8 -10 small red potatoes, unpeeled, quaretered
2 tablespoons butter
3 garlic cloves, minced
1/2 teaspoon seasoning salt
1/4 cup chopped fresh cilantro

Steps:

  • Place potatoes in a saucepan, cover with cold water. Bring to a boil and cook until just tender, 8-10 minutes. Drain.
  • In same saucepan, melt butter and cook garlic for 2-3 minutes. Add potatoes, seasoned salt and cilanto, toss to coat.
  • You can serve at this point, or sometimes I spray some olive oil on the tops of the potatoes, throw it all in a baking dish and broil until the tops are nice and brown. Either way, it's good!

A yummy Lebanese way of serving potatoes. These go great with chicken or meat.

1 quart oil for frying, or as needed
4 large potatoes, cubed
1 teaspoon vegetable oil
2 cups chopped fresh cilantro
4 cloves garlic, minced
½ teaspoon cumin
1 tablespoon fresh lemon juice
salt to taste

Steps:

  • Heat the oil in a deep-fryer to 375 degrees F (190 degrees C). When the oil is hot, add potatoes, and cook until golden brown, about 8 minutes. Drain on paper towels.
  • Meanwhile, heat the oil in a large skillet over medium heat. Add the cilantro and garlic; cook and stir for about 5 minutes. After draining the potatoes, add them to the skillet along with the cumin, lemon juice and salt. Stir to coat the potatoes, and serve.

2 tablespoons extra-virgin olive oil
1/3 cup diced red onion
1/4 cup real bacon pieces
1 (16-ounce) bag pre-cooked and diced red potatoes
1 1/2 teaspoons crushed garlic
Salt and pepper
1/4 cup chopped cilantro leaves

Steps:

  • In a large skillet, heat oil, over medium-high heat. Add red onions and bacon pieces. Saute until onion is soft, about 2 to 3 minutes. Add potatoes and garlic. Cook 5 to 7 minutes, stirring occasionally. Season, to taste, with salt and pepper. Stir in cilantro and serve hot.

This is a Lebanese dish called coriander potatoes. They are a tasty side for grilled or roasted meats. I had these first in a Middle Eastern restaurant, and loved them so much I had to learn how to make them myself!

Number Of Ingredients 6

2 lb potatoes, cubed in 3/4" pieces
1/4 c cilantro, fresh, chopped
1 Tbsp garlic, grated on a microplane or minced finely
2 Tbsp lemon juice, fresh. may substitute 1 tsp lemon pepper.
salt & pepper to taste
3-4 c cooking oil (traditionally olive oil is used)

Steps:

  • 1. Peel and cube potatoes.
  • 2. Grate garlic with a microplane into a small bowl. Rinse Cilantro and dry. Chop and put with the garlic. Squeeze lemon juice into the same bowl. Set aside. I didn't have any lemons, so I used lemon pepper pictured here.
  • 3. Heat oil in a frypan over high heat to 350. Add potatoes and fry, stirring periodically until golden brown, 5-7 minutes.
  • 4. Remove potatoes with a slotted spoon to a large paper towel lined mixing bowl, briefly to drain oil. Pull paper towel out from under potatoes.
  • 5. Add Cilantro, garlic and lemon to hot potatoes, Stirring to distribute. Season with salt and pepper. Serve warm or at room temperature.

POTATOES WITH COENTRO (CILANTRO)

12-16 small Yukon Gold or Red Bliss potatoes, scrubbed but not peeled
1 1/2 teaspoons salt
2 tablespoons olive oil
1/4 cup chopped fresh cilantro leaves
1/2 teaspoon freshly ground black pepper

Steps:

  • Place potatoes in a medium saucepan and add water to cover generously. Add salt, turn on the heat, and bring to a simmer. Simmer 20 minutes or until tender when pierced with a knife. Drain and let cool. As soon as they are cool enough to handle, peel. Heat olive oil in large skillet over medium heat. Add peeled potatoes and roll around to coat evenly. Cook 5 minutes until starting to brown. Sprinkle over cilantro and fresh pepper and roll around to coat evenly. Serve immediately.

My neighbor served this at a baby shower and everyone wanted a copy of the recipe. This was addictive and had a unique, fresh taste. Don't leave out the bacon at the end..it is an essential ingredient, as is the chopped cilantro and lime juice.

3 lbs red potatoes, unpeeled
2 teaspoons salt, divided
1 cup mayonnaise (real mayo)
1 (4 1/2 ounce) can chopped green chilies
1/3 cup fresh cilantro, chopped, plus more for garnish
3 green onions, chopped
2 tablespoons fresh lime juice (about 1-2 limes, depending on size of your limes)
1 fresh garlic clove, minced
1/2 teaspoon black pepper
4 slices maple bacon, cooked and crumbled

Steps:

  • Cook potatoes in boiling water to cover along with 1 tsp of the salt until fork tender, about 15 minutes or so (will vary based on size of potatoes).
  • Drain and cool.
  • Cut potatoes into bite sized chunks.
  • Stir together the mayonnaise, chilies, chopped cilantro, green onions, lime juice, garlic, black pepper, and remaining 1 teaspoons salt in a large bowl.
  • Add potatoes and toss to coat.
  • Cover and chill at least 4 hours.
  • Just before serving, stir in bacon crumbles and garnish with additional fresh cilantro.
