Steps:
- Combine all ingredients in a large bowl. Use a spatula and make sure all the cinnamon is absorbed into the applesauce.
- Gather the dough with your hands. Knead it several times, pressing the dough firmly into a ball. It will be about the size of a softball.
- Sprinkle some cinnamon on a cutting board or other smooth surface. Flatten the ball into a disc with your hands. Using a rolling pin, begin to roll out the dough. Turn the dough several times while rolling, adding more cinnamon to prevent sticking.
- Roll until the dough is about 1/4 inch thick and cut out the shapes using cookie cutters.
- Gather the leftover dough after the first cutting and again knead it several times, pressing it firmly into a ball. Repeat the rolling process.
- Repeat until all the dough is used.
- Lay the ornaments on a cookie sheet covered with wax or parchment paper. Using a skewer or small straw, make a hole in the top of each ornament.
- Ornaments should dry in 24 to 48 hours. It helps to turn them occasionally so they dry evenly.
- String with a piece of twine or ribbon to hang.

Glue is used to make the ornaments sturdy and prevent crumbling, so while they are inedible, these fun-to-make ornaments will last for years to come.

Steps:
- Mix together the ¾ cup applesauce, ground cinnamon, and glue until well combined. Add more applesauce, a tablespoon at a time, as needed, to form a soft dough. Knead with your hands until the dough is smooth. Roll out the dough. I like to roll it between 2 pieces of parchment paper to approximately ⅜-inch thickness. (You can make thicker ornaments; they will simply take a little longer to dry out.) Cut into desired shapes with cookie cutters. Use a straw, skewer, piping tip or pencil to punch a hole near the top of the ornament for a ribbon. (Make sure to do this now. Once the ornaments have dried out, they will be too hard to make a hole.) Place the ornaments on a parchment-lined baking sheet. As I transfer them, I use my finger to soften any rough edges. Dry in a 200℉ oven for 1½ to 2 hours. I usually flip them halfway through, but this isn't critical. As an option, you may allow the ornaments to air dry for 3 to 4 days, flipping about once per day. Once dry, decorate as desired and then insert a ribbon through the hole for hanging.

Steps:
- 1. In a medium mixing bowl, combine cinnamon and cloves. Add the applesauce, essential oil, and glue.
- 2. Knead in bowl for a few minutes, until you have a firm, pliable dough. Add more cinnamon if the dough is too wet, more applesauce if it's too dry.
- 3. Dust your work surface with cinnamon (just as you would with flour for regular cookies). Roll the dough to 1/4 inch thickness. Cut out shapes with cookie cutters, or press into a cookie mold. For molds, press dough into mold, smooth with rolling pin, remove, and cut away extra dough.
- 4. While still moist, cut a hole in the top of each ornament with the end of a straw for hanging. Place ornaments on paper towels and air dry for several days. Carefully flip them several times while drying so they won't bend or warp.
- 5. In a hurry? Instead of air drying, bake ornaments at 200 degrees F for about 3 hours, turning occasionally. Decorate!

- In a large bowl or stand mixer, mix together cinnamon and applesauce until a smooth ball forms. Dough should not be sticky. It should be moist and easy to handle. If necessary, adjust cinnamon or applesauce until easy to handle.
- Divide dough into two equal parts, shape into discs. Optionally, chill for an hour or longer. Chilled dough will become slightly firmer and easier to handle.
- Sprinkle work surface well with cinnamon. Place one disc of dough down on cinnamon coated surface, sprinkle top with cinnamon and roll to 1/4-inch thickness. Cut using desired cookie cutters. Use a regular sized straw to carefully remove a hole, this will be where the string goes later. Transfer to prepared baking sheet and repeat with remaining dough.

- Mix the applesauce, cinnamon, and glue in a mixing bowl. You'll probably need to stir with your hands, as a spoon won't get the job gone. Add more applesauce or cinnamon if needed - you want the dough to be a touch dry, but it still needs to hold together when you roll it out. When the dough can be formed into a ball, you are done mixing. Wash your hands.
- Place 1/3 of the dough between two sheets of plastic wrap, and use the rolling pin to roll the dough to 1/4" - 1/3" thick.
- Remove the top layer of plastic wrap and use cookie cutters to cut out ornaments. Repeat with the remaining dough.
