1 box, 16 oz, spaghetti, cooked, drained and kept warm for serving
1 lb ground beef (lean)
1/2 cup diced onion
1 teaspoon minced garlic
1 can, 14.5 oz, diced tomatoes
1 can, 15 oz, tomato sauce
1 teaspoon Worcestershire sauce
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon cinnamon
1 ounce unsweetened chocolate
Salt and pepper
Optional Toppings: Shredded Cheese (3-way), Diced Onions (4-Way), Canned Chili Beans (5-Way)

Steps:

  • Add beef, onion and garlic in a skillet. Heat over medium high heat until meat is brown and no longer pink.
  • Drain grease and return to pan.
  • Add tomatoes, Worcestershire sauce, spices and chocolate.
  • Heat over medium heat, stirring frequently until chocolate is melted.
  • Season with salt and pepper and continue to simmer for 10 minutes so seasoning can mingle.
  • Serve on top of a bed of warm spaghetti pasta.
  • To make it 3 way, top with shredded cheese. To make it 4 way, add onions too. To make it 5 way Cincinnati Chili - add cheese, onoins and canned beans.

Making Skyline Chili in the pressure cooker is a quick and easy way to enjoy the Cincinnati classic from anywhere! It's a simple and tasty recipe, perfect for a weeknight!

1 Tbs olive oil
1 lb ground beef
1/2 medium onion, diced
2 tsp garlic
2 cups beef broth
2 Tbs chili powder
1/2 tsp cumin
1/2 tsp cinnamon
1/8 tsp allspice
1/8 tsp ground cloves
1 bay leaf
1 cup tomato sauce
1 Tbs apple cider vinegar
1 oz (1 square) of unsweetened chocolate OR 1 Tbs cocoa powder
salt and pepper to taste
For Serving:
Serve over cooked spaghetti. Top with shredded cheese, onions, and beans as desired.

Steps:

  • Add olive oil to the insert pot of the Instant Pot. Press the Saute button.
  • Add beef and onions, breaking apart the beef as it cooks.
  • Once beef is brown and onions are becoming translucent, add garlic and stir to combine, cooking for one more minute.
  • Drain excess grease if necessary and return mixture to insert pot.
  • Add broth, stirring to combine.
  • Add remaining ingredients, except for salt and pepper, stirring to combine well.
  • Press the Cancel button to stop the Saute function. Place the lid on the Instant Pot.
  • Set the vent to the sealed position. Using the Manual setting, select a 5 minute cook time.
  • Once the cook time is complete, you can perform a quick release or natural release.
  • After pressure has released, carefully remove lid and then remove the bay leaf.
  • If desired, use an immersion blender to achieve consistency similar to Skyline Chili.
  • Add salt and pepper to taste, if needed.
  • Serve over cooked spaghetti and top as desired.

4 cups water ((OR can do half water, half beef broth))
6 ounce tomato paste
2 pounds ground beef ((80/20))
½ cup onion (finely diced)
3 Tablespoon chili powder
2 Tablespoon worcestershire sauce
1 Tablespoon apple cider vinegar
1 Tablespoon light brown sugar
2 teaspoon salt
1 teaspoon ground cumin
1 teaspoon cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground all spice
¼ teaspoon ground cloves
1 ounce dark chocolate (OR unsweetened cocoa powder)
1 bayleaf
spaghetti noodles (cooked)
beans
onion (diced)
cheddar cheese (shredded)
oyster crackers

Steps:

  • In a large dutch oven combine the water and tomato paste. Whisk together to combine.
  • Crumble the meat with fingers and add to the liquid in the pot.
  • Add all remaining ingredients to the pot and stir to combine.
  • Bring pot of chili to a simmer over medium heat. Cover and lower heat. Let simmer for 2-3 hours stirring occasionally. Skim grease from the top as needed.
  • Remove the chili from the heat and allow to cool to room temperature. Cover and store the chili in the refrigerator overnight.
  • After chili has cooled overnight, using a spoon, breakup the grease on the top of the chili and remove completely.
  • Bring the chili back to a low simmer over medium heat.
  • Serve the chili warm over spagehtti noodles or over a hot dog.

2 teaspoons instant minced garlic
1 teaspoon ground cinnamon

1 teaspoon garlic salt
1/2 teaspoon ground allspice

1 tablespoon white wine vinegar
1 pound spaghetti, cooked according to package directions and tossed in olive oil to prevent sticking
One 15-ounce can kidney beans, drained
1 white onion, diced
Two 8-ounce blocks Cheddar, grated
Hot sauce, optional
Oyster crackers, for serving

Steps:

  • For the chili: In a stockpot or Dutch oven, combine the tomato sauce, tomato paste, onions, chili powder, cocoa powder, sugar, kosher salt, cinnamon, cumin, garlic salt, allspice, pepper, cayenne, cloves, bay leaves, beef (do not brown first) and 2 cups water. Mix until combined. Cover and simmer over medium-low heat for approximately 2 hours. Stir in the vinegar and simmer for another 30 minutes.
  • To serve: Serve on a bed of spaghetti and top with the beans, onions and a mound of cheese (or any preferred combination). Add hot sauce, if desired, and eat with oyster crackers.

1 (6 ounce) can tomato paste
1/4 cup chili powder

1 Tablespoon cocoa powder

  • Remove the chili from the stove, and cool. Transfer the covered pot to the refrigerator, and chill overnight.

  • Non-food Supplies. A large pot to cook the chili. A skillet or frying pan for the onion and spices. A pot for the pasta (optional)
  • Preparing the Stock. -First, add the 4 cups of water to the pot along with the four beef boullion cubes. -Set the stove to medium and begin adding the beef.
