CILANTRO DRESSING FOR SALADS
This dressing is great on a fresh veggie salad, chicken salad, crisp green salad, taco salads or any tossed salad. Especially good on a salad that is accompanying a Mexican entree.

Steps:
- Using your steel knife in the food processor mix garlic and salt; process until it is a paste.
- Add cilantro and parsley; process to a fine mince.
- Add vinegar; process for 10 seconds.
- Add oil in a slow steady stream with the processor on.
- Add hot pepper sauce (to match your taste) and a pinch of sugar.
- Chill the dressing for several hours in a glass jar; shake to combine before using.
CREAMY CILANTRO LIME DRESSING
This recipe is similar to one that we enjoy at our favorite fast food salad place. We also use this as a dip for chicken nuggets. If dressing is too thick, thin it with a little milk.

This is my best take on the dressing that is used in the El Torito restaurants in southern California. Be sure to toss some roasted pepitas and crumbled Cotija or Manchengo cheese on top of your salad for the full effect!

- Blend mayonnaise, canola oil, pumpkin seeds, water, vinegar, Cotija cheese, roasted chile peppers, garlic, salt, and pepper in a blender until smooth, about 1 minutes. Add cilantro in batches, blending each to incorporate completely before adding the next, 30 to 60 seconds per batch.
- Pour dressing into an air-tight container and refrigerate at least 1 hour before serving.

- Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil. Place peppers with cut sides down onto the prepared baking sheet.
- Cook under the preheated broiler until the skin of the peppers has blackened and blistered, 5 to 8 minutes. Place blackened peppers into a bowl and cover tightly with plastic wrap. Allow peppers to steam as they cool, about 20 minutes. Remove and discard skins.
- Combine roasted peppers, canola oil, pepitas, red wine vinegar, lime juice, cotija cheese, garlic, salt, and pepper in a blender or food processor. Blend to combine, about 10 seconds. Add cilantro a little at a time and blend until smooth.
- Combine mayonnaise and water in a large bowl and whisk until smooth. Add the blended pepper mixture to the mayonnaise mixture and mix thoroughly.

- Zest and juice the lime. Using a standard, small or immersion blender*, blend the lime zest, lime juice, cilantro, Dijon mustard, maple syrup, garlic powder and onion powder, and kosher salt until roughly chopped. Scrape down the sides of the blender, then add the olive oil. For Creamy Cilantro Dressing: Add all ingredients to a blender.
- Blend for a minute or two until creamy, scraping down as necessary. This will be easier with an immersion blender; a standard blender you’ll have to scrape down often to get it to blend. Serve immediately or refrigerate for up to 1 week. The vinaigrette-style dressing will solidify in the fridge, so bring to room temperature prior to serving.
