extra hotcakes.

1 egg
3/4 cup milk
2 tablespoons butter, melted
2 teaspoons vanilla
1 cup flour
1 tablespoon sugar
1 teaspoon cinnamon
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup wild blueberries, frozen

Steps:

  • Preheat oven to 275 degrees.
  • Combine egg, milk, vanilla, and melted butter and mix well.
  • In a separate bowl mix together dry ingredients.
  • Add frozen blueberries and stir gently to coat.
  • Add wet ingredients to dry ingredients and mix gently until just combined.
  • Allow mixture to stand for ten minutes before cooking.
  • Heat a heavy griddle or fry pan which is greased with a little butter.
  • Pour a 1/4 cup of batter into pan and tip to spread.
  • When bubbles appear on surface and begin to break, turn over and cook the other side.
  • Butter and place on foil in oven to keep warm until you're ready to serve them up. This keeps them nice and hot.
