Steps:
- Preheat the oven to 425 degrees F. Spray a 9-by-13-inch baking pan with canola oil spray. Sprinkle the fish with the salt and place it in the pan.
- Combine the coconut milk, cilantro, ginger, garam masala, garlic and jalapeno in a blender and pulse until fairly smooth. Pour the mixture over the fish. Bake until the fish is just opaque in the center, about 15 minutes. Garnish with more cilantro and serve with the rice.

- preheat oven to 400 saute' the veggies in a little olive oil and salt and pepper to taste put all ingredients for adobo in blender or food processor and chop up real good n stuff put tilapia on a greased pan so it doesn't stick...dur spread a heaping helping of adobo over the tilapia. the more the better put the tilapia in the oven until done. 8-10 minutes or until you can eat it without getting sick make the butter chop up the cilantro however chunky you like it finely chop the shallot and garlic clove...unless you like big ass pieces of garlic...I dont add to the softened butter add the lime juice salt and pepper to taste put the veggies on a plate and add a dollop of the butter to melt over the veggies once the fish is done place it on top of the veggies and let some stick out the sides to make it pretty and shit. not put it in your face and enjoy

Steps:
- Preheat oven to 375.
- Coat the bottom of a baking dish with olive oil.
- Place the tilapia fillets in the pan.
- Sprinkle desired amount of garlic salt, cajun seasoning, and pepper over tilapia pieces.
- Press several sprigs of cilantro on top of each piece.
- Bake tilapia for 8 to 12 minutes.
- Enjoy alone or with lemon!

- Heat the oven to 475 degrees.
- Pat the fish dry and season lightly with salt and pepper. Place in a glass baking dish.
- Place in a small food processor the jalapeno, garlic and ginger along with the soy sauce, white wine, sesame oil and cilantro. Process until blended.
- Pour the sauce over the fish, spreading and slightly pressing the solid ingredients down into the fish. Bake for about 8 minutes or until the fish flakes easily and is cooked through.
- Remove the tilapia with a spatula and divide between two plates. Drizzle the fish with the marinade juices left in the pan. Serve with jasmine or brown rice.

CILANTRO-CHIPOTLE TILAPIA
Steps:
- Preheat broiler.
- Purée cilantro, oil, chiles with some adobo sauce, water, cumin, 3/4 teaspoon salt, and 1/2 teaspoon pepper in a blender until smooth, then coat fish with sauce.
- Line rack of a broiler pan with foil, then broil fish 3 to 4 inches from heat until just cooked through, 6 to 9 minutes.

- Place the jalapenos, garlic, ginger, soy sauce, wine or stock, sesame oil and cilantro in a blender or food processor. Pulse or process until blended. I prefer this finely processed but you can really leave it as coarsely or finely chopped as you like. Pour the sauce over the fish. Rub the sauce into the fish lightly.
