- Add beef, onion and garlic in a skillet. Heat over medium high heat until meat is brown and no longer pink.
- Drain grease and return to pan.
- Add tomatoes, Worcestershire sauce, spices and chocolate.
- Heat over medium heat, stirring frequently until chocolate is melted.
- Season with salt and pepper and continue to simmer for 10 minutes so seasoning can mingle.
- Serve on top of a bed of warm spaghetti pasta.
- To make it 3 way, top with shredded cheese. To make it 4 way, add onions too. To make it 5 way Cincinnati Chili - add cheese, onoins and canned beans.

Steps:
- Add olive oil to the insert pot of the Instant Pot. Press the Saute button.
- Add beef and onions, breaking apart the beef as it cooks.
- Once beef is brown and onions are becoming translucent, add garlic and stir to combine, cooking for one more minute.
- Drain excess grease if necessary and return mixture to insert pot.
- Add broth, stirring to combine.
- Add remaining ingredients, except for salt and pepper, stirring to combine well.
- Press the Cancel button to stop the Saute function. Place the lid on the Instant Pot.
- Set the vent to the sealed position. Using the Manual setting, select a 5 minute cook time.
- Once the cook time is complete, you can perform a quick release or natural release.
- After pressure has released, carefully remove lid and then remove the bay leaf.
- If desired, use an immersion blender to achieve consistency similar to Skyline Chili.
- Add salt and pepper to taste, if needed.
- Serve over cooked spaghetti and top as desired.

- In a large dutch oven combine the water and tomato paste. Whisk together to combine.
- Crumble the meat with fingers and add to the liquid in the pot.
- Add all remaining ingredients to the pot and stir to combine.
- Bring pot of chili to a simmer over medium heat. Cover and lower heat. Let simmer for 2-3 hours stirring occasionally. Skim grease from the top as needed.
- Remove the chili from the heat and allow to cool to room temperature. Cover and store the chili in the refrigerator overnight.
- After chili has cooled overnight, using a spoon, breakup the grease on the top of the chili and remove completely.
- Bring the chili back to a low simmer over medium heat.
- Serve the chili warm over spagehtti noodles or over a hot dog.

- 1. 1.Add beef and water to a 4-quart pot. Bring to a simmer while stirring until the ground beef is in very small pieces. Simmer for 30 minutes and add all the rest of the ingredients. 2.Simmer on low, uncovered, for 3 hours. Add water as needed if the chili becomes to thick. 3.Refrigerated the chili overnight, and the next day remove the layer of fat from top before reheating and serving. CINCINNATI SKYLINE CHILI

- Gather the ingredients.
- Add the water and beef to a 4-quart pot.
- Bring to a simmer while stirring, until the ground beef is in very small pieces. Simmer for 30 minutes.
- Add the crushed tomatoes, onions, garlic, vinegar, Worchestershire sauce, bay leaf, chili powder, cocoa powder, cayenne, cumin, cinnamon, cloves, and salt. Stir well and simmer on low, uncovered, for 3 hours.
- Stir occasionally to avoid ingredients sticking to the bottom or sides of the pot.
- Add water as needed if the chili becomes too thick. Once the cooking time has passed, remove from heat and allow the chili to cool off, covered, to room temperature.
- Keep covered and fefrigerate the chili overnight. The next day, remove the layer of fat that has formed on top before reheating and serving over pasta or hot dogs.

SKYLIKE CHILI - SKYLINE CHILI COPYCAT
A copycat of Skyline Chili, true Cincinnati chili, except it's less greasy! I combine all the dry spices times ten and keep the "Skyline Spice Mix" in a jar cannister. One batch of chili will use 3/8 cup of spice mix. The spice mix is also tasty as a meat rub for steak, pork and chicken.

- For the chili: In a stockpot or Dutch oven, combine the tomato sauce, tomato paste, onions, chili powder, cocoa powder, sugar, kosher salt, cinnamon, cumin, garlic salt, allspice, pepper, cayenne, cloves, bay leaves, beef (do not brown first) and 2 cups water. - Add the raw ground beef to the mixture by breaking it apart and crumbling it with your fingers.
- Add in all of the other ingredients, and stir to combine. Bring it to a boil and reduce the heat to a low simmer, cover the pot and let simmer for 2 hours, stirring occasionally.
- Remove the chili from the stove, and cool. Transfer the covered pot to the refrigerator, and chill overnight.
- The next day, skim the grease from the top of the chili, before warming it to serve.

- In a separate pan, cook the ground beef over medium heat, mashing with a potato masher as it's cooking to result in a very finely ground consistency. To keep the consistency of traditional Cincinnati chili, you are NOT looking to brown the meat. This is why you need the heat lower and continual mashing as it's cooking.If you can have your butcher finely ground the meat, much more than what you typically find in a grocery store, you'll be much closer to the final consistency needed for Cincinnati style chili.

- Ingredients. What you will need... This can be a bit pricey the first time only because spices are not cheap! Once you have everything though, you will have plenty of leftover spices for other batches!
- Non-food Supplies. A large pot to cook the chili. A skillet or frying pan for the onion and spices. A pot for the pasta (optional)
- Preparing the Stock. -First, add the 4 cups of water to the pot along with the four beef boullion cubes. -Set the stove to medium and begin adding the beef.
- Mixing the Spices. Combine all of the spices (Chili powder, Garlic powder, Cumin, Cinnamon, Cloves, Allspice, Red pepper) in a small bowl and mix together.
- Prepare the Sauce. -Chop the onion fairly small or minced if you prefer (Traditionally, there is no actual chopped onion in the chili, but I like the texture that it adds.
- Put It All Together! -At this point, pour the tomato sauce/onion/spices mixture into the pot with the beef stock (which has been simmering for at least 30 minutes) and mix it all together.
- Enjoy! After simmering for a while, serve the chili over pasta with shredded cheddar cheese and some chopped raw onion. Some people prefer a mild cheddar (which is what they serve at Skyline) with this chili , but I personally like the sharp.
