Recipe for Mexican style tuna salad with cilantro and lime. This is our photographer's recipe. Tuna salad served with saltine crackers is a very popular quick meal in Mexico.

2 cans water-packed tuna
1/2 medium white onion
8 sprigs cilantro
3 small carrots
3 stalks celery
1/2 head butter lettuce (or lettuce of your choice)
1/2 cup mayonnaise
4 limes
1 package saltine crackers (or your preferred crackers)
salt and pepper to taste

Steps:

  • Drain the tuna very well.
  • Peel and finely chop the carrot.
  • Finely chop the onion and celery.
  • Remove the stems from the cilantro and finely chop the leaves.
  • Place the tuna and the chopped ingredients in a mixing bowl. Add the mayonnaise and stir well.
  • Add salt and pepper to taste.
  • Wash and separate the lettuce leaves. Pat dry with a towel.
  • On each cracker, place a lettuce leaf and then top with a spoonful of tuna salad. Serve with a sliced lime on the side.
  • You can also use it as a filling for tuna salad sandwiches.

2 pouches (5 ounces each) albacore white tuna in water
1/3 cup mayonnaise
3 tablespoons minced fresh cilantro
2 tablespoons lime juice
2 garlic cloves, minced
1/4 teaspoon salt
1/8 teaspoon pepper
8 slices whole wheat bread, toasted if desired
4 slices Muenster or provolone cheese
1 medium ripe avocado, peeled and sliced

Steps:

  • In a small bowl, mix the first 7 ingredients. Spread tuna mixture over 4 slices of bread; top with cheese, avocado and remaining bread. Serve immediately.

SPICY CILANTRO-LIME TUNA RECIPE

4 ahi tuna steaks
1 tsp. cumin
1 tsp. paprika
2 garlic cloves, minced
1/4 cup olive oil
Juice from 1 lime
1/2 cup fresh cilantro, chopped
1 tbsp. hot pepper sauce
Sea salt and freshly ground black pepper

Steps:

  • Preheat grill to medium heat. In a bowl combine the cumin, paprika, minced garlic, olive oil, lime juice, cilantro, and hot pepper sauce. Season the tuna steaks to taste with sea salt and freshly ground black pepper. Brush the seasoned tuna steaks with with the cilantro-lime sauce. Place the tuna on the grill and cook 3 to 4 minutes per side. Let rest 2 to 3 minutes before serving.

The closest I've been able to come in recreating one of my favorites! The salad will be fairly greasy, but that is how it is in the restaurant version as well. It just doesn't taste nearly as good with only little dressing. I usually use about 3/4 of the dressing, but you may use less or more. Enjoy!

2 tablespoons olive oil
1 ½ teaspoons lime juice
1 ½ teaspoons chopped fresh cilantro
½ teaspoon garlic, minced
1 teaspoon chopped fresh mint
½ teaspoon lemon juice
⅛ teaspoon salt
1 ½ cups mixed baby salad greens
½ cup torn romaine lettuce
2 tablespoons diced mango
1 ½ teaspoons roasted peanuts
4 slices cucumber, quartered
2 tablespoons crisp chow mein noodles
1 (3 ounce) fresh ahi (yellowfin) tuna steak
1 pinch salt and ground black pepper to taste
¼ avocado, sliced

Steps:

  • Whisk olive oil, lime juice, cilantro, garlic, mint, lemon juice, and salt in a bowl. Refrigerate salad dressing for at least 1 hour or overnight for best flavor.
  • Preheat an outdoor grill for high heat and grease the grate.
  • Toss salad greens, romaine lettuce, mango, peanuts, cucumber, and chow mein noodles in a salad bowl.
  • Sprinkle tuna with salt and black pepper.
  • Grill tuna on the preheated grill until the outside is seared and brown and the inside is still red, about 1 1/2 minutes per side for rare. Slice the grilled tuna.
  • Top salad with slices of avocado and grilled tuna; drizzle with salad dressing to taste.

1 cup fresh parsley leaves
3 tablespoons lime juice
1 cup chili-lime cashews
½ cup olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon cayenne pepper
½ cup grated Asiago cheese

Steps:

  • Put the cilantro, parsley, lime juice, cashews, olive oil, salt, pepper, cayenne pepper, and grated cheese into the bowl of a food processor. Pulse until mixture is smooth, 8 to 10 pulses. If mixture is too thick, add more olive oil; if too thin, add more cashews.
  • Pour into 4 one-cup freezer containers. Use one container within a few days; freeze the others for later.

2 Cans tongol tuna, drained well
2 organic green onions sliced thin
2 organic limes juiced
1/2 organic red bell pepper diced
1/4 packed firm organic cilantro, chopped very thin
1 1/2 Tablespoon Mayo (Organic Canola)
1 Tablespoon whole grain mustard
dash of ground red pepper or flakes (depending on your level of heat)
few turns of fresh black pepper
1 cup organic raw cashews

Steps:

  • Mix everything but cashews together. Don't break tuna too much or cause it to become a paste. You want chunks in this salad. Once mixed well, take a taste, refrigerate for a few hours and then add cashews before serving/eating. Suggestions for how to serve include in a sandwich wrap, on stone ground wheat crackers, or just by itself.
