SKIRT STEAK WITH CILANTRO GARLIC SAUCE
Steps:
- Make sauce:
- Mince garlic and mash to a paste with salt. Transfer to a blender and add remaining sauce ingredients, then blend until smooth.
- Grill steak:
- Stir together cumin, salt, and pepper in a small bowl. Pat steak dry, then rub both sides of pieces with cumin mixture.
- Heat an oiled well-seasoned ridged grill pan over high heat until hot but not smoking, then grill steak in 2 batches, turning over occasionally, about 2 minutes per batch for thin pieces or 6 to 8 minutes per batch for thicker pieces (medium-rare). Serve steak drizzled with sauce.

- In a blender, combine buttermilk, cilantro, coriander seed, curry powder, and scallions and puree. Reserve 1/2 cup marinade for serving. Pour half the remaining marinade into a shallow dish, arrange steak in a single layer, and cover with rest of marinade; let sit 30 to 45 minutes.
- Heat a grill or grill pan to medium-high. Clean and lightly oil hot grill. Remove steak from marinade, shaking off excess, and season with salt and pepper. Grill steak until browned, 2 to 4 minutes per side for medium-rare. Transfer to a cutting board and let rest 5 minutes before thinly slicing against the grain. Season reserved marinade with salt and pepper and serve with sliced steak.

SKIRT STEAK TACOS WITH SHALLOT RINGS
Steps:
- Add the skirt steak to a shallow dish. Add the sherry, soy sauce, garlic, ginger, salt and pepper. Carefully toss to combine, then marinate the skirt steak for 30 to 45 minutes at room temperature. (Optional: Use a fork to prick the steak many times to help the marinade do its job.)
- Prepare a gas or charcoal grill for cooking over direct medium-high heat.
- Remove the steak from the marinade and pat dry. Grill on one side for about 5 minutes, then flip and continue to grill until medium-rare, another 3 minutes. Let rest 5 minutes before slicing.
- Preheat the oven to 250 degrees F.
- Heat the tortillas over a direct flame until the desired char is reached on both sides. Place in a covered pan and keep warm in the oven.
- Slice the skirt steak against the grain. Make tacos with the steak and Avocado Salsa, then garnish each with Shallot Rings and cilantro leaves.
- Mix together the cilantro, garlic, jalapeno and onion on a cutting board. Add the lime juice and salt and continue mincing until combined. Add this mixture to the halved avocado flesh in a bowl and mash with a fork until the avocados are broken down and everything is combined.
- Soak the shallots in the buttermilk in a bowl for up to 30 minutes. Preheat 3 inches oil in a large Dutch oven to 375 degrees F.
- Place the grits in a large paper bag. Pour off the buttermilk from the shallots, then add the shallots to the bag and shake to coat. Add the coated shallots to the oil in batches and fry until crispy, about 2 minutes. Drain on a paper towel-lined plate and season with salt.
FRESH GARLIC CILANTRO STEAK SAUCE (PERFECT FOR SKIRT STEAK!)
Steps:
- Mash minced garlic together with salt until it forms a paste. Place in a blender with the remaining liquid ingredients and spices.
- Blend until all spices and ingredients are incorporated and the sauce is smooth.
- Place a small amount of olive oil in a skillet and allow the pan to come to temperature over medium heat.
- Place skirt steak in the pan without overcrowding the slices. Cook for 2-3 minutes on each side for very thin pieces, or about 4-5 minutes on each side for larger pieces.
- Allow the steak to rest for about 10 minutes after cooking.
- Serve with the garlic cilantro steak sauce drizzled over the steak.
- Alternatively, you can thread the skirt steak onto skewers, broil them for about 3 minutes on each side, and use the sauce as a dipping sauce!

- In a gallon-sized Ziploc® bag combine all the dry spices, sugar, salt and pepper. Add the lime juice, liquid smoke, oil, and fresh garlic and shake or massage the bag with your hands until well blended and sugar is mostly dissolved. Add the steak to the bag making sure the marinade covers all of the steak. Seal the bag and let the steak marinate in the refrigerator for 4-5 hours, or up to 24 hours. An hour before grilling, remove the steak from the refrigerator and allow to come to room temperature.
- Light a grill or preheat a grill pan. Grill the steak over med-high heat until seared on the outside and medium-rare within, about 5 minutes on each side depending on the thickness of the steak (thinner steak will take less time). Transfer the steak to a cutting board, tent with foil, and let rest for 8-10 minutes.
- Thinly slice the steak, cutting across the grain--you may need to rotate the steak and cut from another edge if the strips get too long (it's okay if the pieces aren't exactly the same size). Serve in warm tortillas and garnish with cabbage, fresh avocado, Pico, Habanero-Cilantro Sauce, and fresh lime wedges.

- Remove the skirt steak from the packaging. There will likely be a thick layer of marbled fat one side. Use a sharp, thin knife to cut away most of the fat. It's fine if a few small patches remain.
- Whisk together the cilantro, lime juice, garlic, salt, pepper, and cayenne. Whisk in the olive oil. Place the skirt steak in a plastic bag or a shallow baking dish. Add the marinade, making sure the steak is coated on both sides. Refrigerate for 30 minutes to an hour.
- Meanwhile, prepare the salad. To make the vinaigrette, whisk together the lime, olive oil, honey, cumin, and garlic powder until combined. Place some of the vinaigrette at the bottom of a large bowl. Top with the arugula, corn, tomatoes, and onion. Toss until well coated. Season with salt and pepper to taste.
- To prepare the steak, heat a grill or a cast iron skillet over medium high heat. If you're using a skillet, you may have to cut the skirt steak in half and cook in two batches so it will fit. Heat a swirl of olive oil in the skillet or coat the grill grates with oil. Take the steak out of the marinade and place it directly on the grill or skillet. Sear for 4-5 minutes then flip and continue to cook another 4-5 minutes, or until the internal temperature reaches 135 for medium rare or 160 for medium. Place the steak on a cutting board, tent with foil, and rest for at least 5 minutes. When ready to serve, slice steak in thin slices against the grain. Serve with arugula salad.
