1 quart oil for frying
3 large potatoes, julienned
3 cups chopped fresh cilantro
salt and pepper to taste

Steps:

  • Heat oil in deep-fryer to 365 degrees F (185 degrees C).
  • Place 1/3 potatoes in the fryer, and fry for about 5 to 8 minutes, or until almost done. Add 1/3 cilantro, and continue frying for 1 minute. Remove from oil, and drain on paper towels. Skim off any remaining cilantro. Repeat with remaining ingredients. Season with salt and pepper to taste.

5-6 yukon gold potatoes, cut into thin fries
2 Tbsp olive oil
1/4 - 1/2 tsp garlic powder
1/2 - 3/4 tsp sea salt
pepper
1/4 c. loosely packed cilantro leaves, finely chopped

Steps:

  • Preheat the oven to 425 degrees, and get a baking sheet with rack ready (if no rack, just line with foil/parchment paper and drizzle with olive oil. Cut the potatoes into fries and place in a bowl of cold water to soak for a few minutes. Drain the water and dry the fries with paper towel. Once dry, toss the fries with the olive oil, garlic powder, salt and pepper. Lay on a baking sheet in a single layer, preferably one that has a cooking rack so the fries can have the air circulating all around them (and no need to flip.) Bake for 20-25 minutes depending on your oven and how crispy you like your fries. If using a baking sheet without a rack, halfway through the cooking time, flip the fries. Once done, toss fries with cilantro in a bowl. Enjoy by the handful!

1 cup chickpea flour
1 1/4 cup of water
1/4 salt (+ more for to taste )
1/4 tsp garlic powder
2 tsp oil
1 tbsp cajun spice blend
1/4 tsp garlic powder (or granulated garlic )
1/4 tsp salt
1/2 cup raw cashews
1/3 cup water
2 TBSP lime juice
1/2 cup packed cilantro
1 garlic clove
2 tbsp pickled jalapeno
1/2 tsp or more of salt

Steps:

  • Blend the Chickpea Flour, water, salt, and garlic powder until smooth. Then add to a sauce pan over medium heat and cook. The mixture will get lumpy, stir occasionally and it will eventually and even out to a thicker custard like state. Continue to cook for another 2 mins after it has thickened evenly. Transfer the mixture to a greased 7-8 inch pan or spread over parchment and even out on the top using parchment paper.
  • Chill for 20 minutes, and slice the chickpea into fry size slices.
  • Add the chickpea fries to a skillet over medium heat with 2 tsp of oil and panfry until most of the edges are golden.
  • Take off heat and add in the cajun spice, garlic, salt (only if your Cajun blend doesn't have salt), in pan, and toss well to coat. Taste and ajust to salt and spice.
  • Blend all the ingredients until they're smooth and creamy. I usually soak the cashews in hot water for 15 minutes, and then blend, and then blend the mixture for 1 minute, let it sit for 10 minutes in the blender, then blend again. That gives a really creamy depth. Taste and adjust salt and lime as needed.
  • Serve the freshly pan fried chickpea fries with the Cilantro Jalapeno Lime Dip.You can also serve these fries with salsa, ketchup or my tahini dip for a Nutfree variation.

1 garlic clove
1/4 teaspoon cumin
1 pinch cayenne
1/4 teaspoon kosher salt
2 tablespoons butter or olive oil
2 tablespoons fresh lime juice, plus zest
1/2 cup fresh cilantro, chopped

Steps:

  • Thaw the shrimp (see the notes above).
  • Mince the garlic.
  • Pat the shrimp dry. In a medium bowl, mix the shrimp with the garlic, cumin, cayenne, and salt.
  • In a large skillet, heat the butter or olive oil on medium high heat. Cook the shrimp for 1 to 2 minutes per side until opaque and cooked through, turning them with tongs.
  • Spritz with lime juice and stir in the lime zest and chopped cilantro. Serve immediately.

6 Yukon gold potatoes peeled and cut into thin strips
2 tablespoons avocado oil
1/2 teaspoon Himalayan pink salt
1 tablespoon nutritional yeast flakes
1/4 cup cilantro finely chopped
3 cloves garlic minced

Steps:

  • Preheat the oven to 425℉. Prepare a baking sheet by lining it with parchment paper and lightly spraying or brushing with oil. Set aside.
  • Add potato strips with enough water to cover and soak for 30 minutes in a large bowl. This will remove excess starch from the potatoes and result in crispier fries.
  • Drain and rinse the fries, then dry them with a clean kitchen towel or paper towel.
  • Toss the fries with olive oil, sea salt, and nutritional yeast flakes.
  • Spread in a single layer on the prepared baking sheet. Bake for 35 minutes, flipping after 15 minutes, or bake until golden and crispy.
  • Remove fries from the oven and transfer them into a large bowl. Toss fries with cilantro and garlic.
