Delicious apple cider brining liquid for turkey. Brined turkeys tend to shorten your roasting time by about half an hour. But be sure your bird cooks to an internal temperature of 180 degrees when tested through the thigh. Season and roast according to any of your favorite recipes.

- Place the first nine ingredients in a stockpot. Slowly bring to a boil over low heat; cover and simmer for 1-1/2 hours. , Discard the carcass. Strain broth through a cheesecloth-lined colander; discard vegetables and herbs. If using immediately, skim fat. Or cool, then refrigerate for 8 hours or overnight. , Remove fat from surface before using. Broth may be refrigerated for up to 3 days or frozen for 4-6 months. , Place the soup ingredients in a stockpot; add broth. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until vegetables are tender. Freeze option: Cool soup and transfer to freezer containers. Freeze up to 3 months. CIDER ROAST TURKEY

- Heat oven to 190C/fan 170C/gas 5. Wash and dry the turkey, removing any feathers. Pull out the giblets and the neck, then set aside. Lift up the skin that covers the neck opening, then stuff the stuffing up and under the skin, securing it tightly underneath with a skewer or two cocktail sticks. Weigh the stuffed turkey, then calculate the cooking time, allowing 40 mins per kg (20 mins per lb).
- Put the leeks and carrots along the bottom of a roasting tin in a single layer - this will make a trivet for the turkey to sit on and add flavour to the gravy. Add the neck to the tin. Sit the turkey on top and coat the breast all over with butter. Pour in the cider, cover with foil, then roast according to your timings. Keep checking the tin - if the vegetables look like they're burning, add a splash of water or cider. At 30 mins before the end of cooking, remove the foil and season generously.
- To test that the turkey is ready, pierce the thigh through its thickest part; the juices should run clear. Take the turkey out and leave to rest, covered with a clean tea towel. Can leave to rest for up to 1 hr. Now make the gravy. Drain the fat and juices from the tin into a jug, discarding the veg and the neck. Place the tin over a flame, then pour in the cider, scraping up the flavour-filled crusty bits with a wooden spoon. Reduce the cider by half, then strain into a saucepan (this will save you hob space later).

- Rinse turkey inside and out with cold water; pat dry with paper towels.
- Mix water, apple cider, kosher salt, and sugar in a large pot or 5-gallon food-grade bucket, stirring to dissolve salt and sugar. Submerge the turkey in the brine, cover the container, and place in refrigerator, 8 hours or overnight.
- Preheat oven to 325 degrees F (165 degrees C).
- Remove turkey from brine and discard used brine. Place turkey with breast side up into a roasting pan; pat turkey and cavity dry with paper towels. Loosen turkey skin over the breast and thighs with your fingers.
- Mix olive oil, thyme, and poultry seasoning in a small bowl. Rub the seasoned oil over the turkey and underneath the loosened skin. Cover turkey loosely with aluminum foil.
- Roast in the preheated oven until an instant-read meat thermometer inserted into the thickest part of a thigh, not touching bone, reads 165 to 175 degrees F (75 to 80 degrees C), 4 to 4 1/2 hours. Remove foil tent about 45 minutes before end of roasting time to let the skin brown. Let turkey rest 30 to 45 minutes before carving.

- Once the liquid has slowly simmered and reduced by half, strain the turkey broth through a fine mesh strainer to separate the broth from the solids. Allow the strained turkey bone broth to cool at room temperature before placing in the fridge. Store in airtight containers until ready to use or freeze as needed.

- Before beginning on the brine, prepare a pot or bucket for the brine - use a large stock pot or 5-gallon bucket to ensure the turkey stays completely submerged. Double line the pot with food safe plastic bags for easier cleanup. Wash your turkey and remove the giblets and neck. This recipe will work for any size turkey.
- For the brine: pour in 4 to 6 cups of apple cider into a large saucepan. Add the salt, sugar, spices, herbs and garlic. Bring the mixture up to a simmer over high heat, then reduce the heat to medium and stir, cooking for 5 to 7 minutes, until the salt and sugar are dissolved. There may be small bits of salt that do not dissolve; that is okay.
- Remove the brine from heat and add about 4 cups of ice to cool it down quickly. Pour the brine into the prepare pot or bucket and add the remaining apple cider, the orange and lemon. Carefully lower the turkey into the brine, making sure it stays completely submerged. If you have a very large turkey, you may need to add more water or more apple cider. Add an additional 6 to 8 cups of ice over the top, to lower the temperature of the brine and keep the turkey food safe.
- Brine the turkey in the refrigerator for a minimum of 24 hours, or 36 to 48 hours for maximum flavor. If brining for more than 24 hours, add more ice to the brine after the first day. Once done brining, remove the turkey from the brine and pat dry with paper towels. There is no need to rinse the turkey after the brine. Proceed with my Garlic Butter Turkey recipe.
