SPICE-CRUSTED ROAST RACK OF LAMB WITH CILANTRO-MINT SAUCE
A gorgeously spiced rack of lamb is seared and then finished in the oven, served with a quick and easy coriander mint sauce.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Heat a dry saucepan over medium-high heat. Add coriander, caraway, and cumin seeds; toast until smoky, about 2 minutes. Transfer to a mortar and pestle and roughly grind the spices together.
- Rub spices over both sides of the lamb; pat down to make a crust. Season with salt and pepper.
- Heat 1 tablespoon olive oil in an oven-proof skillet over medium-high heat. Add lamb, fat-side down. Cook, flipping halfway, until both sides are browned, about 5 minutes. Immediately transfer the skillet to the oven.
- Roast lamb in the preheated oven until no longer red in the center, about 8 minutes. An instant-read thermometer inserted into the center should read at least 130 degrees F (54 degrees C). Remove from oven and let rest, about 5 minutes.
- Combine mint, cilantro, lime juice, agave nectar, vinegar, and garlic in a food processor. Season with salt and pepper. Process until finely chopped. Slowly drizzle in 1/2 cup olive oil while blending to make the sauce.
- Slice the rack of lamb. Spoon the mint and coriander sauce over each serving.

CILANTRO CRUSTED RACK OF LAMB
Please be aware of the walnut ingredient; anyone with nut-allergies should eliminate this ingredient from the recipe. Lamb is one of my favourite meats to prepare. More lamb recipes are forthcoming. Steps:
- Preheat Oven to 450 degrees F.
- Place the garlic, walnuts and cilantro in food processor and process to a coarse paste.
- Add lemon juice, olive oil and parmesan.
- Process until smooth.
- Season with cayenne salt and ground pepper.
- Coat the lamb racks generously on both sides with the cilantro pesto (if there is extra pesto, save it to serve with the cooked lamb).
- Place the lamb racks meat side down, in a shallow roasting pan.
- Roast 15-20 minutes, uncovered, for medium-rare meat.
- Let the lamb rest for5-10 minutes before carving.
- Using a sharp carving knife, cut the racks between the bones, into chops.
- Serve 3-4 chops per person.
- SALSA VERDE.
- Place parsley, scallions and mint in food processor fitted with the steel blade Process to make a smooth green paste.
- Add the anchovies, garlic and lemon juice and process again until smooth.
- With the machine running, pour the oil in a steady stream through the feed tube.
- This makes a glistening green sauce.
- Transfer the sauce to a bowl and stir in the eggs and capers.
- Season to taste with salt and pepper.
- Store in refrigerator, but let warm to room temperature before serving.
- Recipe is sufficient for 10-20 guests (at a barbeque for instance), but you can halve it easily for smaller dinner party.

RACK OF LAMB
Steps:
- In the bowl of a food processor fitted with a steel blade, process the salt, rosemary, and garlic until they're as finely minced as possible. Add the mustard and balsamic vinegar and process for 1 minute. Place the lamb in a roasting or sheet pan with the ribs curving down, and coat the tops with the mustard mixture. Allow to stand for 1 hour at room temperature.
- Preheat the oven to 450 degrees F.
- Roast the lamb for exactly 20 minutes for rare or 25 minutes for medium-rare. Remove from the oven and cover with aluminum foil. Allow to sit for 15 minutes, then cut into individual ribs and serve.

- In a medium saucepan, melt 1 tablespoon of the butter in the olive oil. Add the chopped shallots and cook over high heat, stirring a few times, until richly browned, about 5 minutes. Add the beef stock, red wine and thyme leaves and boil over high heat until reduced to 1 cup, about 10 minutes. Strain the shallot jus into a small saucepan. Whisk in the remaining 4 tablespoons of butter, 1 tablespoon at a time. Season with salt and pepper.

- Place the lamb on a cutting board fat side up. Score the fat with a knife and season both sides with salt and pepper. Cut the rack of lamb in half with 3 or 4 bones per half depending on the size.
- Using a cast iron skillet, or other oven safe pan, heat 2 tablespoons of oil on the stovetop. Sear all sides (about 2 minutes per side) of the lamb rack. Place the pan into the oven for 8 minutes.
