I was really in the Cinco de Mayo spirit this year. I went to an authentic Mexican restaurant and order a tostada. It was delicious and I tried to make a homemade version for my family to enjoy without the guilt. Buen provecho!

1 ½ pounds skinless, boneless chicken breasts, cut into 1-inch cubes
4 limes, juiced, divided
2 chipotle peppers in adobo sauce, minced
3 tablespoons adobo sauce from chipotle peppers
2 tablespoons olive oil, divided
3 cloves garlic, sliced
salt and ground black pepper to taste
3 tomatoes, halved
2 ears corn
1 avocado, diced
1 bunch fresh cilantro, coarsely chopped, divided
4 (8 inch) whole wheat tortillas
1 cup cooked brown rice
2 cups shredded iceberg lettuce
1 cup tomatillo salsa

Steps:

  • Combine chicken, the juice of 3 limes, chipotle peppers, adobo sauce, 1 tablespoon olive oil, garlic, salt, and pepper in a bowl. Marinate for 20 minutes to 1 hour.
  • Preheat a grill pan to medium-high heat. Coat tomato halves and corn with remaining olive oil and grill until blackened in spots, about 8 minutes. Cool until easily handled, about 5 minutes. Dice tomatoes and cut kernels off the corn cobs. Transfer to a bowl; mix in avocado and 1/4 cup cilantro.
  • Grill chicken until no longer pink in the center, about 7 minutes.
  • Meanwhile, place brown rice in a bowl. Mix in remaining lime juice and cilantro. Season with salt and pepper.
  • Remove chicken from the grill pan. Grill tortillas until crispy on the edges, about 2 minutes per side. Place each tortilla on a serving plate. Layer brown rice, chicken, lettuce, tomato salad, and tomatillo salsa evenly over each tortilla.

1 tablespoon vegetable oil
1 lb. ground beef
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano (or Italian seasoning)
1/2 teaspoon salt (or to taste)
1/4 teaspoon ground black pepper (or to taste)
2 tablespoons tomato paste
1/4 cup beef broth or water
1 (8-piece) package small flour tortillas
1 cup Mexican cheese blend, shredded
2 medium tomatoes, diced
1 medium red onion or white onion, diced
1/4 cup fresh cilantro, finely chopped
1/4 cup sour cream (optional)
1 lime, wedged

Steps:

  • Heat oil in a large skillet for 2 minutes over medium-high heat until the hot oil sizzles. Add ground beef and stir well to cook evenly until browned, about 6-8 minutes. Make sure to break up beef into small pieces to help even browning.
  • Add cumin, chili powder, paprika, garlic powder, oregano, salt, pepper, tomato paste and beef broth. Reduce heat to medium and let the mixture simmer for 3-5 minutes until the sauce thickens a bit, stirring occasionally. Turn off heat and set aside.
  • Heat the soft flour tortillas according to the package instructions, or heat in an ungreased skillet over medium-high heat for 30 seconds per side. You can also heat it directly on a gas burner for a few seconds to get char marks on the edges.
  • Add 2-3 tablespoons of the ground beef mixture on each tortilla. Top with cheese, onion, tomato and cilantro. Add a dollop of sour cream and a squeeze of fresh lime juice, to taste.

  • Season shrimp with Kosher salt, then mix in crushed garlic and 2 tbsp salsa verde. Thread the shrimp and tomatoes onto 4 skewers. (if you plan to grill outside, soak the skewers for 30 minutes before using)
  • If desired, warm the tostada and heat the re-fried beans in the microwave for a few seconds before assembling. (not necessary. The dish is nice cold with just the warm shrimp on the top.)

Add chicken thighs (or boneless skinless chicken breasts if you prefer) and season with salt and pepper. Stir to coat chicken with tomato mixture then spread into an even layer. Reduce heat and cover; keep at a low simmer for 35-45 minutes, until chicken is tender and easy to shred. Transfer chicken to cutting board. Increase heat and return sauce to boil; cook, stirring occasionally, until most of the liquid has evaporated (it should look like a very thick salsa), 8-12 minutes. Remove from heat.
  • While sauce reduces, shred chicken into bite size pieces using two forks. (If making bite-size tostadas chop shredded chicken into pieces small enough to fit on the chips without hanging over the side.)
  • Once sauce has reduced, return chicken to sauce and place over medium heat; cook and stir until heated through. (If it looks like more sauce than you want, transfer 1/3 to 1/2 of it to a separate bowl, stir the chicken into the remaining and add back sauce until you reach your desired consistency.)
  • To make the guacamole: In a large bowl, mash together avocado, pico de gallo and fresh lime juice. Season to taste with salt.
