Marinated Green Beans with Cilantro and Garlic image

For the best flavor, this recipe requires at least 4 hours of marinating time so be sure to leave yourself enough time to prepare this easy dish before serving!

Provided by Martha

Time 4h20m

Number Of Ingredients 9

Ingredients
2 tablespoons minced garlic
2/3 cup chopped fresh cilantro
2 pounds tender young fresh green beans, trimmed and washed
Salted water to boil
5 tablespoons extra virgin olive oil
1 tablespoon lemon juice
3 tablespoons cider vinegar
¼ teaspoon freshly ground black pepper

Steps:

  • Place minced garlic and chopped cilantro in a large bowl and set aside.
  • Bring water to a boil and plunge in green beans. Cook just until tender, about 5-10 minutes, do not overcook. Drain well and place beans back in hot pan, turn on stove burner and shake for 30 seconds to dry the beans out. Pour hot beans in the bowl with the garlic and cilantro mixture and stir briefly, then let sit untouched for ten full minutes. Add olive oil, toss and place in refrigerator overnight or for at least 4 hours.
  • Before you are ready to serve, remove beans from refrigeration and let sit for 45 minutes at room temperature. Add lemon juice, vinegar and pepper. Toss, taste for seasoning and serve.

CUBAN BLACK BEANS WITH CILANTRO AND LIME

Cuban Black Beans with Cilantro and Lime image

A quick and easy version of the Cuban Black beans! I'm sautéing up jalapeños, onions, and garlic and then simmering the beans until they are tender and topping them with cilantro and lime! So, so delicious!

Provided by Marzia

Categories     30 Minute Meals

Time 30m

Number Of Ingredients 11

1 tablespoon oil
1 medium red onion, diced
1-2 jalapeños, seeded + ribs removed then diced
4-5 cloves garlic, minced
2 (15 ounce cans) black beans, rinsed and drained
1 cup warm water
1 teaspoon salt
1 teaspoon ground cumin
½-1 teaspoon chipotle chili powder (optional)
2-3 tablespoons cilantro
3 tablespoons lime juice (or more!)

Steps:

  • Heat the oil in a stockpot or dutch oven over medium-high heat. Sauté the onions and jalapeños for 4-5 minutes or until they turn translucent. Add the garlic and continue to cook for 30 seconds.
  • Add the black beans, warm water, salt, cumin, and chili powder and bring to a boil. When boiling, reduce the heat so that it simmers. Allow to cook for 10-15 minutes or until most of the water evaporates leaving a thick sort of broth. At this point, if you'd like to thicken the beans a bit more you can remove about ½ - 1 cup of beans and mash them (using a potato masher or a wooden spoon) to make a thick sort of paste but this is optional. Add the beans back into the pot and stir. Top with fresh cilantro and lime juice stir to combine.

  • Prepare vinaigrette: Combine the 2 tablespoons of olive oil, lime juice, cilantro, salt and pepper in a blender, or small food processor bowl. Puree or pulse ingredients together, until mixture just begins to come together, and cilantro is still finely chopped. Set aside in a small container. Shake before using.
  • In a medium bowl, toss the trimmed green beans lightly with olive oil (roughly 1 tablespoon or so) and season lightly with salt. Heat a large grill pan over very high heat. The pan should be piping hot–advice: turn on your kitchen fan, as it will get smoky.
  • Add about a third of the green beans directly to the hot grill pan, spreading them out evenly. Grill the greens beans for roughly 4 to 5 minutes, tossing them every few minutes, until they are evenly charred and beginning to soften slightly. Transfer the charred green beans to a serving platter or separate mixing bowl. Repeat with the remaining green beans.
  • Allow the charred green beans to cool for 5 to 10 minutes, then toss with the cilantro-lime vinaigrette. Sprinkle with fresh cilantro leaves and finishing salt. The dish can be served hot, at room temperature, or cold straight from the fridge.

  • Combine the corn, 1-1/2 cups water, salt and sugar in a 10-inch skillet or medium saucepan. Bring the liquid to a boil, then reduce the heat to medium and cook, uncovered, stirring occasionally, for about 15 minutes -- until the corn is tender-crisp and there are about 2 tablespoons of water left in the pan (it's fine to eyeball it; it doesn't need to be exact).
  • Stir in the butter, lime zest, lime juice, cilantro, and cayenne pepper. Taste and adjust seasoning, then serve warm.
  • Make Ahead: This dish can be made up to a day ahead of time but wait to add the cilantro until right before serving.
